QUICK CHIPPED BEEF CHEESE BALL
I got this recipe from a friend who used to work at the deli of our local grocery. When they were bought out by a larger chain their cheese ball recipe changed. This is the only way I can get my favorite cheese ball now. The grocery called it "chipped beef" but it actually uses thinly sliced Buddig roast beef.

Steps:
- Mix all ingredients except parsley or nuts.
- Form into a ball.
- (I usually put it in plastic wrap, roll into a ball and refrigerate until more solid).
- Roll in nuts or parsley if desired.

EASY CHIPPED BEEF CHEESE BALL
Such a classic and amazing cheeseball filled with cheddar cheese, cream cheese, green onions, and dried beef. This easy cheese ball is going to be the hit at any gathering!

Steps:
- In a large bowl, add the cream cheese, chipped beef (reserving about 1/4 cup), green onions, cheddar cheese, Worcestershire sauce, garlic powder, and salt. Mix together until incorporated.
- Roll into a ball and wrap in plastic. Chill for at least an hour or until firm.
- Unroll the cheese ball from the plastic wrap and roll in reserved chipped beef and green onions. Serve with crackers.

BEEF AND GREEN ONION CHEESE BALL
My DH and I love to host parties. If I try to have a party without this cheeseball everyone asks where it is! It's so easy to make and has so few ingredients that there's no reason not to make it. In fact, I usually make two. My family loves the chopped pecans it is rolled in so they would eat all around the outside and save the middle for last. I finally started adding extra pecans into the cheese mixture to make everyone happy. This goes well with any cracker, but we find we prefer wheat crackers, especially Triscuits with it. (Cook time is actually chill time)

Steps:
- Soften the cream cheese to room temperature.
- Use your food processor to finely mince the dried beef.
- Use your food processor to finely mince the green onions (white bulb and green stalks together).
- Add the beef, the onions and 1/4 cup of pecans to the cream cheese and mix well.
- Form into a ball.
- Roll in remaining chopped pecans.
- Refrigerate for at least one hour (but it's even better if you make it the night before and let the flavors blend).
- Note: I've also made this by making the cheese mixture and adding 1/2 cup pecans instead of 1/4, then used it to stuff celery sticks. That was a hit too!

- Place beef in a food processor; pulse until finely chopped. In a large bowl, beat cream cheese until smooth. Stir in 2/3 cup beef and the onion and Worcestershire sauce. Refrigerate, covered, at least 1 hour., Place remaining beef in a small shallow bowl. Shape cheese mixture into a ball; roll in beef to coat evenly. Wrap; refrigerate at least 1 hour. Serve with crackers and vegetables.
