SWEET AND SPICY MEATLOAF
This meatloaf recipe is made with both ground beef and Italian sausage.

Steps:
- Preheat your oven to 350 degrees. Grease a loaf pan and set aside.
- Heat the olive oil in a large skillet over medium heat. Add the red onion, carrots, green onions, bell pepper, and garlic.
- Cook, stirring occasionally for 5 minutes. Cover and cook for another 5 minutes, or until the carrots are soft.
- Mix in the 1/3 cup ketchup, Worcestershire sauce, black pepper, crushed red pepper, salt, and dried parsley. Remove from heat and let cool slightly.
- In a large bowl, combine the ground beef, sweet Italian sausage, eggs, breadcrumbs, and cooked vegetables.
- With clean hands, knead the meat-vegetable mixture until it is fully combined.
- Pour the mixture into the greased loaf pan and drizzle with the remaining 1/4 cup ketchup.
- Bake meatloaf for 1 hour.
- Remove sweet and spicy meatloaf from the oven and drain fat. Let sit for 10 minutes prior to slicing.

ULTIMATE MEATLOAF WITH TANGY SAUCE
This truly is the Ultimate meatloaf with a lip-smacking, tangy tomato sauce. This is perfect for a weeknight dinner or leftover meatloaf sandwiches! We're talking pure comfort food at it's finest!

- Preheat the oven to 350F. Line a rimmed baking sheet with parchment paper. Set aside.
- In a bowl add all of the ingredients for the Tangy Sauce and whisk; set aside.
- In a medium bowl add the bread, panko and milk. Press the bread into the milk and set aside. Allow to soak for 5 minutes.
- In a large bowl add the rest of the meatloaf ingredients and the bread/panko/milk mixture. Gently mix until combined. Do not overimx as the meatloaf will be tough. Transfer the mixture to the baking sheet and using your hands, form a loaf that is about 12 inches long, 6 inches wide, and about 2 1/2-3 inches tall. The loaf should be smooth and have rounded edges. This will help the loaf stay together when serving.
- Bake for 35 minutes. Remove from the oven and spread Tangy Sauce all over the top and sides of the meatloaf. You'll use about 1 -1 1/2 cups of sauce. Save the leftover sauce for meatloaf sandwiches. Put the meatloaf back into the oven and bake for an additional 25-30 minutes or until a thermometer inserted reads 165F.
- Remove from the oven and allow to cool for 15 minutes before cutting.

- Preheat oven to 350 degrees F (175 degrees C).
- Heat butter in a large heavy skillet over medium heat; cook and stir onion, green onions, carrot, celery, and garlic until fragrant, about 5 minutes. Cover skillet with a lid and cook, stirring occasionally, until carrot is tender, about 5 more minutes. Stir 1/3 cup ketchup, Worcestershire sauce, salt, and pepper into vegetable mixture; cook until warmed through, about 1 minute.
- Mix ground beef, sausage, vegetable mixture, bread crumbs, parsley, and eggs in a large bowl; form into a loaf and place in a rectangular baking pan with 2-inch high sides. Cover loaf with remaining 1/3 cup ketchup.
- Bake in the preheated oven until no longer pink in the center, about 1 hour. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).

THE BEST MEATLOAF I'VE EVER MADE
When I was growing up, my mom never ever made meatloaf and I always wanted to try it - I finally tried it at a restaurant and loved it. When I moved out on my own I started experimenting with different recipes and creating my own version. I finally came up with the best meatloaf I have ever made, and I wanted to share it.

- Preheat oven to 350 degrees F (175 degrees C).
- Melt the butter in a skillet over medium heat, and cook the onion and garlic 5 minutes, until onion is tender. Remove from heat, and season with salt and pepper.
- In a large bowl, mix the onion and garlic, beef, crumbled bread, crushed crackers, egg, sour cream, Worcestershire sauce, and 1/2 can tomato sauce. Gradually stir in the milk 1 teaspoon at a time until mixture is moist, but not soggy. Transfer the mixture to a 5x9 inch loaf pan.
- Bake uncovered in the preheated oven 40 minutes. Increase oven temperature to 400 degrees F (200 degrees C), and continue baking 15 minutes, to an internal temperature of 160 degrees F (70 degrees C).
- In a small bowl, mix the remaining tomato sauce and ketchup. Pour over the top of the meatloaf, and continue baking 10 minutes.

SPICY, GARLICKY MEATLOAF

- Heat oven to 350 degrees. In a large bowl, whisk eggs, garlic, scallions, jalapeño, sage, salt and black pepper.
- In a separate bowl, stir together bread crumbs and stock, cream or milk. Let stand five minutes.
- Add pork, beef and soaked bread crumbs to egg mixture. Knead ingredients together until just combined. Press mixture evenly into an 8- or 9-inch loaf pan. Bake for 55 minutes.
- Meanwhile, whisk together the tomato paste and olive oil. After meatloaf has finished baking, brush top with glaze; sprinkle with pine nuts, if using. Bake 15 minutes more (glaze will be thick and a meat thermometer should read 160 degrees). Let meatloaf rest for 10 minutes before slicing and serving.

- Mix ground beef with all ingredients except for half of the barbeque sauce.
- Bake in oven at 400 degrees for 25-30 minutes.
- Put remainder of barbeque sauce on top of meatloaf.
- Put back into oven and cook additional 10 minutes.
