BEEF KIELBASA HASH,LOW COST
Four small potatoes, garlic clove and half of a beef kielbasa! This was enough to feed four people until full. Total cost, .34 cents a person! Steps:
- 1. Peel and dice potatoes. Cut kielbasa into coins. and crush garlic, don't cut put in mainly whole.
- 2. Heat up cast iron skillet on med.hi add two tablespoons of Crisco oil. add potatoes into middle of pan and pat down into a layer. Add coins around the sides. Put turned over saute pan over the potatoes for 4 minutes.
- 3. Take pan off and continue cooking potatoes as you mix coins into the potatoes. Once potatoes are as brown as you would like them remove pan from heat and plate.
'DAY BEFORE PAYDAY' KIELBASA AND CORN HASH
I came up with this meal while poor and hungry, and it turned out so good that it's now a frequently requested meal at my house. The eggs are optional, but I really think that they kick the dish up a notch, so to speak!

- Heat 1 tablespoon of canola oil in a large skillet over medium-high heat. Stir in the potatoes and kielbasa, and cook until the kielbasa is browned, and the potatoes are nearly tender, about 10 minutes. Add the frozen pepper mix and corn; season with red pepper flakes, salt, and pepper to taste. Cook, stirring occasionally, until the mixture is hot and the potatoes are tender, about 10 minutes more.
- Meanwhile, heat the remaining 2 tablespoons of canola oil in a large skillet over medium heat. Once hot, crack in the eggs, and cook to your desired degree of doneness, about 1 1/2 minutes per side for over-medium. Portion the kielbasa hash into 6 servings, and top each serving with a fried egg.

WAGYU BEEF KIELBASA HASH

- PREPARING THE HASH: Preheat the oven to 400°F. Heat a large cast iron skillet with grapeseed oil. Once the oil is hot, add in the Wagyu beef kielbasa sausage (that you've cut into coins), and brown on both sides. Using a slotted spoon, remove the kielbasa from the skillet. Reserve. Heat the cast iron skillet over medium-high heat. Use the remaining oil in the pan, and toss the diced Yukon gold potatoes and sweet potato to coat. Note: If the potatoes need more oil to fully coat them, add a little more grapeseed oil to the skillet. Brown the potatoes lightly. Then, add in the kosher salt, freshly ground black pepper, and diced yellow onion. Place the skillet in the preheated oven (or if cooking over a camp stove, cover with aluminum foil). Roast the potato and onion mixture for 12 minutes. Cook your eggs while the skillet is in the oven
- PREPARING THE EGGS: Prepare your eggs, two at a time, over easy or over medium (whichever you prefer). Reserve.
- FINAL STEPS: Once the skillet is out of the oven, add the seeded and diced red bell pepper, poblano pepper, and green bell pepper to the skillet. In addition, add the cooked Wagyu beef kielbasa to the skillet. Toss everything together. Let the hash sit for 5 minutes to soften the peppers. Divide the Wagyu beef kielbasa hash between bowls. Top each bowl with two cooked eggs. Garnish with minced green onion. Serve hot, and enjoy!

- If you are using beef kielbasa, you may not need to add additional olive oil, but with turkey you may need to. Add the kielbasa and cook for 2 to 3 minutes on each side, until lightly browned. Remove kielbasa to a separate plate and pat with a paper towel to absorb some of the grease. Return to skillet.
- Add the onions and pepper to the skillet and sauté until the onions are soft and translucent and the peppers and tender. Then add the garlic and let cook another minute. Season with salt and pepper.
