VIETNAMESE BEEF NOODLE SALAD BOWLS
One of the best cold Vietnamese dishes has to be these Vietnamese beef noodle bowls. Each bowl is filled with rice vermicelli noodles and tender marinated beef strips. It is then loaded up with as many fresh herbs and vegetables as you want and at the end, tied together by an amazing traditional Vietnamese dressing (nuoc mam cham).

- Make the Vietnamese dipping sauce, in advance if possible (e.g. the day before). Cover with cling wrap and set aside until needed.
- Combine all the marinade ingredients in a bowl. Mix in the beef strips and set aside.
- Prep the vegetables.
- Cook your rice noodles as directed on the packaging and leave it in a strainer until needed.
- Bring a large fry pan or skillet to high temperature. Add 1 tbsp of oil and flash fry the beef strips until medium/medium-rare.

- Combine dressing ingredients in a jar and shake well to combine. Set aside for 5 minutes for the flavours to infuse.
- Prepare vermicelli noodles per packet directions (usually soak in warm or boiling water 2 minutes). Drain well then set aside for 10 minutes to drain off exces water. Turn out onto tea towel if necessary to dry more (watery noodles = watery flavour).
- Combine vermicelli noodles with remaining salad ingredients.
- Just prior to serving, toss through dressing. Garnish with Fried Asian Shallots if you wish.

This light and fresh Asian salad filled with cucumber, carrot and bean sprouts is a tangy side dish for grilled meats and poultry or eaten as a main dish on its own.

- Soften the vermicelli noodles in a large bowl by covering with boiling water and soaking for 3-4 minutes or until tender. Rinse under cold water, drain, and add to a large bowl. Add the shredded carrots, cucumbers, bean sprouts and chopped cilantro to the noodles.
- In a glass jar fitted with a lid or a bowl, mix together the fish sauce, rice vinegar, sugar, garlic and crushed red pepper. Pour 3/4 of the dressing over the noodles and toss to coat. Add more dressing if desired. Sprinkle with more cilantro and green onion and a squeeze of lime if desired. Salad can be made ahead and refrigerated overnight, however if making ahead, add the cilantro just before serving.

- 1. Cook and drain vermicelli; rinse well in cold water. Add all chopped ingredients to vermicelli. Mix well.
- 2. Dressing for Vermicelli: Mix 3 T. Accent, 3 T. oil, and 3 tsp. lemon juice together very well. Add to 1 1/2 cups mayonnaise. Mix all ingredients very well and pour over Vermicelli.
- 3. This gets better with age; keeps well in refrigerator. ENJOY!

- An hour before you want to eat, bring your steak to room temperature. When ready to cook, pat your steak dry with paper towels and generously season both sides of the steak with salt and pepper. Heat a cast iron pan on high until nearly smoking. Add a tiny slick of oil and place your steak in the middle of the pan and cook, without moving for 2-3 minutes. Flip and cook for another 2-3 minutes. Remove from the pan and let rest for 10 minutes while assembling your bowls.
- Cook the vermicelli according to the package, rinse in cold water and drain well. Divide amongst two bowls. Top with tomatoes, avocado and shredded cucumbers. Cut the steak against the grain and arrange on the noodles. Serve with fish sauce, to taste.
- Crush the garlic, chili and sugar together in a mortar and pestle until the garlic and chili are crushed to tiny pieces and the sugar is spicy and fragrant. Dissolve the sugar, garlic and chili mixture with the water then add the lime juice. Mix well then add the fish sauce. It's best to let the fish sauce sit in the fridge for a day or so for the flavors to meld before using.

- To make the noodles, bring a large pot of salted water to boil (at least 10 cups to cover the noodles). Once to a boil, add noodles and break up with a utensil. Cook for 7 minutes (or until desired texture). Strain thoroughly under cold water and transfer to a very large bowl. Toss with 1 tablespoon of toasted sesame seed oil to prevent sticking and set aside.
- In a large skillet, drizzle in avocado oil. Bring to medium-high heat and add green beans. Cook for about 8 minutes until they are bright green and tender. Lower the heat to medium and add the shallots, nutritional yeast, and black pepper. Continue to cook, mixing often, for 2 minutes. Add the tamari or soy sauce, rice vinegar, and 1 cup of carrots. Cook for only a minute longer, mixing thoroughly. Transfer the mixture to the large bowl of noodles and toss to combine. Let cool while you make the dressing.
- To make the dressing, combine the fresh lime juice, agave syrup, chilli paste or sriracha, sliced pepper, garlic, and tamari or soy sauce. Whisk vigorously until combined.
- When ready to serve, add the remaining chopped carrots, cilantro, Thai basil, mint, green onions, lettuce, cabbage, and red bell pepper. Pour over the dressing and using clean hands to mix well to combine. Transfer to serving bowl(s) and garnish with a hefty sprinkling of crispy onions, chopped cashews, and a slice of lime to squeeze over top. Sprinkle over some of the reserved fresh herbs and enjoy immediately.
