VERMOUTH ROYALE
Bubbly, citrus-forward and refreshing, the Vermouth Royale is just as lovely served in the dead of winter as it is poolside during the summer. If you don't have a muddler, the business end of a wooden spoon or tapered rolling pin work just as well. Since crème de cassis can quickly skew a cocktail saccharine, the Vermouth Royale starts with a half-ounce. That said, if your preference for sweetness skews a touch higher, feel free to use up to three-quarters of an ounce of crème de cassis.

- Add the lime wedges, one of the lemon peels, sugar and salt to the bottom of a cocktail shaker. Use a muddler (or the end of a wooden spoon) to lightly smash and release the lime's juices and the lemon's oils and to dissolve the sugar and salt.
- Add the vermouth and crème de cassis, and fill the shaker with ice. Cover and shake until very cold, then strain into a Collins glass filled with ice. Top with sparkling wine and garnish with the second lemon peel.

- Combine hibiscus flowers and bay leaves in a small bowl. Bring 5 cups water to a boil in a small saucepan and pour over hibiscus flowers and bay leaves to cover. Let sit 8 hours (overnight works well), then strain through a fine-mesh sieve into a large measuring glass or small bowl; discard solids. Cover and chill tea until cold, at least 1 hour. Do ahead: Tea can be made 5 days ahead. Keep chilled.
- Bring raw sugar, bay leaves, and 2 cups water to a simmer in a small saucepan, stirring to dissolve sugar. Remove from heat and let cool.
- Strain simple syrup through a fine-mesh sieve into a measuring glass or small bowl; discard bay leaves. Cover and chill until cold, at least 1 hour. Do ahead: Simple syrup can be made 5 days ahead. Keep chilled.
- Stir vermouth, lime juice, pickle brine, bitters, 2 oz. hibiscus tea, and ½ oz. simple syrup in a glass to combine. Add ice to fill and top off with sparkling wine. Garnish with bay leaves.

- The Negroni. Sometimes a bartender creates a drink, and sometimes a customer does. In this case, the Negroni was created at Bar Casoni in Florence sometime in the early 1920s when Count Camillo Negroni ordered an Americano — sweet vermouth, Campari and club soda — with gin in place of soda.
- The Martini. Asking about the origin of the Martini may result in a very long and confusing string of explanations. It’s hard to say that the Martini was ever really “created.”
- The Adonis. This cocktail was named after the 1884 Broadway show by William Gill called “Adonis,” often cited as the first Broadway musical. While the show was in production, the Waldorf-Astoria Hotel created this cocktail in its honor.
