This is a great snack that we often enjoy when taking a walk or going on a road trip. They can be a little messy, but they are delicious and my kids love them. Be creative. We like Granny Smith apples best, but use what you like. The amounts and ingredients are a little vague, but you get the idea. The recipe says to core the apples, but to leave the bottoms in tact. We just core them through, but that's why they are a little messy. I might try placing all the filling ingredients in a plastic bag or cake decorating bag and squeezing it into the cored apple. We love these take-along treats. UPDATE: Turn these into a goulish treat by partially inserting a juicy gummy worm!

peanut butter
mini chocolate chip (optional)
dried cranberries (optional) or raisins (optional)
coconut (optional)
dried banana pieces (optional)

Steps:

  • Core the apple, but leave the bottom in tact. Mix together your stuffing ingredients; peanut butter, chocolate chips, marshmallows, cranberries, etc. Stuff the center of the apple.

This easy apple crisp recipe with oats is classic! Golden crumbles sit atop a luscious, warm-spiced fruit filling.

6 (2 pounds) medium to large cooking apples
2 tablespoons lemon juice, plus 1 teaspoon lemon zest
1 teaspoon orange zest
1/3 to 1/2 cup granulated sugar*
2 teaspoons ground cinnamon
¼ teaspoon each ginger and allspice
¾ cup all-purpose flour (or almond flour for gluten-free)
¾ cup Old Fashioned rolled oats
½ cup packed brown sugar
¼ teaspoon kosher salt
1 teaspoon vanilla extract
8 tablespoons cold unsalted butter (or vegan butter or room temperature refined coconut oil for vegan)

Steps:

  • Preheat the oven to 375 degrees.
  • Core, peel and cut the apples into 1/2-inch chunks. Combine the apples with the lemon juice, lemon zest, orange zest, granulated sugar*, cinnamon, ginger, and allspice in a large bowl and toss until well coated.
  • In a separate bowl, make the crumble topping: stir together the flour, oats, brown sugar, and kosher salt. Add the vanilla and stir. Cut the butter into small pieces and add it to the to bowl. Use your hands to mix it into the dry ingredients until fully distributed and a crumbly dough forms. It may take a while, so be patient; you can also use a pastry cutter or fork if you prefer.
  • Grease a 9 x 9-inch (or equivalent size) baking dish. Place the apple filling in the bottom, then evenly distribute the crumble over the top.
  • Bake for 45 to 50 minutes until browned and bubbly. Allow to cool slightly, then serve with Greek yogurt sweetened with maple syrup, whipped cream or ice cream. Stores refrigerated for 3 days or freeze up to 3 months in a sealed container. Reheat it in a 350 degree oven until bubbly and the topping is crisp.

8 medium peeled apples, cut into 1-inch chunks that are 1/4 - 1/2 inch thick (about 10 cups chunks)
1/2 cup (100g) packed light or dark brown sugar
1/4 cup (31g) all-purpose flour (spoon & leveled)
1 teaspoon pure vanilla extract
1 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon salt
3/4 cup (94g) all-purpose flour (spoon & leveled)
3/4 cup (150g) packed light or dark brown sugar
1 teaspoon ground cinnamon
1/2 cup (1 stick; 115g) unsalted butter, cold and cubed
1 cup (80g) old-fashioned whole oats
optional: salted caramel and vanilla ice cream for serving

Steps:

  • Preheat oven to 350°F (177°C). Lightly grease a 9×13 inch baking pan. Any 4 quart baking dish works.
  • Mix all of the filling ingredients together in a large bowl, then spread into the baking pan.
  • Whisk the flour, brown sugar, and cinnamon together in a medium bowl. Cut in the butter using a pastry cutter or fork until the mixture becomes super crumbly. Stir in the oats. Sprinkle over filling.
  • Bake for 45 minutes or until the topping is golden brown and the fruit juices are bubbling around the edges. Remove from the oven, place on a wire rack, and allow to cool for at least 5 minutes before serving. Serve warm, room temperature, or cold- plain or with salted caramel and/or vanilla ice cream.
  • Cover leftovers and store in the refrigerator for up to 5 days.

This recipe is for whole baked apples stuffed with buttery brown sugar oat crumble. For extra flavor, feel free to swap the water with warm apple cider.

3 Tablespoons (43g) unsalted butter, softened to room temperature (extra soft, so it's easy to mash)
1/4 cup (50g) packed light or dark brown sugar
1/2 teaspoon ground cinnamon
1/8 teaspoon ground nutmeg
1/4 cup (20g) old-fashioned whole rolled oats
4 large apples (see note), rinsed and patted dry
optional: 2 Tablespoons raisins, dried cranberries, or chopped nuts
3/4 cup (180ml) warm water

Steps:

  • Preheat oven to 375°F (191°C).
  • Using a handheld or stand mixer with a paddle attachment, or simply using a fork or spoon, beat/mash the butter, sugar, cinnamon, and nutmeg together until combined. Stir in the oats, then the raisins/dried cranberries/nuts, if using. Set aside.
  • This can be tricky, but I recommend using a sharp paring knife and a spoon. (Or an apple corer.) I find cookie scoops can easily break or crack the apples. Using a sharp paring knife, cut around the core, about halfway or 3/4 down into the apple. Use a spoon to carefully dig out the core. Takes a bit of patience and arm muscle. Once the core is out, use a spoon to dig out any more seeds.
  • Place cored apples in an 8-inch or 9-inch baking pan, cake pan, or pie dish. Spoon filling into each apple, filling all the way to the top. Pour warm water into the pan around the apples. The water helps prevent the apples from drying out and burning.
  • Bake for 40-45 minutes or until apples appear slightly soft. Bake longer for softer, mushier baked apples. The time depends on how firm your apples were and how soft you want them to be.
  • Remove apples from the oven and, if desired, baste the outside of the apples with juices from the pan. This adds a little moisture to the skin, but it's completely optional.
  • Serve warm with salted caramel, whipped cream, or ice cream. Cover and store leftovers in the refrigerator for up to 2 days.
