APPLE WALNUT CAKE WITH CINNAMON GLAZE
This apple walnut cake is tender and flavorful with little bits of crunch throughout. Make it for a special occasion or family get together!

- Preheat oven to 350 degrees
- Generously grease the bottom and sides of a 9x13-inch cake pan (or glass cake pan) with a tablespoon of butter.
- Peel and dice 4 or 5 medium apples, discarding the cores and peels, to make 3 cups.
- Whisk together sugar and oil in a large bowl. Add eggs and vanilla and whisk until well combined.
- Add flour to the bowl and sprinkle with the salt, baking soda, cinnamon, and nutmeg. Using a wooden spoon, fold the dry ingredients into the wet ingredients until combined. DO NOT over mix.
- Next, fold in the apples and walnuts. The batter will be stiff. Pour (or spread) the batter into the prepared pan. Bake for 1 hour or until a toothpick inserted in the middle comes out clean.
- Cool cake in the pan on a wire rack for 30 minutes before drizzling with the glaze.

Cool on a wire rack., For frosting, beat cream cheese, butter and vanilla in a bowl. Gradually add confectioners' sugar until the frosting has reached desired spreading consistency. Frost cooled cake.

- Grease and flour a tube or bundt cake pan and preheat the oven to 350 degrees.
- Blend eggs, oil, nutmeg, and sugar until creamy.
- Add flour, a little at a time; and blend well.
- Batter will be stiff.
- Fold in apples and nuts.
- Pour into tube or bundt cake pan and bake for 1 hour.
- Remove from pan after about 30 minutes.
- Punch holes in top of the cake.
- Mix together topping ingredients in a saucepan.
- Boil for three minutes, stirring frequently.
- Take off the heat and pour topping over cake with a spoon, letting it to seep into the cake holes.
- Brush the sides of the cake with a kitchen brush.
- Let it set for at least 24 hours befor cutting and serving.

- Preheat the oven to 350°. Spray a 9x9" square baking pan with vegetable spray and line it with a rectangular piece of parchment paper cut to fit the dimensions of the bottom of the pan with several inches on either side to hang over the edges. Spray the parchment paper with vegetable spray and set aside.
- In a large bowl combine the flour, sugar, baking powder, salt, cinnamon, nutmeg, allspice and cloves, whisk to combine. Make a well in the dry ingredients and add the applesauce, vegetable oil and egg. Stir until just combined. Stir in the walnuts and raisins and spread into the prepared pan.
- Bake for 55-65 minutes or until a toothpick comes out clean. Cool in the pan for 15 minutes then carefully lift the cake with the sides of the parchment paper and transfer to a wire rack to cool to room temperature.
- You can frost with your favorite cream cheese or buttercream frosting or just dust with powdered sugar.

- Place the butter and sugar in a large bowl, beat on medium speed until light and fluffy. Add the eggs one at a time beating well after each addition. Stir in the vanilla.
