Steps:
- 1. Cook potatoes in microwave for 8 minutes. 2. Place onion, carrot, celery and cauliflower in a 2-quart saucepan and cover with water. 3. Bring to a boil. Reduce heat to medium and cook until tender. 4. Set aside 1 heaping cup of cooked vegetables. 5. Place remaining vegetables, bouillon, potatoes, and milk into the Vitamix container and secure lid. 6. Select Variable 1. 7. Turn machine on and slowly increase speed to Variable 10, then to High. 8. Blend for 3 minutes using the tamper to press the ingredients into the blades. Reduce speed to Variable 2 and remove the lid plug. 9. Add reserved vegetables and water through the lid plug opening. 10. Blend an additional 5 seconds. Serve immediately.
SUPER EASY SWEET POTATO OR YAM SOUP
Steps:
- Microwave yam/sweet potato in saran wrap 6-8 minutes each OR bake 350° to 400° (176° to 204°) until soft, about 35-40 min
- Add all ingredients including potato to blender jar (see note)
- For Blendtec: (90oz Wildside Jar) Press the SOUP button
- For Vitamix and other variable speed blenders: (64oz jar) Start on variable Speed 1, turn the machine on and slowly increase to Speed 10/High. Blend for approximately 1.5 minutes.
- Pour into bowls and sprinkle sliced almonds and coriander.

- First, take a moment to dice/slice all of the veggies. Dice the sweet potatoes (I didn't peel them!) into 1-1.5 inch cubes and set aside. Finely dice a white onion and finely mince the garlic.
- Add 1 tbsp of olive oil to a dutch oven. Add in diced onions and a pinch of salt and cook for 2-3 minutes. Add in minced garlic and cook for 1 minute.
- Add in sweet potatoes and then add in spices (turmeric, corinader, cumin, smoked paprika, red pepper flakes) and tomato paste and cook for 30 seconds or so, making sure the spices and tomato paste are coating the veggies.
- Next, add in the lentils and the veggie broth. Add 1/2 tsp salt and a pinch of cracked black pepper, make sure you get the bottom of the pan deglazed with all the bits of flavor
