Steps:
- Blitz the garlic and shallots until fine.
- Add the mince into the food processor with the blitzed garlic and shallots and season with the chicken bouillon powder, salt, sugar, fish sauce and pepper.
- Blitz for 30 seconds or until it forms a paste. Take the paste out and put it in the freezer.
- Finely chop the pork fat.
- Combine 1 tsp sugar with the water and bring to a boil.
- Add the pork fat in and cook for 1 minute, then drain. Mix the pork fat with 1 tsp sugar until the sugar has dissolved.
- Heat up a saucepan on low heat and pour 4 tbsp oil in along with the annatto seeds. Cook for 3 miutes or until the oil has turned red, then drain and leave aside for later.Note: If you prefer a redder Nem Nướng, use more annatto seeds and oil.
- In the food processor, add the frozen mince along with the chicken bouillon powder, 1 tsp sugar, fish sauce, baking soda, potato starch and crushed ice cubes. Blitz for 1 minute or until it resembles a smooth paste.
- Add the first batch of blitzed mince in with the annatto seed oil and blitz for 2 minutes or until well combined, then transfer into a large mixing bowl.
- Combine the mixed paste with the pork fat.
- Make the glaze by mixing together the oil, honey, fish sauce and water. Set aside for later.
- Grab a small handful of Nem Nướng paste and squeeze it around a skewer until it is smooth and has covered 3/4 of its length from the tip down. Try to make them roughly 1 1/2 cm (0.6") thick, otherwise the center will take too long to cook.Tip: Use gloves lightly coated with oil so the mixture doesn't stick to your hands.
- If you're oven grilling the skewers, spread them out on an oven-safe tray lined with foil.
- Cook them on a grill, oven or an oiled pan for 10 minutes, then brush the glaze over them and cook for another 2 minutes or until completely cooked. Make sure to rotate each skewer for an even grill.
- Serve immediately as is with fresh salad and a Vietnamese dipping sauce!

- Slice the uncooked pork thinly, about 1/8". It helps to slightly freeze it beforehand.
- Mince garlic and shallots. Mix in a bowl with sugar, fish sauce, thick soy sauce, pepper, and oil until sugar dissolves.
- Marinate the meat for 1 hour, or overnight for better results.
- Bake the pork at 375 F for 10-15 minutes or until about 80% cooked. Finish cooking by broiling in the oven until a nice golden brown color develops, flipping the pieces midway. Don't take your eyes off the broiler!
- Assemble your bowl with veggies, noodles, and garnish. Many like to mix the whole bowl up and pour the fish sauce on top, but I like to make individual bites and sauce it slowly.

- Combine pork belly, 1 red chile pepper, lemongrass, 3 tablespoons fish sauce, 3 cloves garlic, 1 teaspoon MSG, 1 teaspoon white sugar, and five-spice powder in a bowl. Cover with plastic wrap and refrigerate until marinated, 1 to 3 hours.

- In a large mixing bowl, combine the honey, hoisin sauce, fish sauce, garlic, spring onions, oyster sauce, salt and pepper, mixing well.
- Add the pork, coating the slices well. Cover and marinate for 1 hour.

- Preheat the oven to broil. Line a baking sheet with aluminum foil.
- In the bowl of a food processor, chop the pork, garlic, rice vinegar, lime zest, green onion and fish sauce. Season with salt and pepper. Shape into 10-cm (4-inch) long sausages and thread onto the skewers. Place on the baking sheet and bake in middle of the oven for about 15 minutes, turning the skewers halfway through the cooking. Once cooked, remove the skewers.
- Sauce: In a saucepan, bring all the ingredients to a boil. Serve at room temperature.
- When serving, place on the table: skewers, sauce, noodles, herbs and the detached lettuce leaves. Each person makes his own dish by placing some noodles, sausage and herbs on a lettuce leaf. Roll, dip into the sauce and enjoy.

My Vietnamese pork skewers are made with fresh ingredients, a bright flavor combination from the fresh and pickled vegetables, and a zesty marinade on the pork belly. Serve with rice noodles and lots of spring roll dipping sauce for a perfect dinner.

- In a medium bowl, combine shallots, garlic, and lemongrass. Stir in fish sauce, sugar, 3 tablespoons sunflower oil, and pepper.
- Pat meat dry with paper towels, remove the layer of fat and cut meat into 1/2-inch thick (12-mm) slices. Add pork to the marinade and refrigerate for at least 3 hours or up to overnight.
- Thread marinated pork onto four skewers, leaving some space between each slice.
- In a skillet over medium heat, heat some sunflower oil and cook pork until it reaches an internal temperature of 145°F (63°C), about 30 minutes, turning every 5 minutes. Alternatively, cook them directly on a grill, over medium heat for 15 to 20 minutes.
- While the pork is cooking, fill a large saucepan with 4 1/4 cups cold water. Add noodles, a pinch of salt, and bring to a boil. Cook according to package directions. Turn off heat, cover, and let stand for 5 minutes. Drain in a colander, then rinse in cold water.
- Serve skewers with noodles, lettuce, tia to, mint, cucumbers, pickled carrots, pickled onions, cilantro, and spring roll dipping sauce.
