1 medium cabbage, shredded
2 cups halved seedless red grapes
2 cups miniature marshmallows
1-1/2 cups shredded carrots
1 can (20 ounces) pineapple tidbits, drained
1 large apple, diced
1 cup raisins
1 cup chopped walnuts
1-1/2 cups mayonnaise

Steps:

  • In a large bowl, combine the first eight ingredients. Add mayonnaise; toss to coat.

2 small red onions
0.5 small Napa cabbage
salt
0.5 lemon
5 ozs Yogurt (low-fat)
4 ozs cream cheese
1 Tbsp Worcestershire sauce
peppers
2 small green Apple
4 medallions Pork (each 2 ounces)
0.5 tsp fennel seeds
1 oz Walnut
1 Tbsp olive oil

Steps:

  • Peel onions and cut into very thin strips.
  • Trim, rinse and cut the cabbage into very fine strips.
  • Mix onions and cabbage in a bowl with some salt and let stand for 10 minutes. Squeeze lemon.
  • Mix together yogurt, cream cheese, 2 tablespoons lemon juice, and Worcestershire sauce. Season with salt and pepper.
  • Rinse apples, cut into quarters, remove seeds and cut into very thin slices.
  • Drain accumulated water from the cabbage and mix the cabbage with apples and yogurt dressing.
  • Pat dry pork medallions and season with salt and pepper. Crush fennel seed in a mortar and sprinkle on the meat.
  • Chop walnuts coarsely and fry in a non-stick skillet. Remove, wipe out pan and heat oil in it.
  • Add pork medallions. Depending on thickness, fry on each side for 3-5 minutes.
  • Take medallions from the pan, wrap in aluminum foil and let rest for 5 minutes. Serve with the salad and garnish with walnuts.

1 tbsp white wine vinegar
50g walnuts , roughly chopped

  • In a large bowl, combine the cabbage, celery, apples and grapes. Mix the mayo with the vinegar and season. Stir it into the vegetables so that they are well coated. Sprinkle on the walnuts and serve. Will keep in the fridge for up to 3 days.

Plan ahead this needs to be refrigerated for 6 hours or overnight. This is an amazing cabbage salad! If you purchase a very large cabbage, you can increase the mayo/yogurt dressing if desired.

1 head green cabbage (cored, thinly sliced or chopped small)
4 granny smith apples, peeled and cut into juiienne strips
3 -4 celery ribs, chopped
3/4 cup mayonnaise
3/4 cup yogurt, plain
1 tablespoon Dijon mustard
3 -4 tablespoons sugar
1/4 cup vegetable oil
1 teaspoon salt (or to taste)
1/4 cup red wine vinegar
2 cups chopped walnuts (leave the walnuts coarsley chopped)
1 cup blue cheese, crumbled (optional and to taste)
1 small red onion (cut into rings or thinly sliced)
1 granny smith apple, unpeeled and cut into thin slices to garlish

Steps:

  • In a small bowl whisk togther mayonnaise, yogurt, mustard, oil, 1 teaspoon salt (or to taste) and vinegar until smooth.
  • In a very large bowl mix together, cabbage, apple strips, celery and walnuts.
  • Pour the dressing over the cabbage mixture; toss to combine.
  • Season with salt and pepper if desired.
  • Cover and refrigerate for a minimum of 6 hours or overnight (toss a couple of times during chilling time to combine the cabbage with the dressing) .
  • Just before serving sprinkle with the blue cheese and red onions on top, then garnish with apple slices around the outside of the bowl.
  • Sprinkle with more walnuts if desired.
  • Delicious!

2 cups diced tart apples (, or 2 apples)
1 tablespoon sugar
2 teaspoons lemon juice
1 cup diced celery
1 cup grapes (, halved)
1/2 cup toasted walnuts or pecans (, roughly chopped)
1/2 cup whipping cream (, whipped)
1/4 cup mayonnaise
1/2 teaspoon kosher salt

Steps:

  • Add the diced apples to a large mixing bowl and sprinkle with the sugar and lemon juice. Toss to coat. Add the celery, grapes, and nuts.
  • In another bowl, whip the whipping cream until peaks form, then gently fold in the mayonnaise. Fold into the apple mixture and season with the kosher salt. Taste and adjust the seasoning to your liking. Chill for 1 hour or overnight. Serve by itself or on a lettuce leaf.

1/2 cup celery, chopped
2 tablespoons raisins, finely chopped
2 tablespoons walnuts, finely chopped
1/4 cup plain fat-free yogurt
2 tablespoons light mayonnaise
1/2 teaspoon lemon juice
1 1/2 cups apples, cored and chopped
salt and pepper

Steps:

  • In a medium bowl combine cabbage, celery, raisins and walnuts.
  • Whisk yogurt, mayonnaise, and lemon juice. Stir in to cabbage mixture. Season with salt and pepper.
  • Cover and refrigerate at least 1 hour.
  • Stir in apples before serving.

4 apples, cored and diced with peel

6 stalks celery, diced

  • Use a chef's knife to slice cabbage into thin pieces 1 to 2 inches long. Do not use the large ribs of the cabbage, as they are too strongly flavored.
