GRILLED VIETNAMESE CHICKEN

Grilled Vietnamese Chicken image

I love this Grilled Vietnamese Chicken in Pho, on rice or in salads. The marinade permeates the chicken to make it succulent and delicious.

Provided by Cheryl

Categories     Main Course

Time 44m

Number Of Ingredients 11

1 pound boneless skinless chicken thighs ((or breasts))
garnish (optional) - 2-3 green onions
1 1/2 tablespoon lime juice ((about 1 small lime))
1 1/2 tablespoon neutral or vegetable oil ((vegetable, canola, olive oil-but not extra virgin))
2 tablespoon soy sauce ((low sodium is fine))
1/2 tablespoon Fish sauce (Note 1)
2 tablespoon brown sugar
2 teaspoon minced garlic ((2 garlic cloves))
1 teaspoon fresh grated ginger - or more if you like ((or pinch of ground ginger))
1/4 teaspoon red chili flakes ((medium to medium-mild heat))
1 tablespoon cilantro ((and more for garnish if desired))

Steps:

  • PREPARE CHICKEN: Trim larger pieces of fat from chicken (don't worry about smaller ones - they'll burn off). Pound chicken to even thickness for even cooking. I use the bottom of a pot or heal of my hand.
  • MARINATE CHICKEN: Place all marinade ingredients in a ziploc bag or sealed container. Mix or squish bag to combine well. Add chicken, Seal bag/container and marinate at room temperature for 30 minutes or overnight in fridge.
  • HEAT GRILL to medium-high. Oil grill with paper towel or spray.
  • GRILL CHICKEN AND SERVE: Remove chicken from marinade (reserve marinade for sauce if desired Note 2). If using low salt soy sauce, lightly sprinkle chicken with salt. Grill chicken for 3-5 minutes per side, depending on thickness of chicken. Instant thermometer should read 160F. Add green onions for last 2-3 minutes if using. Transfer chicken to plate. Cover loosely with foil and let rest 5 minutes. Garnish with green onions and chopped fresh cilantro if desired. Note 3 to bake.

GRILLED VIETNAMESE CHICKEN

Grilled Vietnamese Chicken image

This chicken is just full of flavor. Scoring the breast or thigh before marinating allows the marinade to penetrate the meat better and faster. I found this recipe in Cooking Pleasures Magazine and we just loved it. Another plus is a short marinading time that does not compromise the flavor at all. Longer would only make it better.

Categories     Lunch/Snacks

Time 30m

Yield 4 serving(s)

Number Of Ingredients 7

3 garlic cloves, minced
2 tablespoons fish sauce
2 tablespoons molasses
2 tablespoons lemon juice
1 tablespoon dark sesame oil
2 teaspoons black pepper (I use red pepper flakes and it was VERY good)
4 boneless skinless chicken breasts (thighs would work well too)

Steps:

  • Heat grill.
  • Place all the ingredients except the chicken in a shallow glass baking dish and stir them together.
  • Make shallow slits across the chicken breast, going a little deeper in the thick end.
  • Make shallow slits long ways, resulting in a slight diamond pattern in the meat.
  • Put the chicken in the marinade and make sure some gets in the slits.
  • This only needs to marinade for 10 or 15 minutes to pick up the flavor, I believe this is because of the slits.
  • Place on grill and cook for 8 to 10 minutes, until no longer pink.
  • Turn once during cooking.

RECIPETIN EATS' VIETNAMESE CHICKEN

RecipeTin Eats' Vietnamese chicken image

The beauty of this marinade is its versatility and the incredible flavour you can achieve with relatively few ingredients. Use it for chicken, pork, beef, tofu, fish or seafood. For authentic flavour, barbecue it if you can. And if you want to feel really smug, keep a stash of marinated meat in the freezer ready to thaw, then cook on demand.

Time 30m

Yield SERVES 4

Number Of Ingredients 17

700g boneless, skinless chicken thigh fillets
1 tbsp vegetable oil, for cooking
Vietnamese marinade
1 lemongrass stalk, white part only, bruised then sliced diagonally 0.5cm thick
3 tbsp lime juice
3 tbsp fish sauce
1½ tbsp soy sauce, light or all-purpose
1 tbsp vegetable oil
3 tbsp brown sugar
2 large garlic cloves, minced
1-2 bird's eye chillies, deseeded and finely chopped
To serve (optional)
red chilli, deseeded and sliced
coriander leaves
lime wedges
Vietnamese coleslaw (recipe here)
Vietnamese red rice (see note)

Steps:

  • 1. Mix marinade ingredients in a bowl. Add chicken, turn to coat. Marinate for a minimum of 3 hours, preferably overnight. 2. Heat oil in a skillet or frypan over medium-high heat. Cook chicken for 3 minutes on each side or until deep golden brown. If they darken too quickly, reduce heat. Alternatively, barbecue the chicken over medium heat for 4 minutes on each side. 3. Transfer to a plate, loosely cover with foil and rest for 5 minutes before serving. 4. Serve with fresh lime, chilli, coriander, a side of Vietnamese red rice (see below) and Vietnamese coleslaw. Alternatively, make Vietnamese noodle bowls (bun ga nuong). Serving suggestions: Vietnamese red rice This traditional Vietnamese side dish is essentially a tomato fried rice! Melt 25 grams of butter in a large skillet or wok over medium-high heat. Saute 1 minced garlic clove for 15 seconds, then add 3 cups of cooked, day old white rice, 1½ tablespoons tomato paste and 2 teaspoons Maggie seasoning (the Maggie seasoning can be substituted with half a teaspoon chicken stock powder and one teaspoon soy sauce). Vietnamese chicken noodle bowls (bun ga nuong) Serve this chicken on a bowl of rice vermicelli noodles topped with bean sprouts, julienned carrots, a generous handful of Vietnamese mint and coriander. Douse generously with nuoc cham dressing.

VIETNAMESE NOODLES WITH LEMONGRASS CHICKEN

Vietnamese Noodles with Lemongrass Chicken image

Recipe video above. This Vietnamese lemongrass marinade is exceptional - you'll absolutely love it! This is one of my siganture recipes - it's as delicious as it is healthy, ideal for making ahead, for midweek meals and a cheap (impressive) meal idea for large groups. DON'T BE DAUNTED by the list of ingredients - the ingredients for the marinade and sauce are largely the same!

Provided by Nagi

Categories     Noodles

Time 30m

Number Of Ingredients 25

600 - 800g / 1.2 - 1.6lb chicken thigh fillets (, skinless and boneless or breast (or pork, beef or any seafood))
1 stalk lemongrass (, white part only, bruised them sliced into pieces easy to pick out later (Note 1))
2 garlic cloves (, finely chopped or minced)
2 tbsp lime juice
2 tbsp fish sauce ((Note 2))
1 tbsp soy sauce ((all purpose or light, NOT dark soy))
2 tbsp brown sugar
1 tbsp vegetable oil
1/4 cup fish sauce ((Note 3))
4 tbsp rice vinegar
2 tbsp white sugar
1/2 cup water
2 garlic cloves (, finely chopped)
1 red birds eye chilli (, finely chopped (Note 4))
3 tbsp lime juice
1/2 tbsp oil
200 g / 7 oz vermicelli noodles (, dried)
2 carrots (, julienned)
2 cucumbers (, julienned (optional: remove seeds))
5 cups iceberg lettuce (, finely sliced)
3 cups bean sprouts
Handful of mint leaves
Handful of cilantro/coriander
Sliced red chilli ((for garnish - optional))
Lime wedges ((to serve - optional but recommended))

Steps:

  • Combine Chicken and Marinade ingredients and set aside for at least 1 hour, up to 24 hours. (Note 4)
  • Heat 1/2 tbsp oil in a fry pan over medium heat (or heat the BBQ). Remove chicken from marinade, shaking off large bits of lemongrass (small bits should fall off during cooking).
  • Place chicken in the pan and cook each side until dark golden brown and chicken is just cooked through - about 6 to 8 minutes in total.
  • Remove from pan, shaking off any remaining bits of visible lemongrass and set aside to rest for 5 minutes. Then slice into thin pieces.
  • Combine the Nuoc Cham ingredients and mix well to dissolve the sugar. Adjust to your taste (spiciness, lime, sweetness) and set aside for at least 20 minutes.
  • Soak the vermicelli noodles in hot water for 3 minutes (or according to packet instructions), then drain and rinse under cold water to stop the noodles from sticking together.
  • Individual servings: Place noodles in bowl. Top with vegetables and herbs, and sliced chicken pieces. Drizzle with a few tablespoons of Nuoc Cham Sauce (be generous, ~ 4 tbsp per serving) and serve with lime wedges.
  • DIY (my preferred way): Place chicken, vegetables, herbs, noodles and sauce in separate bowls / piled on platters. Then let everyone make their own bowls!

  • Then serve warm while the chicken is hot and juicy, sprinkled with an extra squeeze of fresh lime juice (plus some thinly-sliced green onions) if desired. Or, refrigerate in a sealed container for up to 3 days, or freeze for up to 3 months.

VIETNAMESE-STYLE BAKED CHICKEN

Vietnamese-Style Baked Chicken image

Provided by Emily Clifton, Nerds with Knives

Time 50m

Number Of Ingredients 12

2 pounds 900g bone-in, skin-on chicken thighs
1/4 cup 60ml soy sauce
1/4 cup 60ml Asian fish sauce
1/4 cup 55g palm or dark brown sugar
1 tablespoon 10g minced peeled fresh ginger
2 teaspoons 10ml hot chili-garlic paste (sambal oelek)
1 1/2 tablespoons 20ml fresh juice from 1 lime
1 teaspoon 5g finely grated zest from 1 lime
3 medium cloves garlic (minced or grated (about 2 teaspoons))
2 packed tablespoons (1/4 ounce fresh cilantro leaves and tender stems, finely chopped)
2 tablespoons 30ml grapeseed or other neutral oil
Sliced limes and cilantro leaves (for garnish)

Steps:

  • Place thighs in a large zipper-lock bag. In a medium bowl, whisk together soy sauce, fish sauce, sugar, ginger, chili-garlic paste, lime juice, lime zest, garlic, cilantro, and oil. Pour marinade into bag with chicken, seal bag, and toss to coat well. Let chicken marinate for at least 30 minutes and up to 4 hours.
  • Preheat oven to 425°F (218°C) and set oven rack to middle position. Line a rimmed baking sheet with foil and place a wire rack on top. Remove chicken from bag, allowing marinade to drip off, and set on wire rack skin side up, making sure to leave space between thighs. Discard marinade. Bake until thighs register 155 to 160°F (68 to 71°C) on an instant-read thermometer, about 35 minutes. (Be sure to measure temperature in the center of the thickest part of the thighs, but not directly against the bone.) If chicken skin is not brown and crisp enough by the time the thighs are cooked through, turn on oven broiler and broil until browned and crisp, about 1 minute, being careful not to burn the skin. Transfer chicken to a platter and let rest for 5 minutes. Garnish with lime slices and cilantro, then serve.
