A quick and easy pasta recipe with all the classic flavours of Italy.

4 tsp extra-virgin olive oil
3 fat garlic cloves, crushed
1 small onion, finely chopped
Large sprig fresh rosemary, leaves picked and chopped
600g canned chopped tomatoes
1 tbsp sun-dried tomato purée
1 fresh bay leaf
300g penne
2 x 125g balls half-fat mozzarella, drained and cut into 1cm pieces
Handful fresh basil, leaves picked
60g rocket leaves
1 tsp balsamic vinegar

Steps:

  • Put 3 tsp of the olive oil and the crushed garlic into a medium pan and place over a medium heat. As soon as the garlic starts to sizzle, add the finely chopped onion and chopped rosemary leaves and cook gently until very soft but not browned. Add the tomatoes, sun-dried tomato purée and bay leaf and leave to simmer for 15-20 minutes, stirring every now and then, until reduced and thick. Season to taste, and remove the bay leaf.
  • Meanwhile, bring a large pan of lightly salted water to the boil. Drop the penne into the boiling water and cook for 13 minutes or until al dente. Drain well, return to the pan and stir in the tomato sauce, diced mozzarella and basil leaves. Divide the pasta among 4 warmed bowls.
  • Toss the rocket leaves with the balsamic vinegar and the remaining 1 tsp olive oil, pile on top of each bowl of pasta and serve.

2 cups diced tomatoes
1 small onion, finely chopped
6 tablespoons olive oil
2 cloves crushed garlic
6 leaves fresh basil, torn
10 ounces fusilli pasta
3 tablespoons grated Parmesan cheese, or to taste
1 ½ cups crumbled feta cheese
salt and ground black pepper to taste

Steps:

  • Stir tomatoes, onion, olive oil, garlic, and basil together in a bowl.
  • Bring a large pot of lightly salted water to a boil. Cook fusilli in the boiling water, stirring occasionally, until cooked through but firm to the bite, 12 minutes. Drain.
  • Toss warm pasta with feta cheese and Parmesan cheese in a large bowl. Stir tomato mixture into pasta and season with salt and pepper.

1 medium onion, chopped (1/2 cup)
4 cloves garlic, finely chopped

1/4 cup chopped fresh basil leaves
3 cups uncooked rigatoni, penne or ziti pasta (8 oz)
8 oz fresh mozzarella cheese, cut into 1/2-inch cubes
1/4 cup pine nuts, toasted

Steps:

  • In 12-inch skillet, heat oil over medium heat. Add onion and garlic; cook 3 to 4 minutes, stirring frequently, until onion is crisp-tender. Stir in tomatoes. Heat to boiling. Reduce heat; simmer uncovered 20 to 25 minutes, stirring occasionally, until thickened. Stir in basil.
  • Meanwhile, cook and drain pasta as directed on box.
  • Stir pasta into sauce. Cook until thoroughly heated. Into large serving bowl, pour pasta and sauce. Gently stir in cheese and pine nuts.

1 lb spaghetti (or any other type of pasta)
4 -5 cups diced tomatoes
4 cups mozzarella cheese
3/4 cup basil
1/4 cup parsley
salt
pepper
olive oil

Steps:

  • Start to boil water and while doing so cut up 4-5 cups of tomatoes into 1/2 inch cubes.
  • Cut finely 3/4 cup of basil and 1/4 cup of parsley.
  • Take tomatoes basil parsley and 4 cups of mozzarella and put in a large bowl, add desired amount of salt and pepper, pour in olive oil until the mixture is submerged and can marinate.
  • By now the water should be boiled, so cook the 1lb of pasta while the mixture marinates.
  • Drain pasta, put back in the pot, add the tomato basil mozzarella etc mixture, mix it around and let it sit so the cheese melts -- serve.
  • Easy!

16 oz penne pasta

Steps:

  • Prepare the pasta per package directions.
  • Over medium high heat, melt the butter. Add the garlic and Italian seasoning. Flash cook the garlic, about 1 minute, and then add crushed tomatoes. Add heavy cream and bring to a simmer.
  • Add shredded Parmesan cheese, salt, pepper, and garlic powder, then immediately reduce to low heat and stir continuously, until the cheese melts and the sauce is smooth. Then stir in the basil giving it 2-3 minutes to wilt.
  • Remove from heat and toss pasta with the sauce. Garnish with additional parmesan and/or fresh basil. Enjoy!
