PUFF PASTRY DANISHES
Even though they're simple to make, these jam-filled pastries are right at home in a holiday brunch spread. They were my dad's favorite, so the recipe will always be close to my heart. -Chellie Helmke, Jackson Center, Ohio

Steps:
- Preheat oven to 425°. Beat first 4 ingredients until smooth; beat in 1 egg yolk., Mix water and remaining egg yolk. On a lightly floured surface, unfold each sheet of puff pastry; roll into a 12-in. square. Cut each into nine 4-in. squares; transfer to parchment-lined baking sheets., Top each square with 1 tablespoon cream cheese mixture and 1 rounded teaspoon jam. Bring 2 opposite corners of pastry over filling, sealing with yolk mixture. Brush tops with remaining yolk mixture., Bake until golden brown, 14-16 minutes. Serve warm. Refrigerate leftovers.

VERY EASY DANISH (JAM FILLED PUFF PASTRY)
After the price of Danish went up again at my local bakery, I thought, 'I could make that'. So here's a nice easy recipe for a yummy pastry treat using ready-made puff pastry. You can use any type of jam (jelly) that you like - ie - apricot, blueberry, plum, etc.

Steps:
- Grease an oven tray and preheat oven to 200 degrees Celsius (400 Fahrenheit).
- Cut 8 squares of equal size from the puff pastry sheets (or circles if you prefer).
- Place two teaspoons of jam (jelly) on 4 of the pastry squares. On the other 4 pieces, cut criss-crosses for ventilation and for prettiness.
- Press the criss-crossed pastry pieces on top of the jam covered pieces, and press together all around the edge using a little oil.
- Bake in oven for 20 minutes until puffed and golden.
- Allow to cool and enjoy.

KRINGLA (DANISH PUFF PASTRY)
Another of my mom's specialties - this makes a very flaky pastry that comes apart in your mouth. Not exactly low-fat, but one can't have everything. Light enough for summer, but rich enough for winter.

Steps:
- Heat oven to 350 degrees. To make the crust, cut the butter into the flour. Sprinkle with water and form into a dough. Shape into two 3" by 12" strips on an ungreased baking sheet.
- To make the topping, heat the butter and water to a full rolling boil in a saucepan. Remove from the heat and stir in flour and almond extract. Return to low heat and stir vigorously until it forms a ball (about 1 minute). Remove from heat and beat in eggs.
- Divide the topping in half and spread over crusts. Bake for 1 hour until brown and crispy.
- While the kringla is baking, make the icing. Sift the powdered sugar. Stir in milk and vanilla until smooth.
- After the pastries have cooled, top with the icing and let it set. When the icing has set, cut into strips.
