GLAZED WALNUT BUTTER CAKE
Glazed Walnut Butter Cake is a perfectly moist and tender buttery cake filled with walnuts and made with ingredients you already have on hand. This cake gets a delicious glaze and is topped with chopped walnuts and will become a new favorite!

Steps:
- Preheat oven to 350 degrees. Generously grease and flour a bundt pan. (can also use a 9x13)
- In a large mixing bowl or using a stand mixer add the butter and sugar and cream together. Add the eggs one at a time.
- Add the sifted flour and baking powder together. Add the flour mixture and milk to the butter mixture alternating the flour and milk as you mix. Fold in chopped walnuts.
- Pour into your greased and prepared bundt pan. Bake for about 1 hour or until toothpick comes out clean. Remove from oven and let cool.
- To make the glaze: Whisk together melted butter, powdered sugar, vanilla and milk. Drizzle on top of cooled cake and top with additional chopped walnuts.

- Lightly grease a baking sheet. In a 1 quart glass measure, combine walnut halves, sugar, and water. Cook in microwave oven on high setting for 8 to 8 1/2 minutes, or until sugar has caramelized. Stir several times during cooking. Pour out onto prepared baking sheet, and separate into pieces. Let cool completely. store in an airtight container.

- Preheat oven to 350°F. Slice top rind off brie.
- Place brie, cut side up, on a baking sheet lined with foil and bake for 15 minutes.
- Meanwhile, add walnuts, maple syrup, salt and pepper to a small skillet and cook over medium heat, stirring very frequently until syrup has evaporated.
- Allow brie to cool for a few minutes, transfer to serving dish and spoon maple glazed walnuts on top. Serve immediately with assorted crackers, apple slices or baguette.

APPLE CIDER GLAZED DOUGHNUTS WITH BACON AND TOASTED WALNUTS

- For the topping: Preheat the oven to 325 degrees F.
- Place the walnuts on a baking sheet in a single layer and toast until golden brown and fragrant, 5 to 7 minutes. Let cool slightly and chop. Put in a shallow dish with the bacon and mix together. Set aside.
- For the apple cider glaze: In a small saucepot, add the apple cider, brown sugar, vanilla extract, cinnamon and a squeeze of lemon juice. Bring to a boil over high heat and then reduce to a simmer. Simmer until syrupy and reduced by half, about 10 minutes. Let cool.
- Put the confectioners' sugar in a bowl and slowly pour in 1/4 cup of the glaze, a little at a time. Whisk together until smooth.
- To top the doughnuts: Gently dip the top of each plain doughnut into the glaze and let any excess drip back into the bowl. Next, lightly dip the glazed tops into the chopped walnuts and bacon. Place on a wire rack to let set.
- Bring the milk to a simmer in a 1-quart heavy saucepan, then remove from the heat and stir in the sugar and salt. Pour into a large bowl and let cool slightly.
- While the milk is cooling, dissolve the yeast in 2 tablespoons warm water in a small bowl, stirring. Let stand for 5 minutes.
- Stir the yeast mixture into the milk mixture along with the oil, lemon zest and eggs. Stir in 2 1/2 cups of the flour with a wooden spoon to make a very soft dough. Spread 1 cup of the flour on a work surface and put the dough on top, scraping it from the bowl with a rubber spatula. Knead the dough for about 5 minutes, incorporating all of the flour from the work surface and adding just enough additional flour (if necessary); the dough should be slightly sticky. Transfer the dough to an oiled large bowl and sprinkle lightly with additional flour. Cover the bowl with a clean kitchen towel and let the dough rise in a warm draft-free place until doubled in bulk, 1 to 1 1/2 hours.
- Turn the dough out onto a floured surface and roll out with a floured rolling pin until 1 inch thick. Cut out rounds with a 2-inch cutter. To make ring shapes, cut out doughnut holes with a 1-inch cutter. Place on a baking sheet, cover the doughnuts with another kitchen towel and let rise in a warm place for 30 minutes.
- While the doughnuts rise, heat about 10 cups vegetable oil in a deep 4-quart pot until it registers 365 degrees F on a deep-fry thermometer. Fry the doughnuts 2 at a time, turning once or twice, until puffed and golden brown, 2 to 3 minutes per batch. Transfer to paper towels to drain.

Steps:
- Layer spinach, red onion and craisins in a large salad bowl.
- Sprinkle with Feta cheese and bacon pieces.
- Soak apple slices in lemon juice and toss on top of salad.
- Add cooled, sugar-glazed walnuts.
- Refrigerate until ready to serve.
- Toss salad.
- Fill individual salad bowls with salad and drizzle vinaigrette over top.
- Place sugar, cayenne pepper and salt in a small saucepan over low to medium heat.
- Dissolve sugar completely.
- Be careful not to heat at too high of a temperature of mixture will scorch.
- Remove from heat.
- Add walnuts and stir quickly to cover them with the glaze.
- Place a large sheet of waxed paper on your counter.
- Spoon nut mixture out onto waxed paper.
- Break into pieces as soon as possible and allow to cool completely.
- Toss walnuts on top of salad.
- Refrigerate until ready to serve.
- Mix ingredients in a blender or food processor until well immersed - about 10-15 seconds.
- Refrigerate dressing until ready to serve salad.
- Pour dressing over individual salads when ready to serve.

- Slice the sweet potatoes into 3/4 inch rounds. Place on the baking sheet and lightly brush with olive oil. Roast, turning once, for about 15-17 minutes. They should be fork-tender but not mushy.
- While the sweet potatoes are roasting, make the glaze. In a small saucepan, whisk together maple syrup, vinegar, pepper and cinnamon over medium heat. Bring to a boil, then remove from heat. Whisk in the butter until melted and the glaze is smooth.
- Remove the roasted sweet potatoes from the oven and arange in an ovenproof serving dish. I like to use enamelware, but Pyrex or Corningware also works - as long as it is oven-to-table.
