MARINATED VENISON STEAKS

Marinated Venison Steaks image

"Thanksgiving here is about hunting rather than football," said Errol Rice of the Montana Stockgrowers Association. The season for hunting big game comes to a close in the last, best place on the Thanksgiving weekend, and those who have not yet bagged a buck are known, said Dennis Konopatzke, the proprietor of Great Northern Brewing Company in Whitefish, to rush their holiday dinners in order to get out to the woods to hunt. You'll find huckleberries on Thanksgiving tables in Montana, Mr. Konopatzke added, or the Norwegian cured fish known as lutefisk, or pork pies and stuffed pasties, all nods to the state's history of settlers from afar. But game is the game. What follows is a recipe honed over the years by the members of the Rocky Mountain Elk Foundation for a marinade that works on wild venison perfectly and most other proteins as well. Broil some steaks and pair the result with traditional Thanksgiving side dishes.

VENISON STEAK MARINADE

Venison Steak Marinade image

This is the only steak my family will eat. They do not even like NY strip any more. We have our meat processor cut our venison steaks to about 1 inch thick, then I marinate and grill to medium rare. Better than beef and better for you too! Our traditional family Christmas Eve dinner menu is always venison steak and shrimp scampi!

EMILY'S MARINATED VENISON STEAKS

Emily's Marinated Venison Steaks image

I threw this together one afternoon, as we needed to use up the venison we had in our freezer. We don't like the 'gamey' taste of some meats, and this marinade did the trick! I find it best to have the meat marinate overnight so it really takes in the flavors.

Number Of Ingredients 12

¼ cup Worcestershire sauce

2 (4 ounce) venison steaks

Steps:

  • Whisk Worcestershire sauce, soy sauce, lime juice, onion, red pepper flakes, dry mustard, salt, thyme, black pepper, garlic, and hot pepper sauce together in a bowl; pour into a resealable plastic bag. GRILLED VENISON STEAKS

If you're a big game hunter, you should know how to grill a venison steak. First off, it's important to know that wild red meat can cook faster than beef because it's leaner. Number Of Ingredients 35

Salt and Pepper Seasoning
4 sirloin steaks, cut 3/4-1 inch thick
Kosher salt
Freshly ground black pepper
Vegetable oil for brushing
Cajun Rub
4 sirloin steaks, cut 3/4-1 inch thick
Kosher salt
Freshly cracked black pepper
1 recipe Cajun Dry Rub (see below)
Vegetable oil for brushing
Mix in a small bowl
5 tbsp. paprika
1 tbsp. garlic powder
1 tbsp. onion powder
1 tbsp. kosher salt
2 tbsp. freshly ground black pepper
2 tsp. cayenne pepper
1 tsp. red pepper flakes
Spicy Orange Marinade
4 sirloin steaks, cut 3/4-1 inch thick
1 recipe Spicy Orange Steak Marinade (see below)
Vegetable oil for brushing
Kosher salt
Freshly ground black pepper
Combine in a Blender
1 tsp. orange zest
1/2 cup orange juice
4 tbsp. olive oil
6 cloves garlic
2 tbsp. red pepper flakes
2 tbsp. fresh oregano leaves (or 1 tsp dried oregano)
2 tsp. kosher salt
2 tsp. freshly ground black pepper
Blend until smooth

Steps:

  • Salt and Pepper Preparation
  • Season the steaks liberally on both sides with salt and pepper.
  • Cajun Rub Preparation
  • Season the steaks with salt and pepper. Rub the steaks liberally with the Cajun Dry Rub. You can let them sit in the fridge up to an hour like this or cook them right away.
  • Marinade Preparation
  • Place the steaks in a baking dish or a resealable bag. Add the marinade. Marinate in the refrigerator for at least 1 hour and up to 12 hours. Remove the steaks from the marinade, letting the excess drip off. Season the steaks lightly with salt and pepper.
  • To Grill
  • With a basting brush, brush both sides of the steaks lightly with the vegetable oil and then place the steaks on the grill.
  • As with all grilling, let the grill do the work. Don't move the steaks at all until they release easily from the grill, about 4 minutes. Flip the steaks and grill on the second side for 3-4 minutes.
  • Use an instant-read thermometer to tell you when they're done: insert the thermometer horizontally into the steaks from the shorter side.
  • Remove the steaks from the grill at 125° for medium rare and 130° for medium.
  • Set aside to rest for 10 minutes before serving.

DEER STEAK MARINADE & HOW TO GRILL DEER MEAT

Deer Steak Marinade & How to Grill Deer Meat image

This deer steak marinade is delicious for grilling or frying on the stovetop. I'm also sharing how to grill deer steaks, one of our favorites on how to cook deer steak.

Provided by Jessica Burgess

Categories     Main Course

Number Of Ingredients 9

2 1/2 inch-thick deer steaks
1 cup soy sauce
3/4 cup worcestershire sauce (We use Lea & Perrins)
1/3 cup brown sugar
1 teaspoon garlic powder
1 teaspoon onion powder
5 dashes hot sauce (or per taste)
salt and pepper to taste (Remember soy sauce has a LOT of salt already)
2 Tablespoons melted butter

Steps:

  • In a bowl, mix together soy sauce, Worcheshire sauce, brown sugar, garlic powder, onion powder, hot sauce, and salt and pepper.
  • Place steaks in gallon size ziptop bag and pour marinade over steaks, pushing out air, and sealing the bag.
  • Let marinate in the refrigerator for at least one hour, preferably overnight, moving the bag around often to make sure all steaks sit in marinade at some point.
  • When ready to cook, remove steaks from the refrigerator and bring to room temperature, or as close as possible. (Do not microwave.)
  • Preheat grill to high heat and place steaks over the hot part of the grill, and grill on each side for 3-4 minutes.
  • Pull steaks off of the grill, coat with melted butter and let rest for 3-4 minutes.
  • Steaks will be a "medium" steak at this cook time. If you prefer steaks that are well done, cook on the grill an additional minute until steak reaches desired "doneness".

Time 5h18m

Number Of Ingredients 8

1 1/2 lbs. venison steak an 1 inch thick
3 Tablespoons olive oil
1 Tablespoon fresh lemon juice
1 Tablespoon Worcestershire sauce
1 Tablespoon soy sauce
2 teaspoons minced garlic
1/2 teaspoon ground pepper

  • Place venison in a large zip lock bag.
  • Pour marinade over steak and seal the bag.
  • Place bag in a flat casserole dish so that the steak lies flat.

VENISON STEAK

Venison Steak image

It's easy to cook a venison steak so that it's juicy, you just need to follow a few rules. A good marinade, a hot grill or pan and not overcooking is key.

Provided by Miss AK

Categories     Main Dish

Number Of Ingredients 4

about 1 and 1/2 lbs of venison steaks, at least 1 inch thick - here I'm using 4, 6oz. venison tenderloin medallions, you could also use medallions from the backstrap/loin (sometimes called chops)
1 batch All-Purpose Venison Marinade or acidic marinade of choice (you'll need about 1/2 cup marinade - see below*)
sea salt and fresh ground pepper, to taste
optional - extra lemon for serving

Steps:

  • Remove the steaks from their packaging and put them on a plate or in a bowl lined with a paper towel. This absorbs old blood while defrosting and creates a more palatable taste.
  • If you're marinating your steaks, add your venison to a zip-top bag or a bowl with a lid. Again, this recipe works best with steaks that are at least 1 inch thick, but you can use this method for a flank steak or a thinner cut, just alter the cooking time.
  • Pour your marinade all over the steaks and make sure everything is coated. Marinate for at least 3 hours, but up to overnight for really tender/flavorful steaks. If you aren't fond of the natural taste of venison, opt for a longer marinade time, the acid will develop the flavor so that it's more pleasing to you.
  • When you're ready to cook, remove the steaks from the marinade and let them come to room temperature for 20-30 minutes before you cook (this is safe to do, it ensures even cooking).
  • Pat the steaks dry, wiping off the marinade, but DO NOT rinse them off. If you haven't used a marinade, pat them very dry and season them all over with salt and pepper.
  • If you used my marinade recipe, there's no need to add more oil for the grill. If you didn't mariante, a drizzle of olive oil is nice for grilling. I like to pierce my steaks with a fork all over to further tenderize them (see the photo in the post), but this is optional.
  • If you're using a grill to cook, preheat it to medium-high, about 450-500F. If you're cooking in a pan, preheat a well-seasoned cast-iron pan over medium-high heat until it's very very hot.
  • Place the steaks on the grill or in the pan and cook for about 5-7 minutes per side (this will depend on steak thickness), but keep an eye on the internal temperature. You want to pull the steaks at 117-125F for a rare plus/medium-rare steak, it's very important not to overcook venison.
  • Once the steaks are cooked, remove them from the heat source at once and let them rest for at least 10 minutes before serving or slicing.
  • Season with a bit more salt (flakey salt if you have it) and pepper if desired and a light squeeze of lemon. Enjoy!
