VIETNAMESE-STYLE FRIED RICE

Vietnamese-Style Fried Rice image

What's the difference between Chinese and Vietnamese fried rice? Vietnamese fried rice has milder flavors because it uses different seasonings.

Provided by Connie Veneracion

Categories     Entree     Side Dish

Time 27m

Number Of Ingredients 13

2 tablespoons peanut oil
2 eggs (beaten with a drizzle of fish sauce)
1 stalk lemongrass (white portion only) (finely chopped)
2 cloves garlic (minced)
2 shallots (finely chopped)
1/4 cup carrot (chopped)
1/4 cup sweet peas (if using frozen, thaw completely)
1 lap cheong (thinly sliced)
1/2 cup barbecued pork (thin strips)
3 cups rice (cold cooked jasmine or other long-grain rice - not newly-cooked rice -rubbed to separate the grains)
Dash fish sauce (to taste)
1/2 tablespoon lime juice (juice of a quarter of lime)
1/2 cup cilantro (or lemon basil or mint, to garnish)

Steps:

  • Gather the ingredients.
  • Heat the peanut oil in a wok or frying pan over medium-high heat.
  • Pour in the beaten eggs. Cook, swirling often to form a flat egg pancake, just until set, about 1 1/2 minutes.
  • Scoop out egg pancake and transfer to a cutting board.
  • Over medium heat, saute the lemongrass, garlic, and shallots until softened and aromatic.
  • Turn up the heat, add the chopped carrot and sweet peas, and stir fry for half a minute.
  • Add the sliced lap cheong and the barbecued pork. Stir fry for about a minute.
  • Add the rice. Drizzle in the fish sauce. Stir fry until the rice is heated through. Turn off the heat.
  • Roll up the egg like a cigar and cut into thin slices.
  • Add egg slices to the rice. Toss. Add the lime juice and toss a few more times.
  • Serve hot, garnished with cilantro, lemon basil, or mint, or all three.

Time 2h55m

Yield 6

Number Of Ingredients 19

¼ cup olive oil
4 cloves garlic, minced
1 (1 inch) piece fresh ginger root, minced
¼ cup fish sauce
¼ cup reduced-sodium soy sauce
1 dash sesame oil
2 pounds sirloin tip, thinly sliced
1 tablespoon vegetable oil
2 cloves garlic, minced
3 green onions, cut into 2 inch pieces
1 large onion, thinly sliced
2 cups frozen whole green beans, partially thawed
½ cup reduced-sodium beef broth
2 tablespoons lime juice
1 tablespoon chopped fresh Thai basil
1 tablespoon chopped fresh mint
1 pinch red pepper flakes, or to taste
½ teaspoon ground black pepper
¼ cup chopped fresh cilantro

Steps:

  • Whisk together the olive oil, 4 cloves of garlic, ginger, fish sauce, soy sauce, and sesame oil in a bowl, and pour into a resealable plastic bag. Add the beef sirloin tip, coat with the marinade, squeeze out excess air, and seal the bag. Marinate in the refrigerator for 2 hours. Remove the beef sirloin tip from the marinade, and shake off excess. Discard the remaining marinade.

Reduce heat to medium, adding more vegetable oil to the skillet if needed. Stir in 2 cloves of garlic, green onion, and onion; cook and stir until the onion has softened and turned translucent, about 5 minutes. Stir in green beans, beef broth, lime juice, basil, mint, red pepper flakes and pepper. Return beef sirloin to skillet and toss to combine. Remove from heat and toss in cilantro.

VIETNAMESE FRIED RICE (COM CHIEN)

Vietnamese Fried Rice (Com Chien) image

A delightfully flavorful and easy-to-prepare meal, Vietnamese fried rice calls for simple ingredients and can be ready to eat in less than 30 minutes. Serves four as a main and six as a side.

Provided by Marissa @ OMGfood

Categories     Main Dish     Side Dish

Time 24m

Number Of Ingredients 13

2 tablespoons neutral cooking oil (divided)
8-10 medium-sized shrimp (150 grams) (peeled, deveined, tail removed, and chopped)
1 small yellow or sweet onion (110 grams) (chopped )
3 Chinese sausages (lap cheong) (diced)
3-4 garlic cloves (minced)
2 cups (300 grams) frozen mixed vegetables (defrosted and drained is best, but frozen will work)
1/2 teaspoon sea salt
1/2 tablespoon granulated sugar
1/2 tablespoon chicken powder
1/2 tablespoon white pepper
6 cups cooked white rice (850 grams) (see notes*)
4 eggs
1-2 teaspoons fish sauce (optional, but recommended!)

Steps:

  • Heat a wok over medium-high heat and add in one tablespoon of oil.
  • Add shrimp, stirring one to three minutes or until cooked through. Remove from wok and set aside. Increase heat to high.
  • Add onion and cook for one minute.
  • Add sausage. Cook and stir for three minutes.
  • Add garlic and cook for one minute.
  • Add veggies and cook for two minutes (if still frozen, three to four minutes to cook off excess water)
  • Add the rice and mix with the veggies. Continue mixing until rice is broken down with no lumps.
  • Add shrimp back in and season with salt, sugar, chicken powder, and white pepper. Mix together well.
  • Push rice to the side and add in the remaining tablespoon of oil. Add the eggs. Stir them until they're half cooked (they should still be mostly liquid with bits of cooked egg), then quickly stir in the rest of the food. Continue to stir for a minute, the egg will continue to cook as it's coating the rice mixture.
  • Remove from heat and stir in the fish sauce, if using. Taste and add extra seasoning if necessary.
  • Enjoy!

VIETNAMESE-STYLE SPICY FRIED RICE

Vietnamese-Style Spicy Fried Rice image

Spicy and flavorful, this easy dish provides a delicious change from Nasi Goreng or Chinese Fried Rice. Try to use Vietnamese fish sauce (Nuoc Mam), which is more pungent than other Southeast Asian fish sauces. Preparation time does not include the time needed to dry the rice overnight.

Provided by Daydream

Categories     Long Grain Rice

Time 40m

Yield 4-6 serving(s)

Number Of Ingredients 12

4 cups cooked long-grain rice (1 1/3 cups raw)
1/2 cup dried shrimp
4 teaspoons peanut oil
1 large onion, sliced
2 cloves garlic, crushed
1/4 cup unsalted dry roasted peanuts
4 teaspoons finely chopped fresh lemongrass
2 teaspoons ground turmeric
1 small fresh red chili pepper, finely chopped
4 teaspoons vietnamese fish sauce
4 teaspoons chopped fresh cilantro
1/2 teaspoon ground black pepper

Steps:

  • Allow the rice to completely dry out before beginning this dish.
  • The easiest way to do this is to spread the rice evenly in a shallow dish, or on a tray, and leave uncovered in the refrigerator overnight.
  • The next day, place the shrimp in a heatproof bowl, cover with boiling water and allow to stand 30 minutes, or until soft, before draining.
  • In a large wok, heat the groundnut oil and stir-fry the onion, garlic, peanuts, lemon grass and turmeric, until fragrant.
  • Add the rice, shrimp and all the remaining ingredients and stir-fry until piping hot.
  • Serve immediately.

SPICY TUNA FRIED RICE

Spicy Tuna Fried Rice image

Canned tuna doesn't just have to be destined for soggy salads or bland sandwiches. Here's how to turn this humble pantry staple into a spicy, stomach-pleasing bowl of ultimate fried rice.

Provided by Bee

Yield 4

Number Of Ingredients 13

3 tbsp vegetable oil
2 eggs, lightly whisked
3 garlic cloves
2 large mild red chillies
2 spicy birds' eye chillies (or to taste)
1 small onion, diced
150g (5 oz) tin of tuna, drained
3 cups cooked long-grain rice (day old is best - click here to see my recipe for how to cook rice for fried rice)
lime wedges to serve
Seasoning sauce:
¼ cup oyster sauce
1 tbsp fish sauce
1 tsp sugar

Steps:

  • 1.Heat 1 tablespoons of the oil in a wok or non-stick frying pan over high heat. Add the eggs and allow to set for a minute. When the underside is golden, flip the omelette over and cook for another 1-2 minutes. Transfer the omelette to a plate and roughly chop. Set aside for later.
  • 2.Use a mortar and pestle to pound the garlic and chillies to a rough paste (remove the garlic skins as you pound).
  • 3.In a small bowl combine the ingredients for the seasoning sauce.
  • 4.Heat the remaining 2 tablespoons of oil in a wok or large frying pan over high heat. Add the garlic chilli paste and stir-fry for half a minute. Add the onion and stir-fry for another half a minute or until the onion has just softened. Now add in the tuna and toss until well combined. Add the rice and the seasoning sauce and toss until the rice is evenly coated in the sauce. Gently toss through the egg omelette. Remove from heat and serve with lime wedges.

Cook, stirring with a spoon to break up sausage, until slightly browned and fragrant, about 2 minutes. Add bell pepper, celery, tomato, fish sauce, basil, thyme, oregano, and cumin. Cook, stirring often, 3 minutes. Add chicken broth; bring to a boil over high.
  • Reduce heat to medium-low; simmer, undisturbed, 20 minutes.
