4 ounces pineapple juice
1/2 ounce blue curacao

Baked Cod Bell Vista image

This is a recipe that I made up for special functions that I catered when I worked in a local hospital. Simple to make.

Number Of Ingredients 7

12 ounces cod fish fillets
1 1/2 tablespoons butter
4 slices tomatoes
2 green pepper slices
6 red onion rings
2 tablespoons dry white wine
salt and pepper

Steps:

  • Pre heat oven to 425 f.
  • Place fillets in a glass baking dish.
  • Bush with melted butter
  • Top with tomato, green pepper, and onion slices.
  • Pour wine in over fish.
  • Season with salt and pepper.
