My quick home version of one of my favorite recipes. Serve with jasmine rice.

1 tablespoon vegetable oil
1 cup white sugar
2 pounds pork spareribs, cut into 1-inch pieces
2 green onions, cut in 2-inch lengths
1 green chile pepper, chopped
1 teaspoon ground black pepper
2 shallots, finely chopped
2 cloves garlic, minced
salt to taste
1 teaspoon Asian (toasted) sesame oil
1 tablespoon green onion, thinly sliced and separated into rings

Steps:

  • Place a large heavy skillet or wok over high heat, drizzle the oil into the pan, and pour the sugar over the oil. Cook and stir constantly until the sugar dissolves and turns a light brown color. Be careful, the melted sugar is very hot. Stir in the pork, 2 green onions, chile pepper, black pepper, shallots, garlic, and salt, and toss them in the caramelized sugar until the pork turns golden brown. Drizzle the sesame oil over the pork and vegetables, reduce the heat to low, and let simmer to reduce the juices.
  • When the juices have been mostly absorbed, turn the heat back up to high, and cook and stir the pork and vegetables until the sauce has thickened and coated the pork, about 5 minutes. Sprinkle with 1 tablespoon of green onion rings.

These bite-sized short ribs are sweet, sticky and tangy - all kinds of crazy good! The perfect size to serve up at a party, they'll fly off the table in an instant. You can still use a longer rib if needed, but you won't get quite as much of a result as the shorter style.

1kg short spare ribs, cut into individual ribs
1 tbsp vegetable oil
3 tbsp brown sugar
2 tbsp soy sauce
1 tbsp dark soy sauce
3 tbsp white vinegar
2 tbsp Chinese Shaoxing wine
¼ cup water
2 slices fresh ginger
2 spring onions (scallions), pale part only
2 garlic cloves, lightly bruised
2 tbsp finely sliced spring onions (scallions), green part only

Steps:

  • Step 1.Place the spare ribs in a pot of room temperature water. Bring to a simmer over high heat. Skim the surface of the water and simmer for a further 2-3 minutes. Use a slotted spoon to transfer the ribs to a large bowl. Rinse with clean water and then transfer the ribs to a clean bowl.
  • Step 2.Heat the vegetable oil in a wok or deep pan over medium-high heat. Add the sugar and allow it to cook and melt for about 2 minutes (take care it doesn't burn). Add the ribs and cook, stirring, for 2-3 minutes or until the sugar and heat starts to colour the ribs and the liquid is thick in the bottom of the pan.
  • Step 3.Now add the soy sauce, dark soy sauce, vinegar, Shaoxing wine, water, ginger, spring onions (pale part) and the garlic. Mix to combine. Cover with a lid and reduce the heat to medium-low. Simmer gently for 25 minutes, stirring once or twice.
  • Step 4.Remove the lid and turn the heat up a little higher. Cook and stir the ribs in the liquid for 10-15 minutes or until the sauce 'sticks' to the ribs and the oil starts to separate in the bottom of the pan. Use tongs to transfer the ribs to a plate. Sprinkle with sesame seeds and the green part of the spring onion. Serve warm.

GRILLED VIETNAMESE LEMONGRASS PORK RIBS



Grilled Vietnamese lemongrass pork ribs image

These grilled Vietnamese lemongrass pork ribs are succulent, tender, and rich in umami flavor.

3 pounds extra tender pork back ribs
1/2 cup fish sauce
1/2 cup granulated sugar
1/2 cup hot water
1 tbsp sesame oil
1 tsp freshly ground pepper
6 stalks of fresh lemongrass
2 banana shallots, coarsely chopped
1 bunch of scallions, green and white parts, coarsely chopped

Steps:

  • In a mixing bowl, whisk the hot water, fish sauce, sugar, and oil together.
  • To make the marinade, trim the lemongrass stalks, leaving about 6 inches from the bottom. Peel the outer leaves and use only the tender bulb. Slice them into rings first then use a very sharp knife to finely mince.
  • Chop the shallots and scallions coarsely.
  • Add the lemongrass, shallots, scallion, and pepper to the liquid mixture and whisk to combine.
  • Place the slab of ribs with the meat side facing the bottom of a baking pan and pour the marinade over it. Cover and let it marinade overnight or at least 8 hours in the refrigerator.
  • When ready to grill, remove the slab from the fridge while you prepare the grill. Set up the charcoal grill by placing coals on one side and lighting them. Rake the coals to create a flat even bed to create an even steady heat zone.
  • Once the coals have burned down to about 375 degrees F, place the meat over the coals to sear for a minute on each side.
  • Move the meat to the opposite side lined with heavy duty foil and cook for about 90-100 minutes, basting every now and then with the marinade and flipping it.
  • Let the ribs rest for 15 minutes before slicing between each ribs. Serve immediately with jasmine rice and your favorite vegetables.

VIETNAMESE SPARERIBS WITH CHILE AND LEMONGRASS



Vietnamese Spareribs with Chile and Lemongrass image

Like other Vietnamese restaurants, Nam Phuong in Atlanta serves pho, but their ribs are the best thing on the menu. The meat is tender with a crackly exterior. Nam Phuong uses flanken or crosscut ribs, which are like little rib nuggets, each with a bone inside. You can order different sauces, but my favorite is the chile and lemongrass. To bring you those flavors and textures, I steam-bake the ribs until tender and then broil and baste them with a puree of lemongrass, chiles, soy sauce, fish sauce, garlic, and sugar. 3-1/2 lb. Asian-style (flanken) pork spareribs, about 36 pieces (see tip)
2 tsp. kosher salt
10 cloves garlic, peeled, about 1/4 cup
1 stalk lemongrass, sliced, about 1/4 cup
3 Thai bird chiles
1/4 red onion, stem and root ends trimmed, cut into chunks
2 Tbs. sugar
2-inch piece fresh ginger, peeled and chopped, about 2 Tbs.
1 Tbs. fish sauce
1 Tbs. soy sauce
1 lime
1/4 cup chopped fresh cilantro leaves

Steps:

  • Heat the oven to 325°F.
  • Season the ribs lightly with 1 tsp. of the salt and place on a broiler pan fitted with the broiling rack or a baking sheet fitted with a cooling rack. Add a 1/4-inch depth of boiling water to the pan, wrap the ribs and pan tightly with foil, and cook until the ribs are pull-apart tender, 1-1/2 to 2 hours. Basically, you're steaming the ribs.
  • In the bowl of a food processor fitted with the metal blade, combine the garlic, lemongrass, chiles, and onions and process for 30 seconds, until well chopped. Add the sugar, ginger, fish sauce, soy sauce, and the remaining 1 tsp. salt and continue processing to a coarse paste, scraping down the sides of the food processor a couple times.
  • Adjust the rack in the oven to the highest setting and preheat the broiler. Arrange the ribs, meat side up, on the rack and smear with some of the garlic paste. Broil the ribs until nicely caramelized, about 5 minutes. Watch carefully and when they start getting a little char on the tips, remove and flip them. Smear again with some of the paste and broil on the bone side for about 3 minutes. Flip, smear, and broil one final time so they are nice and crispy on the meat side, about 2 more minutes.
  • Using tongs, transfer the ribs to a cutting board and cut into single-bone pieces. Squeeze the lime into the pan drippings and stir to combine. Toss the ribs in the pan drippings and serve sprinkled with the cilantro.

God help me! I can eat these forever. The flavors are so intense and just a blast to savor!! We eat this with jasmine rice, and steamed broccoli seasoned with black pepper. The key to this recipe is the sweet and sour sauce, it is completely different than the traditional Chinese kind, not too sweet, definitely not syrupy and is pungent, sour, sweet and just a lot of fun. When this sauce gets mixed in with the rice...oh my!

1 1/2 lbs pork spareribs, the little ones
2 scallions, finely sliced
2 tablespoons sesame seeds (optional because I have been out of these and they are scrumptious without them too)
1/2 teaspoon salt
3 tablespoons fish sauce
2 tablespoons honey
1 teaspoon flour
1 teaspoon sugar
2 garlic cloves, finely minced
3 tablespoons sugar
2 tablespoons lime juice or 2 tablespoons lemon juice
1/2 cup warm water
3 tablespoons fish sauce
1/2 teaspoon ground red chili pepper

Steps:

  • In large bowl, mix scallions, sesame seeds, salt, fish sauce, honey, flour and sugar. Marinate in mixture overnight -- or for 24 hours, it makes a difference! You can marinate for 15 minutes, but I noticed the flavors are amazing when marinated for longer.
  • Preheat oven at 350°F
  • Bake spareribs for 20 minutes, turning occasionally. Turn oven to broil and broil ribs for 5 minutes, turning frequently. Serve with sweet and sour sauce. The fish sauce will smell kinda strong and weird while cooking -- don't worry it doesn't taste that way.
  • Sweet and sour sauce:.
  • In bowl, mix garlic, sugar, citrus juice, water and fish sauce until the sugar is dissolved. Stir in chili pepper.
