CUCUMBER AND RADISH SALAD



Cucumber and Radish Salad image

This cool and crunchy cucumber and radish salad complements any spicy dish.

Number Of Ingredients 8

2 cucumbers, peeled
6 radishes, finely julienned
1 scallion, thinly sliced
Red-pepper flakes
4 teaspoons rice-wine vinegar
1 teaspoon sugar
Salt
2 tablespoons coarsely chopped peanuts or cashews

Steps:

  • Quarter cucumbers lengthwise and run a knife under seeds to remove. Slice cucumbers at an angle into 1/2-inch-thick pieces.
  • Toss with radishes, scallion, red-pepper flakes, vinegar, sugar, and salt. Chill until ready to serve.
  • Arrange on each of four salad plates and garnish each salad with chopped nuts.

1 small garlic clove, minced
2 tablespoons fresh lemon juice
2 tablespoons extra-virgin olive oil
Coarse salt and ground pepper
1 cup all-purpose flour
1 1/2 pounds pork cutlets (1/4-inch thick)
2 tablespoons vegetable oil, plus more if needed
3 cups baby arugula
1 head radicchio or endive or a combination, thinly sliced
1/3 cup thinly sliced red onion

Steps:

  • In a small bowl, whisk together garlic, lemon juice, and olive oil and season with salt and pepper; set dressing aside. Place flour in a small bowl. Season pork with salt and pepper and dredge in flour, shaking off excess.
  • In a large skillet, heat vegetable oil over medium-high. When oil is hot, add cutlets, working in batches and adding more oil if necessary (do not overcrowd pan). Cook until cutlets are golden on bottom, 3 minutes. Flip and cook until cooked through, 3 minutes. Transfer cutlets to a large platter.
  • In a large bowl, toss arugula, radicchio, and onion with dressing, then top cutlets with salad.

Pork Milanese with Warm Autumn Salad and Poached Egg image

1 cup all-purpose flour
6 large eggs
1 cup panko bread crumbs
1/2 cup grated Parmesan, plus more for serving
2 boneless pork loin chops, butterflied and gently flattened with the bottom of a saute pan
Kosher salt
1 tablespoon white vinegar
Extra-virgin olive oil
1 small red onion, sliced
Crushed red pepper flakes
1 cup porcini mushrooms, cut into bite-size pieces
1 cup baby arugula
1 radicchio trevisano, julienned
2 tablespoons red wine vinegar

Steps:

  • Preheat the oven to 350 degrees F.
  • Set up a standard breading procedure by putting the flour, 2 eggs beaten with 1 tablespoon water, and panko mixed with 1/4 cup grated Parmesan in separate wide flat containers. Season the pork, generously, with salt on both sides. Using 1 hand for wet ingredients and the other hand for dry ingredients, coat the meat in the flour, then the eggs, and then the bread crumbs, pressing the panko onto the pork to adhere. Set aside until ready to cook.
  • Line a baking sheet with a silpat or parchment paper. Spread a tablespoon of the grated parmesan into a thin circle about 3-inches in diameter to form a frico. Repeat 3 more times. Put the baking sheet into the oven and bake until the cheese is melted and lightly browned, about 10 minutes. Remove the pan from the oven and reduce the heat to 200 degrees F.
  • In a large saucepan over high heat, bring 2 to 3 inches of water to a boil. Add the white vinegar and reduce the heat to bring the water to a bare simmer. Carefully crack the remaining 4 eggs into the water and cook until the whites are set but the yolk is still soft, about 2 to 3 minutes. Remove the eggs with a slotted spoon and place them into a bowl of ice water to stop the cooking. Keep the water on the fire to reheat the eggs when you are ready to serve.
  • In a large skillet over medium heat add olive oil until it is about a 1/2-inch deep. Check the temperature of the oil by dipping the edge of the pork into the oil, if it does not sizzle and bubble STOP and WAIT! Check it again in another minute. If the oil is smoking it is too hot. When the oil is at the proper temperature gently add the meat. Do not crowd the pan or you will end up with greasy pork, it may be necessary to work in batches. When the pork is beautifully golden brown on each side and cooked through, remove from the pan and blot on paper towels. Sprinkle with salt and put them in a warm oven on a sheet pan.
  • In another large skillet over medium-high heat, pour in a thin layer of olive oil. Add the onions and a pinch of red pepper flakes, season with salt, and cook for 3 to 4 minutes. Add the mushrooms, season with salt, and cook until they are soft and wilted, about 3 to 4 minutes. If the pan is looking dry add another few drops of olive oil. Add the arugula, radicchio and red wine vinegar. Toss to combine and add more olive oil if needed. Season with salt, if needed.
  • When you are ready to serve, remove the poached eggs from the ice bath and put them back into the hot water. Arrange a piece of pork in the center of each serving plate and top it with some of the salad. Remove each egg from the hot water and pat dry. Put it on top of the salad and sprinkle with a few red pepper flakes. Carefully remove a frico from the baking sheet and prop it up next to the egg. Sprinkle some extra Parmesan all around and drizzle with some olive oil. You rock!

1 cup panko (Japanese bread crumbs)
1/2 cup finely grated Parmesan
2 large eggs
6 boneless pork loin chops, pounded thin to 1/3 inch-thick (1 1/2 pounds total)
Salt and freshly ground black pepper
1/4 cup plus 3 tablespoons olive oil
6 lemon wedges

Steps:

  • Preheat the oven to 200 degrees F.
  • Coarsely crush the panko into a large shallow bowl. Stir the cheese into the panko. Lightly beat the eggs in another large shallow bowl. Sprinkle the pork generously with salt and pepper. Dip the pork, 1 piece at a time, in the egg, allowing the excess to drip off, then dredge the pork in the crumb mixture, patting to coat completely. Place the pork on a small baking sheet.
  • Heat 1/4 cup of oil in a heavy large skillet over medium-high heat. Add half of the pork to the hot oil and cook until golden brown and just cooked through, about 3 minutes per side. Transfer to paper towels to drain, then transfer them to a clean baking sheet and keep them warm in the oven. Add the remaining 3 tablespoons of oil to the skillet and fry the remaining pork.
  • Transfer the pork to plates and serve with lemon wedges.

1 cup panko bread crumbs
1/4 cup grated pecorino, plus 1/4 cup shaved pecorino
2 boneless pork loin chops, butterflied and gently flattened with the bottom of a saute pan
Kosher salt
Extra-virgin olive oil
1 small red onion, sliced
1 cup oyster mushrooms, cut into bite-size pieces
1/2 cup (1/2-inch) diced Granny Smith apple
1 cup escarole, cut into bite size pieces
1 radicchio trevisano, julienned
2 tablespoons red wine vinegar
1/4 cup toasted green pumpkin seeds

Steps:

  • Preheat oven to 180 degrees F or the lowest it will go.
  • Set up a standard breading procedure by placing the flour, egg, and panko mixed with the grated pecorino in separate wide flat containers. Season the pork generously with salt on both sides. Using 1 hand for wet ingredients and the other hand for dry ingredients coat the meat in the flour, then in the eggs, and then in the bread crumbs, pressing the panko onto the pork to adhere. Set aside until ready to cook.
  • In a large skillet over medium heat, add olive oil until it is about a 1/2-inch deep. These crisp, panko-crusted cutlets are your weeknight answer to tonkatsu or Milanese with a simplified, one-step breading procedure, no eggs or flour required. Thin pork chops, either bone-in or boneless, are seasoned with salt and pepper, then simply pressed into panko bread crumbs before crisping up in a hot, oiled skillet. While any quick-cooking vegetable could be tossed in the brown butter and spooned over the chops, radishes are especially nice for the way they keep their bite even after a trip to the skillet. Whatever you do, don't forget the lemon.

2 bone-in or boneless pork chops (rib or loin), cut 1/2-inch thick (about 6 ounces each)
Kosher salt and black pepper
1 1/2 cups panko or fresh coarse bread crumbs
3 tablespoons canola oil, plus more as needed
4 tablespoons unsalted butter
2 tablespoons capers
1 bunch radishes, with tops on if you like, cut into quarters
Flaky sea salt
1 lemon, cut into wedges

Steps:

  • Season pork with salt and pepper. Place panko in a rimmed baking sheet or baking dish and season it with salt and pepper. Working one at a time, firmly press both sides of each pork chop into the seasoned panko until the chops are evenly and well coated.
  • Heat oil in a large skillet (10 to 12 inches) over medium-high heat; it should evenly coat the bottom of the skillet. If it doesn't, add a bit more oil. Place the pork chops in the skillet and cook until deeply golden brown, like the color of a well-baked croissant, 3 to 4 minutes.
  • Using tongs or a spatula, flip pork and continue to cook until well browned on the other side, too, another 2 to 3 minutes. Transfer pork to a plate, platter or cutting board lined with paper towel and season with salt.
  • Wipe out skillet and return to the stove over medium-high heat. Add butter, letting it sizzle, brown and foam. Add capers and half of the radishes, seasoning them with salt and pepper. Toss a few times, just to wilt the radish greens, if they're still on, and to evenly coat the radishes with the brown butter and capers.
  • Divide pork chops among plates and nestle butter-tossed radishes and capers alongside, plus remaining raw radishes. Sprinkle with a bit of flaky salt and serve with lemon wedges alongside for squeezing over.

3 tablespoons butter
¾ cup white wine vinegar
¼ cup water

4 anchovy fillets, chopped
2 teaspoons softened butter

Steps:

  • Pound pork chops to 1/4 inch thickness. Melt 3 tablespoons of butter in a skillet over medium-high heat and brown pork on both sides, about 2 minutes per side. Drain fat. Pour water, vinegar, salt, and pepper in pan. Bring to a simmer, then reduce heat to medium-low, cover, and cook chops until tender, about 30 minutes.
