- In a small saucepan, combine 2 cups water with the sugar and thyme; bring to a boil over high heat, stirring occasionally, until sugar has dissolved. Remove from heat; let cool to room temperature.
- Pour mixture through a fine sieve into a large glass measuring cup; discard thyme. You should have 2 cups syrup. Cover with plastic; chill.

PINK VODKA LEMONADE
Steps:
- Combine water, sugar, and fresh thyme sprigs in a medium pot and heat on the stovetop over medium heat. Once the mixture starts to bubble, reduce the heat to low and allow to simmer for 5 minutes. Remove off of the heat, discard the thyme, and place the simple syrup in a container in the refrigerator to cool.
- In a large pitcher, combine fresh lemon juice, cranberry juice, vodka, and cooled simple syrup. Stir to combine.
- Add in club soda and stir gently to combine.
- Serve over ice with a lemon wheel and fresh thyme sprig for garnish, if desired.

- Steep the thyme (optional): Microwave 1/4 cup of water for 1 minute. Add 2 sprigs of thyme and let steep until room temperature, about 30 minutes. Remove and discard sprigs of thyme. Add 1/4 cup superfine sugar to water and stir to dissolve. Stir together sweetened thyme syrup with 1 cup vodka, and 1/2 cup fresh squeezed lemon juice. Spread brown sugar onto a small plate. VODKA AND THYME LEMONADE
Steps:
- Put the water and sugar in a saucepan on the stove over medium-high heat. When it reaches a boil, add the thyme sprigs, then reduce the heat a bit and allow it to simmer to about 5 minutes, or until the sugar is all dissolved in the water and the thyme sprigs wilt a bit. Stir frequently.
- Set aside and let this cool.
- When it has cooled (about an hour or so), you can procede with the rest of the recipe.
- Slice up 1 lemon; set aside.
- Juice the remaining 6 lemons; pour the juice into a large pitcher.
- Add the sugar syrup (and thyme sprigs in it), along with 2 pints / 4 cups / 1 litre of water, and stir.
- To serve, put some ice cubes in a top, a slice of lemon, a glog of vodka (your call how much), and then top up with lemonade.
