2 tbsp Olive oil ((divided))
1/2 large Onion ((chopped))
1 lb Chicken breast ((cut into bite size pieces))
1 14.5-oz can Diced tomatoes ((drained))
7 oz Coconut cream ((the entire cream part skimmed from a 14-oz can))
1/4 cup Chicken broth, reduced sodium
4 cloves Garlic ((minced))
1 1/2 tbsp Curry powder ((+1 tsp cumin if your curry powder doesn't include it))
1 tsp Ground ginger
1 tsp Paprika
1/2 tsp Sea salt ((to taste))

Steps:

  • Heat oil in a large saute pan over medium heat. Add the onion and saute for about 7 to 10 minutes, until translucent and browned.
  • Push the onion to the side. Increase heat to medium high. Add another tablespoon oil and the chicken in a single layer. Saute the chicken for just 1 to 2 minutes per side, only to brown the outside.
  • Add the diced tomatoes, coconut cream, chicken broth, garlic, curry powder, ground ginger, paprika, and sea salt. Stir everything together. Adjust salt to taste.
  • Bring the mixture to a boil, then reduce heat, cover, and simmer for about 15 to 20 minutes, until the chicken is cooked through, sauce is thick, and flavors develop to your liking.

1 small yellow onion, chopped
2 cloves garlic, minced
1 tablespoon curry powder
1 14.5 oz. can diced fire-roasted tomatoes, drained
1/3 cup low-sodium chicken broth (see notes)
1/2 teaspoon kosher salt
1/4 teaspoon black pepper
1/8 teaspoon cayenne pepper, optional
1 1/2 cups cooked chicken, chopped (from a rotisserie or leftover, see notes)
3/4 cup plain Greek yogurt (non-fat, 2% or 5% fat are all OK)
Chopped fresh parsley or cilantro
Chopped peanuts (optional)

Steps:

  • Heat olive oil in a large skillet over medium heat.
  • Add onion and sauté for 4-5 minutes, until softened. Add garlic and sauté another 30 seconds.
  • Stir in curry powder, diced tomatoes, and chicken broth. Season with salt, pepper and cayenne, if using.
  • Bring to a low simmer and cook for 2-3 minutes, until slightly thickened.
  • Stir in chicken until warmed through, 1-2 more minutes.
  • Turn off the heat and stir in the Greek yogurt until just combined.
  • Serve hot with fresh chopped parsley or cilantro and chopped peanuts.

1.5 tbsp oil ((vegetable, canola))
2 garlic cloves (, minced)
2 tsp ginger (, grated)
1/2 onion (, finely chopped)
500g / 1lb chicken thighs, sliced ((Note 1))
2.5 tbsp curry powder ((Note 2))
270 ml / 1.25 cups coconut milk (, full fat (9 oz) (Note 3))
1.5 cups (375 ml) chicken stock low sodium
1/2 tsp salt
3/4 cup frozen peas
1/4 cup coriander / cilantro leaves (, chopped)

Steps:

  • Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
  • Add chicken and cook until it it changes from pink to white.
  • Add curry powder and cook for 2 minutes.
  • Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
  • Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
  • Serve over rice, noodles or mashed potato!

2 onions
3 garlic cloves
1 tablespoon grated ginger
3 tablespoons vegetable oil
2 tablespoon curry powder
1.5 teaspoons salt
1/2 teaspoon black pepper
4 large tomatoes, chopped
1 can (400g/14oz) coconut cream/milk
3/4 (180ml) water
½ teaspoon garam masala

Steps:

  • 1. In a large pan heat oil. Add chopped onions and sauté until golden, over medium-low heat. stir occasionally. 2. When onions are golden add grated garlic and ginger. Stir and cook for 2 minutes. Add chopped tomatoes and cook, stirring occasionally, until soft. Add curry powder and cook, stirring, for 2 minutes. Add chicken breast, season with salt and pepper, cook for 5 minutes, until golden. Cover the pan and cook for 2-3 minutes more. Add water, cover and cook 10 minutes. 3. 6 skinless, boneless chicken breast halves - cut into strips
¼ cup olive oil
2 large onions, diced
⅓ cup curry powder, or to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
  • Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

1 onion, chopped
2 tablespoons curry paste
4 tomatoes, chopped
4 skinless chicken thighs or 4 chicken thigh fillets
100 g Baby Spinach
4 tablespoons plain yogurt
40 g coriander leaves, a handful

Steps:

  • You also need basmati rice or naan bread to serve.
  • Heat a little oil in a deep non-stick frying pan(with a lid) and add the onion.
  • Fry for about 3 minutes until tender.
  • Then stir in the curry paste and fry for 1 minute.
  • Add the chicken and tomatoes and a splash of water, cover and cook for 15-20 minutes until cooked through.
  • Stir in spinach until it just wilts.
  • Then stir in the yoghurt and coriander, season.
  • Serve with rice, naan bread or salad.

3-4 Tbsp canned jalapeno
1 1/2 cup cabbage, chopped
1 avocado, chopped
1 cup olives, whole
1 tbsp sesame seeds, toasted
1 tbsp hummus

Steps:

  • Heat a non-stick pan (medium heat) and add 1 Tbsp olive oil. Add in the tuna, chickpeas, basil, tomato paste, 1 tbsp lemon juice, 1 garlic clove and the crushed red pepper. Mix everything together and keep stirring for 4-5 minutes, so that the chickpeas and tuna absorb all the flavors.
  • In a large bowl mix the cabbage with 1 clove of garlic, 1 tbsp lemon juice, a pinch of salt and 1 tbsp olive oil, mix very well!
  • Arrange your bowl: Start with 1/2 cup cabbage, around 4 Tbsp of the tuna + chickpeas, then 1/4 cup olives, 1/2 avocado, some jalapeno and 2 Tbsp hummus. Top with some toasted sesame seeds.
