BEST EVER CHOCOLATE CAKE
This simple chocolate cake is better than boxed! Once you try this cake, you may never turn back!

Steps:
- Preheat oven to 350°F.
- Grease and flour your baking pan (see size information in the notes below) or line your muffin pan with paper liners for cupcakes.
- In a large bowl, combine sugar, flour, cocoa, baking powder, baking soda and salt.
- Add eggs, milk, oil and vanilla to dry mixture and mix with an electric mixer on medium for about 2 minutes. Gently mix in boiling water. Note: Your batter will seem thin, it's ok.. it's supposed to!
- Pour into pans and bake. Cool on wire racks.

- Preheat oven to 350 degrees F (175 degrees C). Grease and flour two nine inch round pans.
- In a large bowl, stir together the sugar, flour, cocoa, baking powder, baking soda and salt. Add the eggs, milk, oil and vanilla, mix for 2 minutes on medium speed of mixer. Stir in the boiling water last. Batter will be thin. Pour evenly into the prepared pans.
- Bake 30 to 35 minutes in the preheated oven, until the cake tests done with a toothpick. Cool in the pans for 10 minutes, then remove to a wire rack to cool completely.

- Preheat toaster oven to 350.
- While coring and slicing apples (you can peel them but it isn't necessary -- especially for organic apples), melt butter in a 1-cup stainless steel measuring cup (or any oven-safe small dish in the toaster oven as you are preheating it for baking. Remove from toaster oven and add 1/2 cup flour (can use Pamela's Gluten Free baking mix) and 1/4 cup sugar to the butter. Add egg, if desired.
- Fill a stainless steel breading tray (available at amazon.com or williams-sonoma and a great size for cooking or baking in a toaster oven) with thinly sliced apples. Sprinkle lemon juice over apples, if desired.
- Mix a little less than 1/4 cup white sugar wirh 1 to 1-1/2 teaspoons of cinnamon OR cardamon and sprinkle this over the apples.
- Sprinkle th butter, flour and sugar mixture over the apples.
- Return the stainless steel breading tray to the preheated toaster oven and set timer for 20 minutes at 350 degrees. At 20 minutes, check to see if the apples are soft enough and if the topping is cooked enough. Bake for an additional 5-20 minutes until the topping is cooked well enough.
- Let cool. Serve with ice cream, if desired.

Steps:
- sift together dry ingredients [pressing through a fine sieve is fine] into a 9 inch square pan. Blend.
- Make 3 holes with a spoon and add oil into 1st, the vinegar in the 2nd and vanilla in the 3rd.
- Pour 1 cup cold water over all and whisk vigorously.
- Bake at 350° for 30 minutes. [325° for a glass pan].
- Let cool and frost.
- Vanilla Frosting: Heat 2-3 TBS of cream and let cool; blend with with softened butter and powdered sugar to taste. Add a splash of vanilla.
- Easy Chocolate Frosting: melt butter and semisweet chocolate morsels [in a bowl over a pan of hot water. Remove, add powdered sugar and vanilla. Refrigerate. Whip with a mixer to add air and lighten - then frost cake.
