W30/PALEO GRAVY
This gravy is made from broth and veggies only. Based on a recipe from NomNom Paleo. I used Chicken broth as my base, but of course any broth will do - it just depends on what you're serving for dinner.

Steps:
- Place all ingredients in a sauce pan. Simmer about an hour until the veggies are extremely soft.
- Remove the sauce pan from the heat and veeeeeeeery carefully add in any fat from the chicken (or other delicious meat) that you were cooking.
- Get out your handy dandy immersion blender. Carefully, so as not to spray yourself with scalding chicken/veggie mixture, blend the concoction until it has a nice thick gravyish consistency.
- Serve immediately and be amazed at what an awesome cook you are. You'll never use flour to thicken your gravy again!

- Heat fat over medium heat in sauce pan. Add onions and cook until onions start to brown. Stir in cauliflower and thyme sprigs.

- Melt the ghee. Once the ghee is completely melted, add in the tapioca flour and whisk vigorously until combined and there are no lumps. Cook for 30 seconds.

- Sauté thinly sliced onions and garlic for about 5-8 minutes, until golden brown and soft. Add a splash of water during cooking if the bottom of the pan gets too dark – like it might start to burn. If the onions burn the flavor of the gravy will be very bitter.
- Add thyme sprigs, cashews and broth to the pan and bring to a boil, scraping up the brown bits from the bottom of the pan. Lower to a simmer and cook for about 12-15 minutes, until liquid has reduced, onions and garlic are very tender, cashews look plump and soft, and thyme is starting to fall apart.

- Slowly pour in the warm stock while whisking constantly. The mixture will become a bit grainy and clumpy. Keep whisking until very smooth.
