DATE AND WALNUT FILLED COOKIES
Filled Date Cookies with Walnuts are tender, pillows of caramel-y cookie. These tasty cookies are moist and loaded with delicious, homemade date nut jam. They're a nod to an old classic Christmas cookie, but with my own twist. And you'll be happy to eat these Date Pinwheel cookies ANY time of year.

- the butter and brown sugar together. I used my *Bosch stand mixer, but these are easily made by hand, too.)
- in the eggs and vanilla.
- the dry ingredients and mix until completely incorporated.
- the dough in half and place each half of the dough in a gallon zip-top bag, press it down flat and refrigerate for 1 hour. You want the dough to be chilled enough that you will be able to roll it out.
- make the date nut jam filling. Put the dates, water, sugar and salt in a medium sauce pan. Bring to a boil over medium-high heat.
- and allow the jam to continue to boil, very gently, for 10-15 minutes. Remove from the heat when the date mixture becomes the consistency of soft jam.
- the chopped walnuts and set aside to cool to room temperature.
- , roll each half out into a 1/4-inch thick rectangle, (each rectangle will be 9x12) on a sheet of parchment paper.
- of the cooled jam across each of the rectangles of cookie dough, spreading it to the edges.
- , use the parchment paper to help you roll the dough and filling into a log. The log will be fairly big around, 3 -3.5 inches in diameter. Because the filling layer is thick, it will not be tight swirls like pinwheel cookies. Work from the long edge and tuck the dough into the jam as you get the roll started. Keep rolling, using the parchment to help you, tucking as you go to keep the roll being formed. In the end the roll will have a swirl of dough at the center, surrounded by jam and then dough encasing it all. It won't form the tight pinwheel like the cookies from the past that had just a tiny thin ribbon of filling.
- the logs for at least 6 hours.
- , cut the logs into 1/3" slices and place on a cookie sheet leaving at least 2 inches in between, for spreading. (If you rotate the log a quarter turn after each slice you make, it will help the cookies stay round instead of going flat on one side.)
- at 400° for 8-10 minutes. The cookie will be lightly browned around the edges, but still soft and tender.

- Date filling: Cut up dates with scissors; put all except walnuts in saucepan and bring to a boil; boil until thick; cool in fridge, add walnuts; Cookies: In a large bowl, cream sugar, butter, egg, and vanilla. Add flour and baking soda; mix well. Stir in walnuts. Divide dough in half and form into two rolls (about 2 inches in diameter). Wrap in plastic wrap and refrigerate overnight or at least 2 hours. Preheat oven to 375° F. Slice cookie dough into 1/8-inch-thick slices and place on parchment-covered baking sheets. Put a tsp. of date filling on each cookie slice, cover with another cookie slice, and lightly seal (it's okay if the top one cracks open, exposing the filling). Dip the top in sugar and return to the cookie sheet, a couple inches apart. Bake 8 to 10 minutes, or until edges are golden.
DATE AND WALNUT COOKIES
This recipe comes from "Treasured Recipes Old and New 1975," a community cookbook by the Schuyler-Brown Homemakers Extension in Iowa Falls. It was contributed by Wilma Miller, who credits the recipe to her great-aunt. Ms. Miller wrote that the original recipe called for two pounds of walnuts, but that she prefers it with pecans "and not that many." That makes sense. Mixing in even a pound of nuts requires the arms of a sturdy farm wife. The recipe yields enough for an entire church supper.

- Heat oven to 350 degrees. Line one or more baking sheets with parchment. Place flour in a bowl and whisk in the salt, cinnamon and cloves. Set aside.
- Cream butter and brown sugar together by hand or in an electric mixer. Beat in eggs. The mixture will not be smooth. Dissolve the baking soda in 1 tablespoon hot water and stir it in. Stir in the dates and nuts. The batter will be heavy and not easy to mix. Work in the flour mixture, about a third at a time. If your electric mixer has a dough hook, use it for working in the flour.
- Scoop heaping teaspoons of batter onto prepared baking sheet or sheets, making craggy mounds about 1 1/2 inches in diameter. Space them about 1 1/2 inches apart; the cookies will not spread very much. (Alternatively, for neater cookies, you can roll the batter into balls between your palms, then lightly press them down with the back of a spoon or the tines of a fork.) Allow to sit at room temperature 30 minutes to 1 hour before baking. Depending on the size of your oven and your baking sheets, you can form the cookies ready to bake on sheets of parchment paper on your countertop, then transfer them to baking sheets in shifts.
- Bake 15 to 20 minutes, until nicely browned. Let cool, then dust with sifted confectioners' sugar. If you plan to freeze some of the cookies, do not dust them with confectioners' sugar; wait until after they thaw.

My grandmother's recipe, circa 1970. As I'm transcribing it from the yellowed, stained index card, I can see her writing it out for me. I loved the rich filling and tender cookie. Mmmm

- Preheat oven to 375°F.
- To prepare Filling:.
- Combine dates, water and sugar in a small saucepan. Cook over low heat until thick. Cool; add nuts.
- To prepare Cookie Dough:.
- Cream butter, add sugar and beat until light.
- Beat in eggs one at a time; add vanilla.
- Sift together flour, salt, soda and cinnamon. Add to creamed mixture alternately with buttermilk.
- Drop dough by rounded tablespoons onto buttered baking sheet 2" apart. Make a shallow indent in each cookie. Place a scant teaspoon of filling in indent. Cover with 1/2 teaspoon of dough.
- Bake 10 to 15 minutes or until lightly browned.
- Remove to wire rack to cool.
- Store between layers of wax paper in tightly covered container.

DATE NUT PINWHEEL COOKIES
This recipe came out of my old McCall's Cookbook. It is out of print, unfortunately, because it rivalled even the old standby Betty Crocker as the best all-round. When my girls got married, each one got a McCall's Cookbook (which I had to buy from a used book store). Tradition lives in the Reynolds family! These cookies are really tasty, and I think you will love them.

- Sift together flour, baking powder, salt, and spices. Set aside.
- Cream butter and sugar. Add egg and vanilla, and blend thoroughly.
- Add flour mixture, blending to make a soft dough. Refrigerate dough about 1 hour.
- Meanwhile, make filling. In a small saucepan, add dates, sugar, and water. Cook until mixture thickens, about 5 minutes. Mix in peel and nuts. Cool.
- Divide cookie dough in half. Roll 1/2 into 8x10 rectangle. Spread 1/2 of filling over rolled dough. Beginning at long end, roll dough, jelly roll fashion, and wrap in plastic. Repeat with other half of dough. Refrigerate both rolls several hours or overnight.
- With a thin, sharp knife, slice cookies into 1/4" slices. Place on cookie pan lined with parchment paper. Bake at 375F for 8-10 minutes.
- ORANGE-FIG cookies: Make filling of 1-1/4 C figs, 1/4 C sugar, 3/4 C water. Cook approximately 10 minutes, then add 1 tbsp orange peel and 1/2 C finely chopped walnuts. Proceed as above using orange-fig filling instead of date filling.
