THIS RECIPE brings back many warm memories of the important people in my life. My grandmother always made this pudding for holiday gatherings...my mother served it to us often as we were growing up...and now I make it as a special treat for my family. -Peggy Foster, La Plata, Missouri

Steps:
- In a small heavy skillet, combine sugar, flour and baking soda; cook and stir over medium heat until light brown. Reduce heat to low; gradually stir in milk. Cook and stir until thickened and bubbly. Stir in nuts. Pour into two serving dishes. Chill. Garnish with whipped cream and walnuts if desired.

Steps:
- Preheat oven to 350F, with rack on the lower-middle position so the cake isn't too high in the oven.
- Grease and flour a bundt pan and set aside.
- In a large mixing bowl, combine cake mix and instant pudding powder. Whisk to combine.
- Add eggs, water, sour cream and oil. Whisk just until incorporated.
- Using rubber spatula, fold in bananas just until combined; don't over-mix.
- Pour into prepared bundt pan, lightly shaking to even out the batter.
- Bake 35-45 minutes, watching for the top to be lightly golden and a toothpick to only have a few crumbs and not batter attached.
- Cool completely in pan on rack. Once cool, use a knife to separate cake from pan. Invert and remove cake to a platter.
- Optional, drizzle with cream cheese frosting
- Using a hand mixer and a big bowl, whip the cream cheese until soft. Add remaining ingredients and mix until smooth.

- 1. Preheat oven to 350 degrees Fahrenheit. Spray bundt cake pan with cooking spray. You could probably use a regular cake pan if you wanted but I've never tried.
- 2. In a small bowl, combine 1 cup of the chopped walnuts, the brown sugar, and the melted butter together and stir well. Pour walnut mixture into the bottom of the pan and spread evenly.
- 3. In a larger bowl, combine cake mix, remaining walnuts, and cinnamon. Add eggs, mashed bananas, water, and oil. Mix 2 minutes or until well blended and pour into pan on top of nut mixture.
- 4. Bake for about an hour. Depending on the size of the bananas, cooking time varies a little. Remove from the pan when a cake tester (or butter knife) comes out clean. Immediately flip pan onto a cooling rack or cookie sheet and scoop out what of the nut mixture didn't come out. Nut mixture is extremely hot so be careful and put it on top of cake. Let cool, slice, and enjoy!

- In a large bowl, whisk the milk, pudding mixes and sour cream for 2 minutes. Let stand for 2 minutes or until thickened. Fold in bananas. Pour into a 1-1/2-qt. bowl. WALNUT BANANA BREAD PUDDING
My mom has been making this recipe since I was little. This dessert is a big hit at every barbecue and potluck I bring this to! Sometimes I use pecans instead of walnuts. This is great with coconuts, raisins, and dried cranberries, too!

- Grease a 9x13-inch baking dish with 1 tablespoon of butter; place the remaining butter in a saucepan over low heat, and melt the butter. Spread the French bread cubes out into the greased pan, and drizzle the melted butter over the bread.
- Place the walnuts into a dry skillet over medium-low heat; cook and stir until the walnuts turn a light golden brown and give off a toasted fragrance, about 2 minutes. Watch carefully so they don't burn. Remove from heat, and transfer walnuts into a bowl immediately to cool. Set walnuts aside.
- In a large mixing bowl, beat the eggs lightly just to break yolks, and mix in the cream, condensed milk, coconut milk, brown sugar, vanilla extract, cinnamon, nutmeg, allspice, and salt. Whisk to thoroughly combine until smooth. Stir in mashed banana and 3/4 cup of walnuts. Pour the banana mixture evenly over the bread cubes, and push bread cubes into the mixture to coat well with the custard. Sprinkle with remaining 1/4 cup of toasted walnuts. Cover the dish with plastic wrap, and refrigerate 8 to 12 hours.
- Preheat oven to 350 degrees F (175 degrees C). Remove plastic wrap, and cover dish with foil.
- Bake in the preheated oven for 15 minutes, then remove the foil and return to oven until the top is browned and the edges are pulling away from the pan, about 45 more minutes. Allow to cool before serving.

- For the crunch: Combine sugar, nuts and eggs. Speed thinly on greased baking sheet . Bake in 350 degree oven 18-20 minutes or till golden brown. Cool to room temperature. Crush mixture, sprinkle half of crumbs in baking pan and save rest for the top.
- Pudding : Combine vanilla pudding , sour cream and milk. Beat on low speed of mixer 1 to 2 minutes or until well blended. Fold in sliced bananas. Spoon over crumbs, top with remaining crumbs. Chill several hour. garnish with nuts and banana slices if desired
