VIETNAMESE FISH SIMMERED IN CARAMEL SAUCE (CA KHO TO)

Vietnamese Fish Simmered in Caramel Sauce (Ca Kho To) image

This is one of my favorite dishes at a local Vietnamese restaurant. I searched around the internet for the recipe and this is what a came up with. I just made this tonight and am quite surprised how close it taste to the restaurant version. It is normally made in a clay pot but a 2-quart saucepan will suffice. Beware, fish sauce is a very pungent ingredient.

Time 50m

Yield 3-4 serving(s)

Number Of Ingredients 7

1 1/2 lbs catfish or 1 1/2 lbs red snapper fillets, cut up into about 4 inch pieces

4 shallots, thinly sliced

2 slices ginger, julienned
ground black pepper

Steps:

Categories     Main Dish

Time 55m

Number Of Ingredients 12

1.5 - 1.75 lb salmon steaks ((about 1.5 - 2 inch thick))
1/2 teaspoon salt
2 thumb-sized pieces of ginger
3 cloves of garlic
1 large shallot
2 tomatoes ((one is fine if large))
1 - 2 birds-eye chili
1 1/2 cup water
1 2/3 tablespoons fish sauce
plenty of black pepper
2 tablespoons sugar
3 tablespoons water ((divided))

Steps:

  • Sprinkle salt on both sides of the salmon steaks and set a side. (Note: 1/2 teaspoon of salt is the total amount to use for all the salmon steaks)
  • Thinly slice shallot, ginger and tomatoes. Smash the garlic. Remove seeds from the bird's-eye chili. Set aside.
  • In a small saucepan, add 2 tablespoons of sugar and 2 tablespoons of water. Bring to a boil, the sugar will fully dissolve. Lower the heat to medium, continue to simmer. You will see that a lot of bubbles on the surface. The mixture will then turn from clear to yellow, and get darker as you simmer it. When it has a honey color, reduce the heat slightly. Keep watching closely, until it has a dark caramel color, turn off the heat and carefully add 1 tablespoon of water. Swirl the saucepan to combine (add 1/2 - 1 more tablespoon of water if the caramel sauce is too thick) and remove it from the stove. Set aside.
  • In a pan over medium high heat, sear salmon steaks for 2-3 minutes each side or until golden. Transfer them to a plate.
  • Place a pot that can fit all the salmon in a single layer on medium heat. Add oil and sauté shallots for a few seconds Add garlic and ginger and sauté for a few more seconds until fragrant. Arrange them to cover the bottom of the pot and place tomato slices on top. Place salmon steaks on top of the tomatoes.
  • Add 1 1/2 cups of water or enough to cover the fish, add fish sauce, caramel sauce and bird's-eye chili and bring to a boil. Lower to a simmer (low - medium low heat). Sprinkle plenty of black pepper and simmer 10 minutes then gently flip the fish. You can taste the braising liquid and adjust to taste, but remember it will get saltier as we continue cooking and reduce the liquid further.
  • Continue to simmer for 20-30 minutes, flip the fish one (or two) more time. Occasionally spoon the braising liquid over the salmon. If the liquid reduces too rapidly, you can add a little more water. In the last 5-10 minutes of cooking, watch closely because it may burn. The liquid will reduce, thicken like a sauce. Turn off the heat when there's just enough sauce to coat the bottom of the pot (or sooner if you prefer more sauce).
  • Transfer salmon to a shallow serving bowl and sprinkle some more black pepper. Serve with rice.

VIETNAMESE BRAISED & CARAMELIZED CATFISH (Cá KHO)

Vietnamese Braised & Caramelized Catfish (Cá Kho) image

Nothing reminds me more of traditional Vietnamese home cooking than caramelized catfish. Gently braised in fish sauce and coconut juice, this classic sweet and savory side dish is the taste of home.

Provided by Vicky Pham

Categories     side dish

Time 20m

Number Of Ingredients 10

3 lbs catfish (slice into 1-1/2-inch thick steaks)
4 tablespoons fish sauce
1 tablespoon granulated sugar
2 tablespoons vegetable oil
1 tablespoon granulated sugar
1 shallot (mince)
3 garlic cloves (mince)
½ can Coco Rico coconut soda (6 oz)
1 green onion (slice thinly)
¼ teaspoon black pepper

Steps:

  • Marinate catfish steaks with fish sauce and sugar for at least 30 minutes.
  • In a clay pot or skillet, heat vegetable oil on medium-high. Sprinkle a thin layer of sugar (1 tablespoon) onto the oil and heat until the sugar caramelizes to an amber color. Immediately, add shallot and garlic and saute until fragrant (about 15 seconds).
  • Add marinated catfish and all its marinade liquid, if any, into the skillet. Flip catfish on all sides to evenly coat with aromatics and caramel sauce (color will darken while braising).
  • Add coconut soda and gently cook on a low simmer for a total of 20 minutes, partially covered. At the halfway mark, flip the catfish so that the top gets a chance to absorb the braising liquid. If you find that the fish its too delicate to flip, spoon braising liquid over the catfish instead.
  • Top with green onions and black pepper when ready to serve.

CA KHO TO (VIETNAMESE FISH IN CARAMEL SAUCE)

Ca Kho to (Vietnamese Fish in Caramel Sauce) image

This is an authentic Vietnamese fish dish. I have to admit that the first time I heard of fish with caramel sauce, I thought that it sounded like an awful combination! Boy, was I wrong! It is delicious and very unique-- the flavors actually work very well. Soooo good!

Provided by Sommer Clary

Categories     Vietnamese

Time 50m

Yield 6-8 serving(s)

Number Of Ingredients 10

2 tablespoons fish sauce
1 tablespoon brown sugar
1 tablespoon honey
1 teaspoon ground black pepper
3 large cloves garlic, finely minced
3 shallots, finely minced
2 tablespoons sugar
1/4 cup water
1/2 cup coconut milk
1 1/2 lbs catfish, filet (can substitute with halibut, striped bass, or pacific flounder)

Steps:

  • In a bowl, mix the fish sauce, brown sugar, honey, pepper, garlic and shallots.
  • In a dutch oven, melt the sugar and cook until golden brown. Add the water. Add the coconut milk and stir. Add the fish and the contents of the bowl. Reduce heat to medium low, cover, and let simmer for at least ½ hour to 45 minutes. After 15 minutes, turn the fish over so that both sides soak in the sauce. Add more coconut milk if the sauce starts to dry out. Before serving, take off the lid so that the sauce can thicken a bit. Serve immediately with jasmine rice.

  • Fill the sink (or a large bowl or pot) with enough water to come halfway up the sides of the saucepan. In the saucepan, combine the 2 tablespoons water, vinegar (if using), and sugar. Set over medium heat and cook, stirring with a heatproof spatula or metal spoon; when the sugar has nearly or fully dissolved, stop stirring.
  • Let the sugar syrup bubble vigorously for 5 to 6 minutes, until it takes on the shade of light tea. Turn the heat to medium-low to stabilize the cooking. Turn on the exhaust to vent the inevitable smoke. (Don’t worry if sugar crystallizes on the pan wall. But if things get crusty in the bubbling sugar syrup, add another drop of vinegar to correct it.) For even cooking, you may occasionally lift and swirl the saucepan.
  • Cook the syrup for about 2 minutes longer, until it is the color of dark tea. The next 1 to 2 minutes are critical because the sugar will darken by the second. Monitor the cooking and, to control the caramelization, frequently pick up the saucepan and slowly swirl the syrup. When a dark reddish cast sets in—think the color of Pinot Noir—let the sugar cook a few seconds longer to a color between Cabernet and black coffee.
  • Remove from the heat and place the pan in the water to stop the cooking. Expect the pan bottom to sizzle upon contact. Leaving the pan in the sink, add the remaining ¼ cup water. The sugar will seize up, which is okay. When the dramatic bubbling reaction stops, return the pan to medium-high heat, and cook briefly, stirring to loosen and dissolve the sugar. Remove the pan from the heat and return to the water in the sink for about 1 minute, stirring, to stop the cooking process and cool the caramel sauce to room temperature.

  • On a dinner plate or in a bowl, stir together the brown sugar, pepper, salt, caramel sauce, and fish sauce. Add the salmon and coat with the mixture, turning the steaks to make sure that all surfaces are evenly exposed to the seasonings. Set aside for 15 minutes to marinate.
  • Select a shallow saucepan in which the fish steaks will fit snugly in a single layer. Arrange the galangal slices on the bottom. Place the fish steaks on top, adding all the seasonings from the plate. Put the pork in the open spaces between the steaks to ensure that it is exposed to all the seasonings.
  • Bring to a vigorous simmer over medium-high heat. Adjust the heat to a simmer, cover, and cook for 10 minutes to develop the flavors, checking midway to make sure there is enough liquid in the pan. If the pan seems dry, splash in a little water. During this initial period, the fish will more or less cook in the steam trapped in the pan. Expect the liquid to bubble vigorously. Soft plumes of steam may shoot from under the lid.
  • Uncover, add water almost to cover the fish, and bring to a gentle simmer. Cover and cook for 1 hour. Uncover and adjust the heat, if necessary, to continue at a gentle simmer. Cook for another 15 to 18 minutes, or until the liquid has reduced by half and has thickened slightly, forming a sauce.
