CARAMELISED VIETNAMESE SHREDDED BEEF
Recipe video above. A very quick, very tasty way to use up leftover cooked beef used in things like broth (see notes to start from raw). Created to use up leftover brisket from making Vietnamese Pho. Cooked is tossed in a Vietnamese lemongrass marinade then pan fried until golden. It's INSANELY delicious!

Steps:
- Mix Marinade in a bowl.
- Add shredded beef and mix. Set aside 5 minutes.
- Heat oil in a large skillet over high heat. Add about half the beef and spread out in single layer.
- Leave undisturbed until golden (about 1 minute). Flip then cook the other side just briefly (about 30 seconds) just to heat and get a touch of golden, then remove.
- Repeat with remaining beef.
- Serve over rice, using either limes or Nuoc Cham as the sauce, and garnishes of choice (I used them all in the photos!)
VIETNAMESE BEEF MARINADE (THIT Bò UOP)
Asian's rarely ever reveal secrets, especially when it comes to food or recipes. This recipe was verbally given to me by a Vietnamese girl, fabulous cook and great friend of mine. It's a very large (restaurant scale) recipe. So unless you plan on cooking for an army, reduce it to 2 cups total.(use the converter). If you want to have true Asian flavor in your beef ribs, stir-fry, steak or any other asian beef dish...this is your recipe.

- 1. Puree the chopped yellow onion, ginger root and pear in a robot coupe or food processor. Over medium heat, add cooking oil and bring to temperature Add the onion, ginger and pear. Cook until slightly brown.
- 2. Add the garlic and white pepper, mix well.
- 3. Add the soy sauce, ensuring all utensils are dry. Tap water will turn this marinade sour and ruin it.
- 4. Add both brown and white sugar, cook until granuals are disolved.
- 5. Add green onion and cool to room temperature.
- 6. Store for up to a week or marinate beef for up to 24-hrs.
- 7. Discard used marinade.
- 8. 1 cup will marinate up to 10 steaks.

Steps:
- Whisk all marinade ingrediants together in a bowl.
- Place chicken breasts in a large ziplock bag and pour marinade over top.
- Refrigerate for at least 30 minutes but no longer than 4 hours.
- Heat a grill to medium-high. Chicken is easiest grilled if you brush vegetable oil liberally on the grill first so it doesn't stick.
- Grill, with lid down for 7 to 7 1/2 minutes per side.

VIETNAMESE SHAKING BEEF RECIPE BY TASTY
Here's what you need: thick rib eye steak, garlic, brown sugar, soy sauce, oyster sauce, fish sauce, freshly ground black pepper, granulated sugar, white vinegar, water, red onion, watercress, roma tomatoes, vegetable oil, fresh cilantro, white rice

- In a large bowl, combine the beef, garlic, brown sugar, 3 tablespoons of soy sauce, oyster sauce, fish sauce, and black pepper. Toss to combine. Let marinate at room temperature for 30 minutes.
- In small bowl, combine the granulated sugar, remaining 2 tablespoons of soy sauce, white vinegar, and water. Add the red onion slices and coat the red onions in the dressing thoroughly. Set aside to soak.
- On a platter, arrange the watercress and tomato slices.
- Preheat a large wok or skillet over high heat, then add the vegetable oil. When the oil is shimmering, swirl the oil around in the pan. Add half of the beef cubes and sear on all sides, shaking the pan, until the meat is slightly charred and medium rare, 3-5 minutes. Set the meat aside and repeat with remaining beef.
- Arrange the beef on the bed of watercress and tomatoes. Top with the dressed red onions and fresh cilantro.
- Serve with domed white rice. For a full meal, serve alongside Vietnamese crepes, spring rolls, and banh mi sandwiches.

- Start by making the marinade / dressing. In a small bowl, combine fish sauce, lime zest, lime juice, brown sugar, Vietnamese Pho spice, garlic, and jalapeño. Whisk to combine.
- In a large zipper bag or bowl, add the steak and pour ~1/2 the marinade over the steak. Reserve the remaining marinade to use as a salad dressing. Refrigerate the steak for at least 30 mins up to 24 hours.
- When ready to cook the steak, remove from the fridge and let rest at room temp while making salad. Placed sliced salad ingredients in a Medium bowl. Whisk dressing and oil together and pour over salad. Toss and set aside.
- To use a BBQ: Preheat your grill. Cook for ~4 mins per side for Med Rare (adjust cooking time to your preference). To use stove: Adjust oven rack 6 inches from top. Preheat oven broiler. Heat an oven-safe skillet or pan on Med-High and add 1 tsp oil. Sear steak for 2 mins then flip and repeat. Place skillet in oven and cook for ~3-4 mins for Med Rare. Watch broiler carefully to not burn meat. Adjust cooking time to achieve your meat temp preference.
