1/2 cup vidalia onion, chopped
1 large shallot, french, chopped
1 1/2 tablespoons butter, unsalted
1/2 cup jarlsberg cheese, grated
1/2 cup sharp cheddar cheese, diced
1 1/2 cups biscuit mix (bisquick)
1/4 teaspoon salt, coarse
1 egg, large, beaten
1 cup buttermilk
2 tablespoons butter, melted
1/2 teaspoon cayenne pepper

Steps:

  • Preheat oven to 400 degrees.
  • Grease muffin tin and set aside.
  • Saute onions and shallots in butter until clear, then cool until needed.
  • Mix cheddar and jarlsberg cheeses together.
  • In a large bowl add biscuit mix, 1/2 the cheese blend, and salt. Stir to blend.
  • Add egg and milk together, stir and slowly add to the biscuit mix.
  • Next add the sauted onions and shallots to the biscuit mix. Stir gently just to moisten.
  • Fill the greased muffin tins 1/2 to 3/4 full, sprinkle the tops with the remaining cheese blend.
  • Drizzle the melted butter overtop and sprinkle with cayenne pepper.
  • Bake in a 400 degree oven for 20 minutes or until done when tested.
  • Makes 10 - 12 muffins depending on size.

Number Of Ingredients 8

1 cup self-rising flour
1 cup quick-cooking oats
1/4 cup sugar
1 egg
3/4 cup milk
1/3 cup vegetable oil
3/4 cup shredded cheddar cheese
1/2 cup chopped Vidalia or sweet onion

Steps:

  • In a large bowl, combine the flour, oats and sugar. In another bowl, whisk the egg, milk and oil. Stir into dry ingredients just until moistened. Fold in cheese and onion. , Fill greased muffin cups three-fourths full. Bake at 400° for 15-20 minutes or until a toothpick comes out clean. Cool for 5 minutes before removing from pan to a wire rack. Serve warm. Refrigerate leftovers.

1 tbsp Butter
1 cup Vidalia Onion (chopped)
1 1/2 cups All purpose flour
1 tbsp baking powder
1 tbsp White sugar
1 tbsp Onion powder
1 cup Milk
1 Egg
1/4 cup Canola oil
1 cup Cheddar cheese (grated)
1 cup Parmesan cheese (grated)

Steps:

  • Preheat oven to 375 F.
  • In a non-stick skillet over medium heat stir butter and chopped onion. Sauté for 10-15 minutes until lightly browned.
  • In a large mixing bowl mix all dry ingredients together and stir in cheddar cheese and 1/2 cup of parmesan.
  • Beat egg, milk, oil and caramelized onions into a separate bowl and add to dry ingredients. Fold gently until just combined.
  • Spoon Cheese and Onion Muffins into well-greased cups. Sprinkle the top of each muffin with remaining 1/2 cup parmesan cheese then bake for 15-20 minutes.

1/4 cup (1/2 stick) butter
1 large Vidalia onion (or other sweet onion), chopped
1 (8-oz) package corn muffin mix
1 egg, beaten
1/3 cup whole milk
1 cup sour cream
1 cup sharp cheddar, grated, divided
1/4 teaspoon salt
1/4 teaspoon dried dill weed

Steps:

  • Preheat the oven to 450 °F. Spray an 8-inch square baking pan with vegetable oil cooking spray.
  • In a medium saucepan, melt the butter and sauté the onion until tender, but not browned, for about 3 minutes. Remove the pan from the heat and add the muffin mix, egg, milk, sour cream, 1/2 cup of the cheese, the salt and dill weed. Stir to combine. Pour into the prepared pan and top with the remaining 1/2 cup cheese. Bake for 30 minutes, until set and a toothpick inserted into the center of the cornbread comes out clean. Allow to cool slightly before cutting into squares.

  • In a saucepan, melt butter and saute onion until tender for about 3 to 5 minutes. Remove from heat to cool for a few minutes. In a bowl, mix the remaining ingredients, only using 1/2 of the cheese. Mix in the onion mixture. Pour into muffin tin. Top with other 1/2 of cheese. Bake until golden brown for about 15-25 minutes depending on your oven. Test for doneness with toothpick. Allow them to cool a bit, and then remove them from the pan.
