I have tinkered with this, adding a little spicier pepper, but all love it, and it's a no brainer to make because you don't have to brown the meat. Got the basics from the "Best of the Best of Great Plains" cookbook.

Number Of Ingredients 10

3 lbs lean beef, cut in cubes
2 medium onions, chopped
2 cups carrots, cut in rounds
1 cup sliced celery
4 medium potatoes, cubed (I leave skins on)
2 teaspoons salt
1 dash pepper
2 1/2 tablespoons tapioca
2 cups tomato juice (I use V-8)
1/2 head chopped cabbage, if you like it

Steps:

  • Throw this all together in a large dutch oven and cook, covered in slow oven, 250, for 5 hours.

3 lb beef stewing meat, cubed
1 medium onion, chopped
1 c celery, sliced
2 c carrots, sliced
4 medium potatoes, cubed
3 Tbsp minute tapioca
1 Tbsp sugar
1 Tbsp salt
1/2 tsp pepper
1 can(s) tomato soup (10 3/4-oz)
1/3 c water

Steps:

  • 1. Layer meat, onion, celery, carrots, and potatoes in slow cooker.
  • 2. Sprinkle with seasonings and tapioca. Add soup and water.
  • 3. Cover. Cook on Low 7-9 hours.

2 tablespoons dry onion, minced
3 tablespoons quick-cooking tapioca
1 tablespoon sugar
1 (10 1/4 ounce) can tomato soup
salt
pepper

Steps:

  • Place all in a large crock pot.
  • Cover and cook at low setting for 5 hours.
  • Do not stir.
  • Add whatever additional vegetables you like.
