This is a recipe for delicious green beans & tomato, cooked the traditional Greek way. Fresh green beans, tomatoes, herbs and spices are simmered together long enough for the tastes to meld. Recipe by Nancy Gaifyllia, she says "This Theban version of a classic Greek recipe is deceptively simple to fix, combining fresh green beans with onions, tomatoes, garlic, and parsley, and delivers a sophisticated taste. It can be served as a main dish, or as a side. " Posted for ZWT 4.

2 lbs fresh green beans or 2 lbs other long string beans
2 cups tomatoes, peeled and finely chopped
2 onions, finely chopped
1 cup olive oil
1 green pepper, thinly sliced
1 bunch fresh parsley, finely chopped
2 -3 garlic cloves, finely chopped
1/4 cup water
sea salt
fresh ground pepper

Steps:

  • Wash the beans, cut off the tips and remove the stringy piece of fiber along the seam. Rinse the beans.
  • In a soup pot, sauté the onions in olive oil with a wooden spoon until they turn translucent.
  • Stir in the garlic and sauté a few minutes more. Add all the remaining ingredients and the water. Stir well, reduce heat, and simmer covered for 50 minutes or until the beans are tender. (Add more water if needed during cooking - boiling water.).
  • Serve warm. On the side, consider tzatziki or feta cheese, and certainly some great country bread.
  • Note: This serves 4 as a main dish, 6-8 as a side. For a more substantial dish, add 4 medium potatoes, peeled and cut into large chunks.

1 1/2 tbsp Olive oil
1 Onion (chopped)
2 Garlic cloves (chopped)
500 g Potatoes (peeled, chopped small)
1 Stock cube (chicken or vegetable)
400 g Tinned tomatoes
Salt & Pepper (to taste)
1 Lemon (juice)
200 g French beans (any type of green beans)
1 Lemon (zest)
Parsley (chopped)
1 Pan (with lid)
1 Spoon
1 Knife
1 Zester/Grater

Steps:

  • In your pan add 1 1/2 tablespoons of olive oil and heat it on a low heat. Add 1 chopped onion and fry for 1 minute until soften. Then in with 2 garlic cloves and cook for another minute on a low heat
  • Add 500g of chopped potatoes give everything a stir and leave everything to cook for 3 minutes
  • Add in your stock cube and mash it all in. Stir it in well so all your potatoes are covered in it
  • Pour in 400g of tinned tomatoes, salt and pepper and the juice of 1 lemon, stir everything well and put a lid on your and simmer for 15 minutes

  • When your potatoes are soft add in 200g green beans, give them a stir, put the lid back on and simmer for 10 minutes
  • After 10 minutes have a check and if your stew is thick add a little water to loosen your sauce. Stir everything again, put the lid back on and simmer for 5 minutes
  • When you plate up grate over some lemon zest and sprinkle over some chopped parsley

Fasolakia are Greek green beans stewed with olive oil and tomato, with a few pieces of potato added for good measure. This is a main dish in Greece, not a side dish, and a prime example of plant-based eating! Good crusty bread is essential for mopping up the sauce and I always need to have a healthy chunk of feta on the side. Serve fasolakia warm or at room temperature for best flavor.

¼ cup olive oil
1 small onion, grated
1 ½ pounds fresh green beans, trimmed
4 tomatoes, pureed
2 yellow potatoes, peeled and cut into wedges
½ teaspoon salt, or to taste
ground black pepper to taste
1 pinch white sugar
water to cover

Steps:

  • Heat olive oil in a large saucepan over medium heat and stir in onion. Cook until onion has softened, about 5 minutes. Add green beans and stir to coat in the oil. Cook, stirring occasionally, 2 to 3 minutes. Add pureed tomato, potatoes, salt, pepper, and sugar. Stir well, then add water until beans are barely covered.
  • Bring to a simmer, partially cover with a lid, and cook gently over medium-low heat until green beans and potatoes are soft, 25 to 30 minutes. Uncover towards the end of cooking to reduce sauce if it is too watery.

This is a Greek green-bean recipe. The fennel seeds in the recipe impart a sort of licorice-like taste, so if you don't like licorice you might want to omit these. I've made it both with and without and it still tastes good, though different, without the seeds. A good side dish to serve with moussaka.

1/4 cup butter
1 lb string bean, trimmed
1 clove garlic, minced
1 teaspoon dried parsley or 1 tablespoon fresh parsley, minced
1 teaspoon fennel seed
1/2 cup tomato sauce
1/4 cup water
1/2 teaspoon salt, to taste
1/2 teaspoon pepper, to taste

Steps:

  • Sauté the onion in butter until golden brown.
  • Add the beans to the onion and sauté, stirring constantly, until the beans turn a bright green.
  • Add the garlic through salt and pepper.
  • Simmer 30 minutes, or until beans are tender.
