WALNUT BALLS
This is an old, old recipe that has been in the family for years. The origin is unknown. Recipe uses very little sugar in it and is rolled in superfine sugar to sweeten.

Steps:
- Preheat oven to 350 degrees F (180 degrees C).
- Cream the sugar and butter. Add flour, nuts, salt and vanilla. Mix well. Batter will be very crumbly.
- Shape into 1 inch balls. Bake for 15 minutes, remove from oven and allow to cool for 3 minutes. Roll in super fine sugar. When cool, roll again, if desired.

MOM'S WALNUT BALLS
Mom's Walnut Balls are buttery, tender and absolutely heavenly! These Christmas cookies have been at every family Christmas for decades now. Tried and true, they make the holidays brighter.

Steps:
- Using a good quality chefs knife carefully chop walnuts until 2 cups is achieved. Finely chopped walnuts can also be purchased at the grocery store.
- Preheat oven to 375℉.
- Using a stand mixer or hand held mixer cream together butter, sugar and vanilla until light and fluffy.
- In a separate sized mixing bowl measure and sift flour and salt. Mix well into butter mixture until a soft dough forms. Stir in walnuts.
- Using a teaspoon break apart pieces of dough and then form by rolling between clean hands.
- Bake on ungreased cookie sheet for 12- 15 mins or until lightly golden brown. Using a spatula, remove from cookie sheet and let cool slightly. The cooling helps to prevent crumbling when rolling in powdered sugar.
- Place powdered sugar onto a plate and while cookies are still warm roll in sugar. If desired, roll a second time for an additional coating.

CINNAMON WALNUT BALLS
Steps:
- Preheat oven 350 degrees. Spread the walnuts on a baking sheet and toast in the oven, tossing occasionally until fragrant, 6-8 minutes, let cool. In a food processor , process the walnuts until finely ground. In a large bowl, whisk together walnuts, flour, cinnamon and salt, set aside. using an electric mixer, beat the butter, 1/3 cup sugar on medium high until light and fluffy, 2-3 minutes. Beat in the vanilla. Reduce mixer speed to low and gradually add the flour mixture, mixing until just combined. Do not over mix.
- Shape the dough into 1-inch balls and place 2 inches apart on baking sheet. Bake 12-14 minutes, until just beginning to brown. Let cool slightly on baking sheet, then transfer to wire rack. Place the remaining 1/3 cup powdered sugar on a platter. Roll cookies in sugar to coat, then dust with cinnamon. Makes about 36 cookies.

- Once mixed then add milk.
- Take the mixture and knead it on a firm surface.
- Take 1 tablespoon and roll it into a ball.
- Roll the ball into the cinnamon.
- Bake at 450 degrees for 10 minutes.

- 1. Preheat oven to 375 degree F. In a medium bowl, cream butter, beat in flour and confectioners' sugar. Now, beat on pecans. The mix will look crumbly.
- 2. I pinch enough out of the bowl, to make a ball about the size of a large marble. Shape into balls and place on baking sheet.
- 3. Bake for 10 minutes, then carefully roll in cinnamon sugar mixture. These are tender cookies, so be careful coating them. Don't squeeze hard on them.
- 4. Place on racks to cool. Enjoy, so yummy!

- Preheat oven to 325°F
- In large bowl, w/ mixer on medium speed, beat butter, granulated sugar, and vanilla until creamy, occasionally scraping bowl with rubber spatula. Reduce speed to low; gradually beat in flour and salt just until blended, occasionally scraping bowl. Stir in walnuts.
- Shape dough by rounded measuring teaspoons into 1-inch balls. Place balls, 1 inch apart, on ungreased large cookie sheet. Bake cookies 13-15 minutes or until bottoms are lightly browned.
- Place confectioners' sugar in pie plate. While cookies are hot, with metal spatula, transfer 4 or 5 cookies at a time to pie plate with confectioners' sugar. gently turn cookies w/ fork to generously coat with sugar. Transfer cookies to wire rack to cool completely.
- Repeat with remaining dough and confectioners' sugar. Store cookies in tightly covered container at room temperature up to 1 week or in freezer up to 3 months. Dust with additional confectioners' sugar before serving if you like.

CINNAMON BALLS
A light and flaky cookie made with ground almonds and cinnamon and rolled in confectioner's sugar. I haven't made these yet, but thought they sounded interesting. Found on the Pogo game site.

Steps:
- Mix the almonds, sugar and cinnamon together in a medium bowl.
- Whisk the egg whites in a separate bowl until they begin to stiffen.
- Fold whisked egg whites into the dry mixture until the combination is fairly firm.
- Use your hands to roll the mixture into pecan-sized balls and place these onto a greased baking sheet.
- Bake for about 15 minutes at 350 degrees F.
- Remove from oven and use a metal spatula to separate the balls from the baking sheet before they cool too much.
- Once the cinnamon balls are completely cooled, gently roll each ball in confectioner's sugar until it is completely coated in sugar.
