I cut this recipe out of the Sunday coupons 5+ years ago. I make them every Christmas for gift giving.

Number Of Ingredients 7

2 cups flour
3/4 cup packed brown sugar
1 beaten egg
3/4 cup cold margarine or 3/4 cup butter
3/4 cup chopped walnuts
1 (14 ounce) bag caramels, unwrapped
1 (14 ounce) can sweetened condensed milk

Steps:

  • Preheat oven to 350°F.
  • Mix flour, sugar and egg.
  • Cut in ½ cup margarine until crumbly.
  • Stir in walnuts.
  • Reserve 2 cups of crumb mixture.
  • Press remaining crumb mixture firmly into a greased and floured 13x9 in pan.
  • Bake 15 minutes.
  • In a saucepan over low heat melt caramels with sweetened-condensed milk and remaining ¼ cup margarine.
  • Pour over prepared crust and top with reserved crumb mixture.
  • Bake 20 minutes or until bubbly.
  • Cool and cut into bars.
  • Store at room temperature.

2 teaspoons butter
1/3 cup butter, cubed
2 cups sugar
2 cups heavy whipping cream, divided
1 cup light corn syrup
1-1/2 cups chopped walnuts
1 teaspoon vanilla extract

Steps:

  • Line a 13x9-in. pan with foil; grease foil with 2 teaspoons butter., In a large heavy saucepan, combine cubed butter, sugar, 1 cup cream and corn syrup. Cook and stir over medium heat until a candy thermometer reads 238° (soft-ball stage). Stir in remaining cream very slowly so that mixture does not stop boiling., Using a pastry brush dipped in water, wash down the sides of the pan to eliminate sugar crystals. Cook and stir until thermometer reads 245° (firm-ball stage)., Remove from heat; stir in walnuts and vanilla. Immediately pour into prepared pan (do not scrape saucepan). Let stand until firm, about 5 hours or overnight., Using foil, lift candy out of pan; remove foil. Using a buttered knife, cut caramel into 1-in. squares. Wrap individually in waxed paper; twist ends.

Walnut Oh Henry Bars - a scrumptious no-bake cookie bar with a caramely, nutty centre sandwiched between graham crackers and topped with sweet vanilla buttercream frosting.

Graham crackers, enough to line a 9x13 pan twice
1 1/2 cups firmly packed brown sugar
3/4 cup butter
3/4 cup milk
1 1/2 tsp pure vanilla extract
1 1/2 cups roughly chopped toasted walnuts
1 1/2 cups dried unsweetened coconut, medium cut
2 cups graham cracker crumbs
2 cups icing sugar, powdered sugar
1/3 cup butter at room temperature
1 1/2 tsp pure vanilla extract
2 tablespoons milk

Steps:

  • Line the bottom of a 9x13 pan with a single layer of the graham cracker, cutting them to fit around the edges. You will need another identical layer fro the top.
  • Toast the walnuts in a single layer on a pan in a preheated 350 degree oven for 10 minutes. Toss them once at the 5 minute mark. Allow them to cool to room temperature before roughly chopping them with a chefs knife or individually breaking them into a few pieces each with your fingers. larger chunks are better in this recipe, I think.
  • In a medium to large saucepan over medium heat, add the brown sugar, butter, milk and vanilla extract. Bring to a slow rolling boil for about 4 minutes. Turn the heat down if necessary. This should never boil too rapidly.
  • Remove from heat and stir in the nuts, coconut and graham crumbs.
  • Spread this hot mixture evenly over the graham cracker base and then top with an additional layer of graham crackers.
  • Allow to cool to room temperature before placing in the fridge for a couple of hours at least to set completely.
  • Top with the vanilla buttercream frosting, cut in squares and serve.
  • Cream together all of the frosting ingredients until smooth and spreadable. It's okay to add a little more milk if needed but the thicker the frosting consistency the better. If it gets too soft, just add a couple pf heaping tablespoons of icing sugar.

32 individually wrapped caramels, unwrapped
5 tablespoons heavy cream
1 cup all-purpose flour
1 cup rolled oats
¾ cup brown sugar
½ teaspoon baking soda
¼ teaspoon salt
¾ cup butter, melted
½ cup semisweet chocolate chips
½ cup chopped walnuts

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). In a medium saucepan over low heat, melt together the caramels and heavy cream, stirring occasionally until smooth.
  • In a medium bowl, stir together the flour, oats, brown sugar, baking soda and salt. Stir in the melted butter until well blended. Press Half of the mixture into the bottom of a 9x13 inch baking pan. Reserve the rest.
  • Bake the crust for 8 minutes in the preheated oven. Remove and sprinkle with chocolate chips and walnuts. Pour the caramel mixture over the top and then crumble the remaining crust mixture over everything.
  • Return to the oven and bake for an additional 12 minutes, or until the top is lightly toasted. Cut into squares while it is still warm.

2 c flour, unsifted
3/4 c brown sugar, firmly packed
1 egg, beaten
3/4 c butter, cold - divided
1 c walnuts, finely chopped
24 caramels, unwrapped
1 can(s) (14 oz) sweetened condensed milk

Steps:

  • 1. Preheat oven to 350. In a large bowl, combine flour, sugar and egg. Cut in 1/2 cup of butter, until crumbly. Stir in walnuts.
  • 2. Reserve 2 cups of crumb mixture; press remainder firmly on the bottom of a greased 9x13 baking dish. Bake 15 minutes.
  • 3. Meanwhile, in a heavy saucepan, over low heat - melt caramels with sweetened condensed milk and remaining 1/4 cup of butter. Pour over crust. Top with reserved crumb mixture. Bake 20 minutes or until bubbly.
  • 4. Cool. Cut into bars. Store loosely covered at room temparature

Steps:

  • Preheat oven to 375.
  • In large bowl, combine the first 5 ingredients. Cut in the butter until crumbly.
  • Reserve 1 1/2 cups of the crumb mixture and press the remainder into a 9x13 inch pan.
  • Bake 15 minutes.
  • Add walnuts to the reserved crumb mixture.
  • In saucepan, over low heat, melt the caramels with the condensed milk. Stir until smooth.
  • Spoon apple filling over the prepared crust.
  • top with the caramel mixture and sprinkle the remaining crumbs on top.
  • bake 20 minutes or until set.
  • Cool.

CRUST
2 1/4 c flour
1/2 c sugar
3/4 c butter, cold
CARAMEL LAYER
3/4 c butter
1 c brown sugar, firmly packed
3 Tbsp light corn syrup
3/4 c sweetened condensed milk
1/2 c walnut pieces
TOPPING
1 c semi-sweet chocolate chips
2 Tbsp butter, cold

Steps:

  • 1. Mix flour, sugar and 3/4 cup butter until crumbly like cornmeal, pat into ungreased 13" x 9" pan. Bake at 350 degrees for 20 to 25 minutes or until golden brown. Cool.
  • 2. Bring 3/4 cup butter, brown sugar, corn syrup and sweetened condensed milk to a boil in large saucepan over medium heat, boil for 5 minutes, stirring until thickened slightly. Stir nuts into caramel, pour over baked crust, cool.
  • 3. Melt chocolate chips and 2 tablespoons butter in double boiler over hot water until smooth. Pour over cooled caramel and spread evenly. Cool. Cut into 2" squares. Makes 24 squares.
