Part of our annual trek to the mountains is cooking out streamside. This year I decided to try salmon and found this recipe on another site. I scaled it back to feed 2 and marinated the fish for about 6 hours. It was spectacular. You can baste the fish while it's cooking if you wish, but not necessary. We used a grill basket and oiled it first to prevent sticking.

1 1/2 lbs salmon fillets
lemon pepper
salt
garlic powder
1/3 cup soy sauce
1/3 cup brown sugar
1/3 cup water
1/4 cup vegetable oil

Steps:

  • sprinkle fillets with salt, lemon pepper and garlic powder to taste.
  • Combine soy sauce, brown sugar, water and oil.
  • Marinate fish in soy mixture for 2 hours or more.
  • remove from marinade.
  • Grill for 7 minutes per side.

Arr! Walk the plank matey! This is some of the tastiest salmon you'll ever have. (Kindly shared by Nicole and Jerry Wakeman.)

Number Of Ingredients 8

2 tablespoons vegetable oil (I like to use lemon olive oil)
1 tablespoon soy sauce (the tamari is great)
3 tablespoons Bourbon (or whiskey, chardonnay or a liquor of your choice that is sweet, rum would probably work, brandy too)
1 teaspoon ground fresh ginger (I buy the jar of minced ginger from TJ's or safeway, it keeps for ages in the fridge and is great fo)
1 -2 tablespoon brown sugar
fresh ground pepper
1 tablespoon fresh lemon juice (one half lemon will do)
2 lbs salmon fillets, with skin

Steps:

  • Soak a 10 inch long, 6" to 8" wide, construction grade cedar plank 3/4" thick, in water for at least 24 hours before making the recipe.
  • Make sure you keep the wood submerged by weighing it down with cans.
  • Start your barbecue and heat it to high.
  • place salmon in shallow, non-metallic dish. combine all but the lemon juice and pour on salmon, turning to coat and let sit at least 20 minutes.
  • Put the plank on the BBQ and sprinkle with a little coarse salt.
  • Close the cover for a couple of minutes or just until the top of the plank is nearly dry.
  • Note: Keep a spray bottle of water close at hand in case the wood starts to burn.
  • Place the filets on top of the plank.
  • If your BBQ has two burners, turn off the one beneath the wood.
  • If not, turn the heat to the lowest setting.
  • Close the cover and cook for about 10- 12 minutes or until nearly cooked all the way through.
  • Don't overcook.
  • Once salmon is planked and cooking, pour leftover marinade into small saucepan, squeeze in lemon and simmer until reduced to glaze consistency,.
  • basically as long as the salmon cooks ( 10-15 mins). you now have a fab sauce to drizzle on the salmon before serving! bon apetit!

This is one of the easiest recipes in my collection that always gets compliments. The smokiness of the paprika and the sweetness of the brown sugar will make your toes curl.

1 salmon fillet
2 tablespoons brown sugar
1 tablespoon kosher salt
1 tablespoon ground black pepper
1 tablespoon smoked paprika
1 tablespoon dried thyme
2 tablespoons olive oil

Steps:

  • Heat your grill to medium/high. Oil the grill using a paper towel or anything else on hand.
  • Combine all the dry ingredients in a bowl. Slowly add a small amount of olive oil and stir. You will see an obvious change in color. Add more oil if the mix is still dry.
  • Add the mix to the meat side of the fillet. Lay the fillet skin side down on the grill. Cook for 5 minutes. Flip the fillet and cook for 4 minutes. Take the salmon off the grill and serve meat side up.

This is my version of the Sweet bourbon salmon like they serve at the Lonestar Steakhouse. The amount of fish used is a guess, as it really depends on if you're cooking this whole, fillets, or steaks. Cook time includes marinade time.

1 1/2 lbs salmon fillets (can use steaks or even whole, cleaned salmon)
1 cup soy sauce
1 cup pineapple juice
1 cup brown sugar
1/2 cup Bourbon

Steps:

  • Mix all wet ingredients, and stir in the brown sugar.
  • Add the fish and marinate no less than 24 hours (I go at least 48).
  • Heat grill and cook till fish is desired doneness.

1 ½ tablespoons shallot, minced
1 ½ tablespoons champagne vinegar
½ lemon, juiced
2 tablespoons olive oil
¼ teaspoon red pepper flakes
¼ cup olive oil, plus 2 tablespoons, divided
2 tablespoons Grill Mates® Brown Sugar Bourbon Seasoning
2 oz salmon fillet, skin removed
2 ears corn, shucked
8 spears asparagus
⅓ cup red onion, sliced into 1/4 in (6 mm) wedges
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
1 roma tomato, cut into ½-inch (1.24 cm) wedges and halved crosswise
⅓ cup cucumber, quartered lengthwise and sliced ¼ inch (6 mm) thick

Steps:

  • Preheat the grill to 350°F (180°C).
  • Make the vinaigrette. In a small bowl, whisk together the shallot, champagne vinegar, lemon juice, olive oil, and red pepper flakes.
  • Make the salad: In a small bowl, whisk together 2 tablespoons olive oil and the Grill Mates® Brown Sugar Bourbon Seasoning. Rub the seasoning paste over the salmon filets.
  • Place the salmon on the grill grates, skin-side up, and grill for 4-6 minutes, then flip and continue cooking for another 4-6 minutes, until white lines appear across the filet. Remove the salmon from the grill and flake into thick pieces with a fork. Let cool for about 10 minutes.
  • On a small baking sheet, toss the corn, asparagus, and red onion with the remaining ¼ cup olive oil, 1 teaspoon salt, and the black pepper until well coated.
  • Place the corn on the grill grates. Cook, turning often, until charred, about 10 minutes. Place the asparagus and red onion on the grill grates and cook, flipping once, for 3-4 minutes, until charred and tender. Remove the vegetables from the grill.
  • Stand the corn cobs upright and cut off the kernels, then transfer to a large bowl. Cut the asparagus into 1-inch pieces and add to the same bowl, along with the grilled red onion, tomato, cucumber, and lemon juice. Toss until well combined.
  • In a large salad bowl, combine the spring salad mix, grilled vegetable mixture, and salmon. Drizzle with the vinaigrette. Toss well, then serve immediately.
