1 (250 g) package firm tofu
1 cucumber, chopped into thin strips approx. 2 inch in length
1 red pepper, chopped into thin strips approx. 2 inch in length
80 g mange-touts peas, finely sliced on a diagonal
3 -4 spring onions, finely sliced on a diagonal
150 g bean sprouts, washed
50 g dry roasted peanuts, crushed
1 tablespoon olive oil
1 bunch fresh coriander leaves
2 limes, juice of
1 lemon, juice of
2 small red chilies, finely chopped
5 tablespoons soy sauce
2 tablespoons brown sugar

Steps:

  • Make up the dressing/marinade by mixing all the dressing ingredients together in a bowl.
  • Set aside.
  • Drain the tofu on kitchen paper and cut the block in half and then slice each block through on it's horizontal line leaving 4 "steaks".
  • Place the steaks of tofu in a flat dish and pour over about a ¼ of the marinade leaving for about 20 minutes.
  • Heat the oil in a fry pan over a medium setting and gently place the slices of tofu into the pan.
  • Fry until brown and the edges are starting to crisp up.
  • Remove from the pan and leave to cool.
  • Once cooled slice into ¼ inch strips.
  • In a large bowl mix together the shredded cucumber, red pepper, mange tout, spring onions, bean sprouts, crushed roasted peanuts, sliced marinated tofu and coriander.
  • Pour over the remaining dressing and gently toss to coat all ingredients.
  • Serve.

Don't be daunted by the list of ingredients - the ingredients for the marinade and sauce are largely the same.

500 g / 1 lbs firm tofu (, sliced into 1/4"/0.5cm slices)
2 cloves minced garlic
2 tbsp lime juice ((about 1 fresh lime))
1 tbsp light soy sauce
1 tbsp soy sauce
2 tbsp brown sugar
1 tbsp vegetable oil
1 stalk lemongrass (, white part only, finely chopped)
3 tbsp light soy sauce
1⁄4 cup rice vinegar
2 tbsp white sugar
1⁄2 cup water
2 garlic cloves (, finely chopped)
1 red birdseye chilli (, finely chopped (or adjust quantity to your taste))
3 tbsp lime juice
200 g medium rice stick noodles
2 carrots (, julienned)
1 large cucumber julienned ((with seeds removed))
3 cups shredded lettuce
2 cups bean sprouts
Handful of mint leaves
Handful of cilantro/coriander
Sliced chili ((for garnish - optional))

Steps:

  • Combine tofu and marinade ingredients and set aside for 20 minutes or so to let the flavours develop.
  • Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside.
  • Soak the rice stick noodles in hot water for 6 to 8 minutes (see note 2). The noodles are ready when they are "al dente" - still firm to touch. Rinse the noodles under cold water.
  • Cook the marinaded tofu over high heat on the stovetop, or it is also great done on a BBQ, until caramelised and slightly crispy on each side.
  • To serve - toss together the noodles with the vegetables, place into bowls and top with tofu, then drizzle with sauce.

1 1/2 cups julienned vegetables ((such as carrots, red pepper, and cucumber))
1 bunch fresh cilantro
1 bunch fresh mint
4 ounces vermicelli or rice noodles ((the thinner the better))
8-10 whole spring roll rice papers
1/3 cup salted creamy almond butter
1 Tbsp reduced sodium soy sauce ((tamari if gluten-free))
1-2 Tbsp brown sugar, agave, or honey if not vegan ((depending on preferred sweetness))
1 Tbsp fresh lime juice
1/2 tsp chili garlic sauce
Hot water ((to thin))
8 ounces extra-firm tofu ((drained and thoroughly dried/pressed))
4 Tbsp sesame oil ((divided))
3 Tbsp cornstarch
2 1/2 Tbsp almond butter dipping sauce
1 Tbsp reduced sodium soy sauce ((tamari if gluten-free))
1 Tbsp brown sugar or agave nectar

Steps:

  • Start by preparing rice noodles in boiling hot water for about 10 minutes (read instructions on package), then drain and set aside.
  • Meanwhile, heat a large skillet over medium heat and cut pressed tofu into small rectangles. Toss in 3 Tbsp cornstarch and flash fry in ~3 Tbsp sesame oil (amounts as original recipe is written // adjust if altering batch size), flipping on all sides to ensure even browning - about 5 minutes. Remove from skillet and set aside.
  • Prep veggies and prepare almond butter sauce by adding all sauce ingredients except water to a small mixing bowl and whisk to combine. Add enough hot water to thin until a pourable sauce is achieved. Adjust flavors as needed (I often add a little more chili garlic sauce and brown sugar).
  • To add more flavor to the tofu, transfer ~2.5 Tbsp of the sauce to a small bowl and add an additional Tablespoon each of soy sauce, sesame oil and brown sugar or agave (amounts as original recipe is written // adjust if altering batch size) and whisk to combine.
  • Add tofu back to the skillet over medium heat and add "sauce/glaze," stirring to coat. Cook for several minutes or until all of the sauce is absorbed and the tofu looks glazed, stirring frequently (see photos). Set aside with prepared veggies and vermicelli noodles.
  • To assemble spring rolls, pour very hot water into a shallow dish or skillet and immerse rice paper to soften for about 10-15 seconds.
  • Transfer to a damp cutting board or damp towel and gently spread out edges into a circle. It may take a little practice, so don't feel bad if your first few attempts are a fail!
  • To the bottom third of the wrapper add a small handful of vermicelli noodles and layer carrots, bell peppers, cucumber, fresh herbs and 2-3 pieces of tofu on top (see photo). Gently fold over once, tuck in edges, and continue rolling until seam is sealed.
  • Place seam-side down on a serving platter and cover with damp warm towel to keep fresh. Repeat until all fillings are used up - about 8-10 spring rolls total (amount as original recipe is written // adjust if altering batch size).
  • Serve with almond butter sauce and sriracha or hot sauce of choice. I like to mix mine and go dip happy.
  • Leftovers store well individually wrapped in plastic wrap, though best when fresh.

2 tablespoons freshly grated lemongrass (white part only)
1 clove garlic (grated)
1 to 2 bird's eye chilies (sliced (optional))
2 to 3 dashes Maggi seasoning
1 tablespoon water
8 ounces thin rice noodles (vermicelli-style)
2 carrots (julienned)
1 large bell pepper (orange, yellow, or red, thinly sliced)
1 cup English cucumber half moons
1 cup cilantro stems and leaves (remove tough stem ends if desired)
1 cup Thai basil leaves
1 cup mint leaves
1 cup chopped peanuts
Lime wedges for serving (optional)
1 tablespoon peanut oil
14 ounces firm tofu (sliced into bite-sized rectangles)
2 teaspoons mushroom soy sauce (or low sodium soy-sauce)
1 tablespoon sesame oil
1 tablespoon coconut or date sugar

Steps:

  • Set a large pot of water on the stove to boil for cooking the noodles.
  • While the water is heating, whisk the dressing ingredients together in a small bowl. Set aside to infuse.
  • After the water is boiling, cook the noodles according to package directions; rinse with cold water, drain well, then divide into four serving bowls.
  • Heat one tablespoon of peanut oil in a large skillet set over medium heat. Add the tofu pieces and fry until golden brown, about 5 to 7 minutes on both sides. While the tofu is frying, stir the mushroom soy sauce, sesame oil, and sugar together in a small bowl until the sugar has dissolved.
  • Once the tofu is browned, pour this mixture into the pan. Allow the sauce to cook in the pan for 1 to 2 minutes, until it begins to thicken. 2 teaspoons light brown sugar
2 teaspoons Asian fish sauce
Zest and juice of 1 lime
1/2 jalapeño, seeded and minced
1 garlic clove, minced
4 tablespoons peanut oil
1/2 pound extra-firm tofu, cut into slabs, 3/4 inch thick
6 cups shredded cabbage
1 large carrot, grated
1/3 cup coarsely chopped roasted, salted peanuts, plus more to serve
2 tablespoons chopped cilantro, plus more to serve

Steps:

  • To make vinaigrette, whisk together 2 tablespoons soy sauce, brown sugar, 1 1/2 teaspoons fish sauce, lime zest and juice, jalapeño and garlic. Whisk in 3 tablespoons peanut oil.
  • Pat the tofu dry with paper towels. Heat the remaining 1 tablespoon peanut oil in a large skillet, preferably nonstick. When it shimmers, add the tofu. Cook 3 minutes without moving, until golden brown on the bottom. Flip and cook 2 minutes more. Transfer to a paper towel-lined plate. In a small bowl, whisk together the remaining 1 1/2 tablespoons soy sauce and 1/2 teaspoon fish sauce. Move the tofu to a cutting board, and brush both sides of each slice generously with this mixture. Cut tofu into bite-size pieces.
  • In a large bowl, toss together tofu, cabbage, carrot, peanuts, cilantro and vinaigrette. Garnish with more peanuts and cilantro.

1 tablespoon vegetable oil
2 tablespoons chopped garlic
1 (14 ounce) package tofu, drained and cubed
½ cup peanuts
2 tablespoons soy sauce
2 large cucumbers, peeled and thinly sliced
½ cup Vietnamese sweet chili sauce
¼ cup lime juice
1 bunch chopped cilantro leaves

Steps:

  • Heat the vegetable oil over medium heat in a large frying pan. Cook the garlic until fragrant, about 30 seconds. Gently stir in the tofu and peanuts; cook until the tofu has lightly browned.   • Cut white part of lemon grass stalks into small pieces and place into a food processor (or blender) and pulse. Add salt, sugar, shallot, and Chinese Five Star spice (available in larger grocery stores or Asian specialty stores) and continue to pulse into a thick “paste” like consistency. Place paste into a large bowl and add oil. Stir until fully combined. Cut tofu into long strips. Rub marinade paste on all sides of the tofu and let sit in bowl for 30 min.
  • While tofu is marinating, cook vermicelli noodles according to package directions. Rinse and drain when fully cooked. Cut red pepper into thin strips. Cut cucumber in halves and then slice into bite size pieces (forming half moons). Cut carrot(s) into strips (or julienne slices) . Set aside.
  • Heat grill pan or grill to medium. Cook marinated tofu until grill marks are visible and tofu is cooked through ( approx. 4-5 min. each side) . Let cool and slice into bite size pieces.
  • While the tofu is cooking, combine all dressing ingredients in a small bowl and stir until sugar is completely dissolved. Set aside.

  • Start by draining the tofu for at least 2 hours. The best way to do that is to put it on an upside down breakfast bowl and put a tray/ large plate underneath to catch draining liquid. Wrap the tofu in a kitchen roll, place it on the top of the breakfast bowl and put something heavy on top of the tofu, like a tin of coconut milk. Every 30 mins or so, swap wet kitchen towel for a new one.

  • Once you have drained your tofu, cut in into equal size cubes and place it in the marinade for another hour or so (the longer it marinates the better). Do not throw the marinade afterwards as it doubles up as a salad dressing. Once you transfer the tofu to a baking tray, mix in 1 tbsp of sesame oil to the marinade/dressing liquid.
  • Set the oven to 180 º C / 360 º F. Place marinated tofu cubes on a paper-lined baking tray and bake for 25 mins, flipping the cubes once with a pair of tongs 15 mins in.

  • Remove the tough, outer layer of each lemongrass stalk and discard. Bash the stalks with a rolling pin until crushed then cut approx. 10 cm / 4 inches off the bottom of each lemongrass stalk - keep the tops to infuse the sauce with more flavour. Chop the bottoms very finely and set aside.
  • Heat up 2 tablespoons of oil in a large frying pan. Once hot, add chopped shallots and fry them off gently until translucent.
  • Next add in finely chopped lemongrass, garlic, chilli and ginger. Fry on a low heat, stirring frequently, until softened and fragrant.
