Categories     Venison

Number Of Ingredients 15

4 pounds venison shoulder (or butt roast)
1/8 teaspoon kosher salt
1/8 teaspoon cracked black pepper
5-6 large carrots
1 medium yellow onion
4 garlic cloves
1/4 cup olive oil
1/3 + 1 1/2 cups quality beef stock
1 Tablespoon onion soup mix
1 fresh rosemary sprig
2 Tablespoons fresh parsley (chopped)
6 medium potatoes (peeled or unpeeled)
2 Tablespoons unsalted butter
3 Tablespoons flour
2 Cups Roast drippings and broth

Steps:

  • Generously season both sides of your thawed roast with kosher salt and cracked black pepper. Set it aside and turn on your oven to 250˚ F.
  • Peel and chop the carrots, slice the onion and peel the garlic cloves. In a large stockpot on the stove using medium-high heat, pour in 1/4 cup olive oil. When the oil is hot, lay down your onion rings and garlic cloves. Cook for 2 minutes on each side or until the onions are translucent and crispy brown edges are formed. Remove the onions and garlic and set aside in a large bowl.
  • Using the same method, sear your carrots for about two minutes per side. When the carrots start to show browning on both sides, pull them out and add them to your bowl of onions and garlic.
  • Make sure you still have some oil at the bottom of the pan before laying down one side of the seasoned meat into the pan. Place the roast in the stockpot to brown for one minute on each side before removing it to rest one more time.
  • Working quickly, whisk 1/3 cup of beef stock into the browned bits at the bottom of the stockpot and keep whisking until they are part of the stock. Turn off your heat.
  • Layer the bottom of the stockpot with the onions, carrots and garlic and top with the browned roast. Split the rosemary sprig in two and lay it on top of the meat followed by one tablespoon of onion soup mix per pound of meat. Also add the fresh chopped parsley and 1 ½ cups of quality beef stock.
  • Cover the pot and bake for 3 hours at 250˚ F.
  • At three hours, slide the pot out and carefully add the potatoes around the edge of the meat and on top of the carrots, onions and stock. Move the rosemary from the top of the meat and poke it down into the juices. Slide the covered pot back into the oven and bake for an additional 3 hours at 250˚ F.
  • When the six hours has ended, carefully remove the stockpot from the oven, take out the roast, and place it on a platter. Cover it with foil so it stays warm. Remove all of the vegetables and place them in a bowl and cover with foil. Strain the remaining stock using a fine mesh strainer or a gravy separator and pour it into a liquid measuring cup and set it aside.
  • To make gravy, add the butter to the same pot and allow it to melt. Whisk in the flour and form a paste. Allow it to cook for 1 minute and then whisk in your reserved stock and drippings. Whisk just until it is thickened and turn off the heat.
  • Shred the meat and serve with carrots, potatoes and gravy.

It wasn't until years later we revealed the truth of the roast's origins! Serve roast, vegetables and gravy over mashed potatoes.

INSTANT POT® VENISON POT ROAST

Instant Pot® Venison Pot Roast image

Venison pot roast used to be a weekend only thing for me due to the 10 hours of slow cooking it took to get it tender. Then there was the guess work of when to add the veggies. If you added them in the beginning, they became mush. If you waited too long to add them, they were underdone and to get them done, the venison got overdone. Instant Pot® to the rescue! The end result is perfectly tender venison roast and perfectly crisp-tender veggies, all in 3 hours.

VENISON POT ROAST AND GRAVY

Venison Pot Roast and Gravy image

This is my favorite way to prepare a venison roast, it's quick and easy, and even works with the not-so-tender cuts.

Time 1h30m

Yield 4

Number Of Ingredients 7

1 pound boneless venison roast, thinly sliced across the grain
1 tablespoon minced garlic
1 tablespoon grill seasoning
1 teaspoon chili powder
2 cups beef broth
¼ cup butter
¼ cup flour

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Season the venison with garlic, grill seasoning, and chili powder. Place into a casserole dish, and pour in the beef broth. Cover the dish with a lid, and bake in preheated oven until the venison is tender, about 1 hour.
  • Meanwhile, melt the butter in a saucepan over medium heat. Once the butter begins to bubble, whisk in the flour. Cook while whisking constantly until the flour turns a golden yellow, and the bubbling slows, about 10 minutes.
  • When the venison has finished cooking, whisk 1 1/2 cups of the broth from the venison roast into the flour roux, and simmer for 15 minutes, whisking frequently. Add the venison to the gravy and serve.

ROAST VENISON

Roast venison image

This is a phenomenally delicious way to roast venison, and the method is foolproof, too. Protected by the fatty, crispy prosciutto as it cooks, then served blushing with this outrageously good, silky sauce, it's hard to beat.

Provided by Jamie Oliver

Categories     Christmas     Venison     Winter warmers

Time 3h15m

Yield 10

Number Of Ingredients 19

SAUCE
1 kg venison bones, (ask your butcher)
1 red onion
1 carrot
1 stick of celery
1 tablespoon plain flour
½ a bottle of Barolo
25 g quality dark chocolate (70%)
25 g unsalted butter
VENISON
1 level tablespoon coffee beans
1 teaspoon white peppercorns
2 sprigs of fresh rosemary
2 cloves of garlic
1 orange
2 tablespoons balsamic vinegar
2 x 750 g venison loin fillets, trimmed
14 slices of higher-welfare prosciutto
olive oil

Steps:

  • Preheat the oven to 180ºC/350ºF/gas 4.
  • Place the venison bones in a large, deep roasting tray. Peel the onion, wash the carrot, then roughly chop with the celery, add to the tray with the flour and toss together.
  • Roast for 1 hour, then use tongs to transfer everything to a big pot. Add enough boiling kettle water to the tray to scrape up the sticky goodness from the base, then pour that into the pot with the wine.
  • Just cover with boiling water, then simmer on a low heat for 2 hours, skimming the surface and topping up the water occasionally, if needed.
  • Carefully remove the bigger bones, then strain the sauce through a coarse sieve into a pan. Simmer on a low heat to the consistency of your liking, then turn the heat off.
  • Get your meat out of the fridge and up to room temperature before you cook it.
  • Crush the coffee beans and peppercorns in a pestle and mortar until fine, pick and pound in the rosemary leaves, then peel and crush in the garlic to make a rough paste.
  • Finely grate in the orange zest and muddle in the balsamic. Cut each venison loin in half to give you four pieces, then rub the paste all over the meat.
  • Divide the prosciutto between two large sheets of greaseproof paper, slightly overlapping the slices.
  • Place two pieces of venison on top of each other on each one, spooning the meat so the thick and thin ends even each other out. Roll up in the prosciutto, tucking in the ends, tie with string at regular intervals to secure the prosciutto in place, then put on a roasting tray.
  • To cook, drizzle the loins with a little oil, then roast in a preheated oven at 180ºC/350ºF/gas 4 for 30 minutes, turning every 10 minutes. Remove and rest for 10 minutes.
  • Meanwhile, bring the sauce back up to a simmer, snap in the chocolate, add the butter, and whisk until smooth. Leave for a few minutes, then season to perfection.
  • Remove the string from the venison, then carve and serve with the sauce. Delicious with celeriac mash and steamed seasonal greens.

SLOW COOKER VENISON ROAST RECIPE

Slow Cooker Venison Roast Recipe image

▲ This is the way to get a flavorful, tender and juicy venison roast. Using the slow cooker is the easiest way to make the perfect venison roast every time.

Provided by Miss AK

Categories     Main Dish

Time 8h15m

Number Of Ingredients 15

3-4lb venison roast (shoulder or neck is best, bone-in or out is fine - see notes)*
1 and 1/2 tsp. salt, divided
1 Tbsp. high heat tolerant cooking fat (duck fat, avocado oil, clarified butter/ghee)
1 and 1/2 cups venison stock or beef stock*
2 Tbsp. tomato paste
1 Tbsp. balsamic vinegar
1 and 1/2 tsp. Worchestershire sauce
1 tsp. dried thyme
1 tsp. dried parsley
1 tsp. pepper
5 garlic cloves, minced
1 large, yellow onion, cut into large pieces
1 lb. baby yellow potatoes
4-5 carrots, peeled and cut into 2-inch pieces
2 Tbsp. tapioca starch, arrowroot powder or cornstarch

Steps:

  • Remove your roast from the packaging and dry thoroughly with a paper towel to remove any liquid or old blood. Then, sprinkle 1/2 teaspoon of the salt all over the meat.
  • Heat the oil/fat in a large skillet over medium-medium high heat and sear the roast on all sides until brown. If you go to flip the meat and it's sticking to the pan, it's not ready to be flipped. When a sear forms, it will release from the skillet.
  • Once seared all over, remove the roast from the skillet and place it in the bottom of a slow cooker.
  • Pour in the stock or add frozen stock to the bottom of the slow cooker. Then, add the tomato paste, balsamic vinegar, Worchestershire sauce, thyme, parsley, pepper, half of the garlic and 1/2 teaspoon of the salt. Rub that all over the meat the best you can.
  • Then, add the onions, carrots and potatoes on top. Sprinkle on the remaining salt and garlic.
  • When you're ready to serve, remove the meat and shred it on a board. Toss the veggies in the juice and move them to a platter to add with the pulled venison roast. You can halve the potatoes if you like.
  • If you want gravy, mix the cornstarch (or tapioca or arrowroot powder) with a bit of the strained pot drippings to make a slurry. Then, add the rest of the drippings and the slurry to a small saucepan and reduce over medium-low heat for 10 minutes.
  • Serve & ENJOY!

2 tablespoons ground coriander
2 tablespoons ground cumin
Salt and pepper
Salt and pepper
1/4 cup olive oil
8 ounces new potatoes, halved

3 sprigs thyme
2 serrano chiles, slit lengthwise but left whole

POT-ROASTED VENISON WITH SHREWSBURY SAUCE

Pot-roasted Venison with Shrewsbury Sauce image

As the title suggests, this is a warming, fragrant and very inviting supper dish that will do wonders to cheer up the long winter nights. Serve it with clouds of fluffy mashed potato which will absorb the sublimely good sauce. You can, if you wish, use beef instead of venison, in which case I would choose brisket or silverside.

Yield Serves 4

Number Of Ingredients 17

2 lb (900 g) boneless, tied venison joint
salt and freshly milled black pepper
1 tablespoon groundnut oil
1/2 oz (10 g) butter
1 small carrot, chopped
1 small onion, chopped
a few thyme sprigs
1 bay leaf
1/2 bottle (37.5 cl) red wine, something light like Beaujolais
a grating of nutmeg
4 level tablespoons good-quality redcurrant jelly
2 tablespoons Worcestershire sauce
1/2 tablespoons lemon juice
1/2 oz (10 g) soft butter
1/2 oz (10 g) plain flour
1 rounded teaspoon mustard powder
salt and freshly milled black pepper

Steps:

  • First of all wipe the venison joint with kitchen paper and season the surface with salt and freshly milled pepper. Now heat up the oil and butter together in the casserole and when it is foaming hot add the meat to brown on all sides with the carrot and onion alongside it to brown as well. When everything is browned, add the thyme and bay leaf, wine, nutmeg and seasoning. Bring this up to a very gentle simmer, cover with a lid (if the lid is not really tight, place a sheet of foil under it and press down firmly to seal it). Give the meat an initial cooking time of 30 minutes. Then turn it over in the liquid, so that it will cook to an even colour, and give it a further 30 minutes. After that remove the meat to a warm plate, cover it with foil and keep warm. Now to make the sauce. Place a sieve over a bowl and strain the liquid through it, pressing the vegetables to extract their juices, then discard them. Next pour the liquid back into the casserole, boil it up and let it reduce slightly. Then add the redcurrant jelly and Worcestershire sauce and whisk it very thoroughly to dissolve the jelly. Now mix the softened butter, flour and mustard powder together to a paste then whisk this, in small pieces, into the sauce so that it thickens slightly and takes on a glossy appearance. Now add 1 tablespoon of the lemon juice, adding more if needed, taste and check the seasoning. Simmer the sauce gently for 3-4 minutes, then carve the venison and serve with the sauce spooned over.

  • Pour the pickle juice and water into your crockpot and turn it to high. Reserve the pickles. If you have some sort of wild game, chicken, or beef stock (or a light beer), dump some of that in too.
  • Cover your roast with salt and pepper and let sit for at least 15 minutes. Pour the remaining salt and pepper into the crockpot. Slice the pickles and add those to the pot.
  • Place a skillet over high heat and melt 2 oz. of butter. When it starts to bubble, set the roast in the skillet and sear it hard on all sides. When it is browned and slightly charred, move the meat to the crockpot. Pour in the remaining butter and cover the meat with water as needed.
  • When the liquid begins to bubble, reduce the crockpot heat to low—unless you want to eat relatively soon, then go on high. It will take about five hours to break down the meat on high, or about eight hours on low. I like to get a roast started on low in the morning before work to have it ready in time for dinner.

  • Bring the wine, allspice, black peppercorns and bay leaves to a boil. Turn off the heat and let the marinade cool to room temperature. When it’s cool, submerge the venison neck in the marinade and keep in the fridge overnight, or up to 4 days.
  • Mix the flour, paprika and cayenne (if using) together in a large bowl or shallow container large enough to hold the neck roast. Pat the meat dry with paper towels and salt it well. Coat it in the flour-paprika mixture. Heat the lard in a large Dutch oven or other heavy, lidded pot and brown the meat. With a typical neck roast you will need to cut it into two pieces to get it to fit the pot. Brown one piece and then remove while you brown the other. If you are using a bone-in neck, just turn the meat to brown all sides. When the meat has browned, remove it from the pot and set aside for a moment.
  • Preheat the oven to 325°F. Add the sliced onions to the pot and brown them well, stirring occasionally. This should take about 8 minutes. Add 2 cups of the marinade and bring it to a boil. Add the venison back to the pot, along with 2 cups of water. Bring to a simmer, cover the pot and cook in the oven for 1 1/2 hours.
  • After 1 1/2 hours have elapsed, add the root vegetables and celery and continue to cook for another 1 ½ hours, or until the meat is falling apart and the root vegetables are tender.
