BAKED VIDALIA ONIONS

6 vidalia onions
6 tablespoons butter
salt and pepper
Worcestershire sauce

Steps:

  • Get the biggest Vidalias you can find. Peel and cut a thin slice off the top and bottom of the onion so that it sits flat in a casserole dish. Take out a little of the core and cut a bit X in the top of the onion. Place each onion on a large square of aluminum foil.
  • Top with pat of butter, salt, pepper and Worcestershire sauce, to taste. Place in dish and bake at 400 degrees for 45 minutes to an hour, or until tender (check on these; you don't want it overcooked and too soft).
  • Variation: Prepare onions as above, but instead of Worcestershire sauce, pour on about 2 Tablespoons of Kahlua before baking. It makes them nice and sweet. You can also put these on a gas grill or nestle them right down into the charcoal (use heavy-duty aluminum foil).

This is a bit rich but oh is it good! It has a sweet taste to it but can be amped up with hot sause and still taste great! Great for the diebetic that wants sweets but can't have them.

2 lbs vidalia onions (or texas #10's)
1/2 cup butter
3 eggs (or egg sub.)
1 cup sour cream
1/4 teaspoon salt
1/2 teaspoon black pepper
grated parmesan cheese

Steps:

  • Peel and chop onions. Then saute the onions in the butter. Let onions cool. Beat eggs and sour cream together and add to onion mix. Stir in salt and pepper. Pour into a 9 by 11 inches baking pan. spread cheese on the top. Bake for 20 min at 450, then reduce heat to 325 and bake an additional 20 minute.
  • Optional: Add hot pepper sause to taste with the salt and pepper to give it a less sweet taste and a little kick.

5 medium vidalia onions or 5 medium sweet onions, chopped
2 cups fresh bread cubes (about 10 slices, crusts removed)
1 (12 ounce) can fat-free evaporated milk
3 large eggs
1 (15 ounce) can shredded parmesan cheese
1 teaspoon salt

Steps:

  • Melt butter in a large skillet over medium heat; add chopped onions, and sauté 10-15 minutes or until tender.
  • Place onions and bread cubes in a large bowl.
  • Stir in milk, eggs, 1 cup of cheese, and salt.
  • Pour into a lightly greased 1 1/2 quart soufflé or baking dish.
  • Sprinkle with reamaining 1/4 cup cheese.
  • Bake at 350 degrees for 25 minutes or until set.

4 large vidalia onions
4 beef bouillon cubes
4 tablespoons butter
fresh ground black pepper

Steps:

  • Prepare a fire in a charcoal grill or preheat oven to 350 degrees F.
  • Trim and slice from the top of each onion, and peel the onion without cutting off the root end.
  • Using a potato peeler, cut a small cone shaped section from the center of the onion.
  • Cut the onion into quarters from the top down, stopping within a 1/2-inch of the root end.
  • Place a bouillon cube in the center of each onion, slip slivers of butter between the sections, and sprinkle with pepper.
  • Wrap each onion in heavy duty foil and place the onions directly onto the hot coals.
  • Cook the onions for 45 minutes turning every so often.
  • To serve, place each onion in individual bowl because the onions will produce a lot of broth, which tastes like French onion soup.

6 ounces egg noodles
1/2 cup unsalted butter
2 onions, chopped
1 1/4 cups sour cream
1 1/4 cups small curd cottage cheese
1 tablespoon poppy seed
4 large eggs
1 teaspoon salt
1/4 teaspoon black pepper

Steps:

  • Preheat oven to 425 degrees, put rack in middle position.
  • Cook noodles in a 6 or 8 quart pot with salted water until al dente, about 5 minutes, drain and rinse in cold water, then drain well.
  • Melt butter in a heavy skillet over medium heat, brush muffin tins with some butter.
  • Add onions and cook until well browned, about 20 minutes.
  • In a large bowl, mix onions, noodles, sour cream, cottage cheese, poppy seed.
  • Lightly beat eggs with salt and pepper, add to the mixture and mis until well combined.
  • Divide the mix into 12 muffin tins and bake for about 20-25 minutes.

  • Set aside.
  • Melt butter in a large skillet over medium heat, add onion and cook, stirring often, 30 to 40 minutes, or until onion is caramel colored.
  • Remove onion from heat.
  • Stir onion into egg mixture and spoon into a lightly greased 13 x 9-inch baking dish.
  • Bake for 30 minutes or until set.
