2 ¼ teaspoons active dry yeast
2 tablespoons white sugar
¼ cup warm water
4 ¼ cups all-purpose flour
1 ¼ cups warm water
2 tablespoons butter, softened
1 tablespoon salt
3 tablespoons melted butter
¼ teaspoon garlic powder
½ teaspoon kosher salt

Steps:

  • Dissolve yeast and sugar in 1/4 cup warm water in a large bowl. Let stand until the yeast softens and begins to form a creamy foam, about 15 minutes. Add flour, 1 1/4 cup warm water, 2 tablespoons softened butter, and 1 tablespoon salt; knead until dough is well mixed and soft, about 3 minutes.
  • Roll dough into a 2-foot log. Cut into 16 equal pieces, about 1 1/2 inches wide. Knead each piece and shape into a 6-inch breadstick. Arrange breadsticks on a baking sheet; let rise for about 1 hour.
  • Preheat oven to 375 degrees F (190 degrees C).
  • Mix 3 tablespoons melted butter and garlic powder together in a bowl; brush onto breadsticks.
  • Bake breadsticks in the preheated oven until golden brown, about 15 minutes. Immediately brush with remaining melted butter mixture; sprinkle with 1/2 teaspoon kosher salt.

1 cup plus 2 tablespoons water (70° to 80°)
2 tablespoons olive oil
3 tablespoons grated parmesan cheese
2 tablespoons sugar
3 teaspoons garlic powder
1-1/2 teaspoons salt
3/4 teaspoon minced fresh basil or 1/4 teaspoon dried basil
3 cups bread flour
2 teaspoons active dry yeast
1 tablespoon butter, melted

Steps:

  • In bread machine pan, place the first nine ingredients in order suggested by manufacturer. Select dough setting (check dough after 5 minutes of mixing; add 1 to 2 tablespoons of water or flour if needed). , When cycle is completed, turn dough onto a lightly floured surface. Divide into 20 portions. Shape each into a ball; roll each into a 9-in. rope. Place on greased baking sheets. Cover and let rise in a warm place for 40 minutes or until doubled. , Bake at 350° for 18-22 minutes or until golden brown. Remove to wire racks to cool. Brush warm breadsticks with butter.

1 (.25 ounce) package active dry yeast
1 cup warm water, divided
2 ¼ cups all-purpose flour, or more if needed
3 tablespoons vegetable oil
1 egg
½ teaspoon salt
½ cup butter, melted
½ teaspoon garlic salt
¼ cup Parmesan cheese

Steps:

  • Dissolve 1 1/2 teaspoons sugar and yeast in 1/2 cup warm water in a bowl. Let stand until yeast softens and begins to form a creamy foam, about 5 minutes.
  • Beat flour, oil, egg, salt, remaining sugar, and remaining warm water into yeast mixture until smooth, adding more flour if needed to form a soft dough. Turn dough onto a floured work surface; knead until smooth and elastic, 6 to 8 minutes.
  • Place dough in a greased bowl, turning once to cover completely with oil. Cover bowl with a damp towel and place in a warm area until dough is doubled in size, about 40 minutes.
  • Grease a baking sheet.
  • Punch dough down and turn onto a floured work surface. Divide dough into 18 pieces and shape each into a 6-inch rope. Arrange dough pieces on the prepared baking sheet about 2 inches apart; cover with a towel or plastic wrap and let rise until doubled in size, about 25 minutes.
  • Preheat oven to 400 degrees F (200 degrees C). Remove cover from dough.
  • Bake in the preheated oven until golden brown, 10 to 12 minutes.

1 1/2 C warm water
2 T sugar
1 T yeast
1/2 t salt
3 1/2- 4 C flour
1/4 C butter (not that nasty margarine crap)
3/4 C grated Parmesan or mozzarella cheese
Johnny's Garlic Seasoning

Steps:

  • 1. Mix the water, sugar and yeast together in a measuring cup or in the bottom of your mixer. Let it sit for 5 minutes.
  • 2. Add the salt and the flour, one cup at a time, until it is well incorporated. Mix on high for 5 minutes. Let the dough rest for 5 minutes.
  • 3. Melt the butter and pour half of it into a jelly roll pan (large cookie sheet).
  • 4. Place the dough in the center of the pan. Let it sit for 2 or 3 minutes. Letting the dough rest makes it MUCH easier to shape.
  • 5. Spread the dough out flat onto the pan until it reaches all of the edges. Doing all of the spreading and cutting of these bread sticks, in the pan makes cleaning up your counter so much easier!
  • 6. Pour the other half of the butter onto the dough. Spread it around with your hands. Sprinkle the Johnny's Garlic Seasoning all over the dough, and then the Parmesan cheese.
  • 7. With a pizza cutter cut the dough into three rows lengthwise, and then into about 12 little height wise rows.
  • 8. Put the pan into a 170 degree oven for about 7-10 minutes. The breadsticks should rise about 1 inch.
  • 9. Turn you oven up to 350 and bake for about 12 minutes, or until golden brown.
  • 10. When they come out of the oven let them sit and rest again for about 5 minutes. Then redefine your cutting lines with the pizza cutter.
  • 11. I use a pair of cooking scissors to cut the edges where the pizza cutter can't reach.
  • That's it! They are wonderful. I have played around with a variety of things that can be put on the top. I will post those recipes in the days to come! Johnny's Garlic Spread seasoning is one in a million. I buy it at Costco, and keep several in my long term food storage. It's really great to have on hand. ENJOY!

1 1/2 cups warm water
1/4 ounce active dry yeast* ((1 packet))
3 cups bread flour ((you may need as much as 3 3/4 cups))
3 tablespoons extra virgin olive oil
1 teaspoon kosher salt
egg wash ((1 egg beaten with 1 to 2 teaspoons water))
1/4 cup unsalted butter, (melted)
1/4 teaspoon kosher salt
1/4 teaspoon garlic powder
1/4 teaspoon Italian seasoning

Steps:

  • Place the sugar in a large mixing bowl, and add the warm water and yeast. Set aside for 5 minutes, or until the yeast has dissolved and looks foamy.
  • Add 3 cups of bread flour, the olive oil, and the salt, and mix on low speed until a stiff dough forms. (If the dough seems sticky, add up to 3/4 cup additional flour (1/4 cup at a time), until it pulls cleanly away from the sides of the bowl.)
  • Knead until dough is smooth and elastic, about 10 minutes.
  • Mist the bowl with non-stick spray, place the dough inside, and cover with plastic wrap.
  • Allow the dough to rise for 30 minutes.
  • Divide the dough into 16 equal portions, and shape each one into a rope (about 6 inches long), placing them on a parchment-lined baking sheet.
  • Mist a sheet of plastic wrap with non-stick spray, place it loosely over the unbaked breadsticks, and allow them to rise for 30 minutes.
  • Preheat the oven to 350 degrees F, and lightly brush the breadsticks with egg wash.
  • Bake the breadsticks for 12 to 14 minutes, or until just beginning to turn golden at the tips.
  • Stir the melted butter, salt, garlic powder, and Italian seasoning together, and brush the mixture over the warm breadsticks.

2 ¾ cups (380 g) bread flour or all-purpose flour
1 teaspoon instant dry yeast
3/4 cup plus 1 tablespoon ((195 ml) warm water)
¼ cup (60 ml) olive oil
2 tablespoons (30 g) unsalted butter, melted and slightly cooled
1¼ teaspoons fine salt
Olive oil (, melted butter, or water, for brushing)
Sesame seeds or Parmesan cheese (, for sprinkling)

Steps:

  • Using a mixer fitted with the dough hook, mix all ingredient on low speed until well combined, 2-3 minutes. Increase mixer speed to medium-low and mix for another 5 minutes. Cover bowl with plastic wrap and let sit for one hour at room temperature.
  • Preheat oven to 375F/190C. Line two baking sheets with parchment paper.
  • Divide dough into 24 pieces, each weighing about 25g. Roll each piece into a log that is roughly 25cm long (or 30cm if you like them extra thin) and ½-1 cm wide, depending on how thick you want them. Keep in mind that they will expand during baking. Place on prepared baking sheets, allowing sufficient space between each stick. If you like, brush them with oil or water and sprinkle with Parmesan cheese or sesame seeds.

  • Allow breadsticks to completely cool on a wire rack. They will keep in an airtight container for up to 5 days.
