WALKING TACO CASSEROLE
This Walking Taco Casserole is full of Mexican favorites and topped with Doritos, Fritos, or Tortilla Chips!

Steps:
- Preheat the oven to 350 degrees.
- Place the ground beef and onion in an oven safe skillet over medium high heat on the stove. Saute until the meat is browned and the onions have softened.
- Add the taco seasoning, green chilis and cream cheese to the skillet, and saute until the cream cheese is completely melted and combined.
- Top the mixture with the corn chips and then the shredded cheese.
- Bake for 20 minutes.
- Remove the skillet from the oven and top with shredded lettuce and tomato.
- Garnish with salsa and sour cream if desired.

My preschooler doesn't eat ground beef unless it's taco flavored, so I came up with this casserole we all like. To make assembly easy, I prepare the taco meat and freeze several bags at a time. - Preheat oven to 350°. Cook pasta according to package directions. Meanwhile, in a large skillet, cook beef and onion over medium heat until meat is no longer pink; drain. Add cheese, salsa, tomatoes and taco seasoning. Drain pasta; stir into beef mixture., Transfer to a greased 11x7-in. baking dish. Cover and bake 20 minutes. Uncover; sprinkle with tortilla chips. Bake until heated through, about 10 minutes longer.

- Cook ground beef and onions in a skillet over medium heat until beef is browned, 7 to 10 minutes; drain grease. - Preheat oven to 350 degrees F (175 degrees C).
- Cook and stir ground beef in a large skillet over medium-high heat until crumbly, evenly browned, and no longer pink, 5 to 7 minutes. Drain and discard any excess grease. Stir salsa, onion, mayonnaise, chili powder, and cumin into the beef. Remove from heat.
- Spread about half the ground beef mixture into the bottom of a 2-quart casserole dish. Spread about half the tortilla chips in a layer atop the beef mixture.
