Vietnamese Beef Noodle Salad Bowls image

One of the best cold Vietnamese dishes has to be these Vietnamese beef noodle bowls. Each bowl is filled with rice vermicelli noodles and tender marinated beef strips. It is then loaded up with as many fresh herbs and vegetables as you want and at the end, tied together by an amazing traditional Vietnamese dressing (nuoc mam cham).

400 gm beef flank steak or whatever you can afford, (cut into thin strips (Note 1) )
1 tbsp oil
300 gm rice stick / vermicelli (Dong Guan style)
Vietnamese dipping sauce
2 tsp oyster sauce
2 tsp soy sauce
2 tsp sesame oil
2 garlic cloves, (finely chopped)
5 - 6 lettuce leaves, (shredded)
1 cucumber, (roughly chopped in matchsticks)
250 gm bean sprouts
1/4 bunch coriander, (roughly chopped)
handful of mint leaves ((optional))
Vietnamese pickled carrots
roasted peanuts, (crushed (optional))

Steps:

  • Make the Vietnamese dipping sauce, in advance if possible (e.g. the day before). Cover with cling wrap and set aside until needed.
  • Combine all the marinade ingredients in a bowl. Mix in the beef strips and set aside.
  • Prep the vegetables.
  • Cook your rice noodles as directed on the packaging and leave it in a strainer until needed.
  • Bring a large fry pan or skillet to high temperature. Add 1 tbsp of oil and flash fry the beef strips until medium/medium-rare.

100g / 4 oz dried vermicelli noodles ((Note 1))
2 cups white or green cabbage (, shredded)
1 1/2 cups shredded carrot ((1 medium carrot))
1 1/2 cups bean sprouts
2 green onions (, finely sliced)
1/2 cup coriander/ cilantro leaves
2 tbsp light soy sauce
2 tbsp rice wine vinegar
1 1/2 tsp sugar
1 1/2 tbsp grapeseed oil ((or any other neutral oil))
1 garlic clove (, minced)
1 birds eye chilli (, finely minced )
Fried Asian Shallots (, to garnish (optional))
Red chilli (, finely sliced)

Steps:

  • Combine dressing ingredients in a jar and shake well to combine. Set aside for 5 minutes for the flavours to infuse.
  • Prepare vermicelli noodles per packet directions (usually soak in warm or boiling water 2 minutes). Drain well then set aside for 10 minutes to drain off exces water. Turn out onto tea towel if necessary to dry more (watery noodles = watery flavour).
  • Combine vermicelli noodles with remaining salad ingredients.
  • Just prior to serving, toss through dressing. Garnish with Fried Asian Shallots if you wish.

1 tomato, chopped
½ cup chopped green bell pepper

This light and fresh Asian salad filled with cucumber, carrot and bean sprouts is a tangy side dish for grilled meats and poultry or eaten as a main dish on its own.

Number Of Ingredients 12

12 ounces thin Asian vermicelli noodles such as rice stick or mung bean
2 carrots (shredded)
2 cucumbers (seeded and shredded)
4 green onion (chopped)
1 1/2 cups fresh bean sprouts
1/3 cup chopped cilantro
1/2 cup fish sauce
1/2 cup seasoned rice vinegar
3 tablespoons sugar
2 cloves garlic (pressed or minced)
1/4 teaspoon crushed red pepper
Lime

Steps:

  • Soften the vermicelli noodles in a large bowl by covering with boiling water and soaking for 3-4 minutes or until tender. Rinse under cold water, drain, and add to a large bowl. Add the shredded carrots, cucumbers, bean sprouts and chopped cilantro to the noodles.
  • In a glass jar fitted with a lid or a bowl, mix together the fish sauce, rice vinegar, sugar, garlic and crushed red pepper. Pour 3/4 of the dressing over the noodles and toss to coat. Add more dressing if desired. Sprinkle with more cilantro and green onion and a squeeze of lime if desired. Salad can be made ahead and refrigerated overnight, however if making ahead, add the cilantro just before serving.

2 celery stalks, chopped
6 oz ripe olives, sliced
4 oz pimientos, diced (optional)
1 green pepper, chopped
12 oz vermicelli, cooked and drained

Steps:

  • 1. Cook and drain vermicelli; rinse well in cold water. Add all chopped ingredients to vermicelli. Mix well.
  • 2. Dressing for Vermicelli: Mix 3 T. Accent, 3 T. oil, and 3 tsp. lemon juice together very well. Add to 1 1/2 cups mayonnaise. Mix all ingredients very well and pour over Vermicelli.
  • 3. This gets better with age; keeps well in refrigerator. ENJOY!

1 boneless rib eye steak (or steak of choice)
oil
2-4 bundles of vermicelli
1 avocado, sliced
1 pint mini heirloom or cherry tomatoes, sliced in half
2 mini cucumbers, shredded
mixed fish sauce to taste, see below
1 clove of garlic
1 red bird's eye chili
5 tablespoons sugar
juice of 1/2 lime (or to taste)
1 3/4 cups of water
1/4 cup fish sauce

Steps:

  • An hour before you want to eat, bring your steak to room temperature. When ready to cook, pat your steak dry with paper towels and generously season both sides of the steak with salt and pepper. Heat a cast iron pan on high until nearly smoking. Add a tiny slick of oil and place your steak in the middle of the pan and cook, without moving for 2-3 minutes. Flip and cook for another 2-3 minutes. Remove from the pan and let rest for 10 minutes while assembling your bowls.
  • Cook the vermicelli according to the package, rinse in cold water and drain well. Divide amongst two bowls. Top with tomatoes, avocado and shredded cucumbers. Cut the steak against the grain and arrange on the noodles. Serve with fish sauce, to taste.
  • Crush the garlic, chili and sugar together in a mortar and pestle until the garlic and chili are crushed to tiny pieces and the sugar is spicy and fragrant. Dissolve the sugar, garlic and chili mixture with the water then add the lime juice. Mix well then add the fish sauce. It's best to let the fish sauce sit in the fridge for a day or so for the flavors to meld before using.

1 teaspoon olive oil
4 teaspoons salad oil
1 teaspoon Accent seasoning
3 teaspoons fresh limes or 3 teaspoons fresh lemon juice
1 cup celery, chopped
1 green pepper, chopped
1 bunch green onion, chopped, all parts
1 (2 ounce) jar pimiento, drained and chopped
1 (3 7/8 ounce) can black olives, drained and chopped
2 cups mayonnaise
1 (10 ounce) package frozen peas, unthawed
fresh coarse ground black pepper
beau monde seasoning
garlic salt or garlic powder

Steps:

  • Boil vermicelli in salted water with 1 T oil added.
  • Don't overcook.
  • Drain and blanch in cold water.
  • Marinate vermicelli overnight in remaining oil, accent and lemon or lime juice.
  • Next day, add all other ingredients and toss.
  • Season to taste.
