CHERRY TOMATOES MARINATED IN VODKA (IN OVERSIZED MARTINI GLASS)
This was a real hit at a Christmas Party I went to last year. Not only was the idea original and the presentation artistic, but everyone loved it! They are served in a large way- oversized novelty martini glass. They are absolutely delicious and reminded me of a bite of Bloody Mary

Steps:
- Cut a shallow cross shape in the top of each tomato, put them in a large bowl and add the garlic (as much or as little as you like), a little salt, Tabasco (optional) and above all vodka.
- Allow the tomatoes to soak up the vodka, stirring occasionally; Let them soak overnight and after 24 hours they can be put in the refrigerator.
- Once you are at the party pour into the large oversized martini glass and serve with a shot glass of Lemon Pepper for dipping and a shot glass with toothpicks.

- Prick the tomatoes all over with a toothpick. Soak the tomatoes in a mixture of the next seven ingredients.
- Chill until ready to eat.
- Serve to your guests on toothpicks and the celery salt for dipping.

- Add 6 of the tomatoes and the basil, lime wheels and hot sauce to a cocktail shaker and muddle. Add ice and 6 ounces of the tomato-infused vodka and shake vigorously. Strain into 2 highball glasses filled with ice. Garnish the glasses with the lime wedges and remaining cherry tomatoes. Enjoy!
- For the tomato infused vodka: To a pitcher, add the tomatoes, vodka and bay leaf. Tightly cover and place in a cool dry place to infuse for at least 1 week. Give it a shake once a day.

Steps:
- After you have cut a small cross in the bottom of each tomato place them side by side, cut side down, in a shallow dish salt the tomatoes, just a little.
- Sprinkle the garlic over the tomatoes.
- Pour in enough vodka so it is well above the cut crosses.
- The longer you leave them the more Vodka they will absorb but leave them at least 24 hours at room temperature, then you can refrigerate them.
- Serve with salt.

- In a large skillet over medium heat, melt better with oil; add onion and saute for 8 minutes or until transparent.
- Add tomatoes and cook for 25 minutes or until almost no liquid remains in skillet; stir frequently.
- Increase heat and add cream, vodka and red pepper flakes; boil for 2 minutes or until thickened to sauce consistency. Season to taste with salt and pepper.
- Bring a large pot of lightly salted water to a boil. Add penne and cook for 8 to 10 minutes or until al dente; drain and transfer to a large bowl.
- Bring sauce to a simmer and pour over pasta; toss to coat. Sprinkle with Parmesan cheese; serve.
