ITALIAN MINESTRONE SOUP



Italian Minestrone Soup image

Nothing says more "comfort food" than thick, creamy Minestrone Soup.Italian Minestrone soup is made with seasonal veggies, legumes and small pasta shape or rice.

Number Of Ingredients 15

1 onion (, roughly chopped)
2 carrots (, roughly chopped)
2-3 selery ribs (, roughly chopped)
½ cup diced pancetta ((optional))
1 ½ cup pumpkin or butternut squash (, cut in cubes)
1 large potato or 1 ½ cup potatoes (, cut in cubes)
1 large tomato chopped or 10 cherry tomatoes (, cut in quarters)
1 small savoy cabbage (, roughly chopped)
1 can ((14 oz) borlotti beans)
⅓ cup ditalini pasta or other small pasta shape
Extra virgin olive oil
1 bay leaf
2 rosemary sprigs
1 garlic clove ((optional))
Salt to taste

Steps:

  • In a large pot add a generous drizzle of extra virgin olive oil, roughly chopped onion, carrots, celery, garlic clove, and pancetta cubes. Sautee on medium heat for a few minutes stirring a couple of times in the process.
  • Add potatoes, butternut squash, tomatoes, bay leaf, rosemary sprigs and a couple of pinches of salt.
  • Give a nice stir and add enough water to cover all the veggies.Bring to a boil and simmer on low heat for 40 minutes. Add more liquid if needed.
  • Past this time veggies will become super soft and will "melt" one into another creating delicious creamy texture.
  • Once veggies are cooked add chopped savoy cabbage or other leafy greens and drained canned beans. Add more water if needed. Give a nice stir and cook for another 15 minutes.
  • As a last step, add pasta or rice. Let cook for 5-15 more minutes depending on how long pasta or rice will take to cook.
  • If you're not planning to serve minestrone right away, don't add pasta or rice immediately.Instead, bring the soup to a boil when you're ready to serve it and then add pasta or rice.
  • Minestrone is ready to serve when pasta (rice) is cooked. I takes about 5-6 minutes for ditalini pasta and about 15 minutes for rice.
  • Serve hot or warm generously topped with fresh grated Parmesan cheese.

1 pound ground venison
1 onion, chopped
1 (14.5 ounce) can stewed tomatoes
2 (8 ounce) cans tomato sauce
3 cups water
1 tablespoon minced garlic
2 teaspoons dried basil
2 teaspoons dried oregano
1 teaspoon salt
½ teaspoon ground black pepper
1 (15 ounce) can pinto beans
1 (15 ounce) can green beans
1 carrot, chopped
1 zucchini, chopped
½ (16 ounce) package fusilli (spiral) pasta

Steps:

  • Brown venison, onion, and garlic over medium heat until meat is no longer pink. Add tomatoes, tomato sauce, water, and spices. Bring to a boil, and then simmer for about 30 minutes.
  • Stir in beans, carrots, and zucchini. Simmer soup for 90 minutes.
  • Add pasta, and cook until tender. Top individual servings with grated cheese, and serve.

2 tablespoons extra-virgin olive oil
1 large onion, diced
4 cloves garlic, minced
2 stalks celery, diced
1 large carrot, diced
1/3 pound green beans, trimmed and cut into 1/2-inch pieces (about 1 1/2 cups)
1 teaspoon dried oregano
1 teaspoon dried basil
Kosher salt and freshly ground pepper
1 28-ounce can no-salt-added diced tomatoes
1 14-ounce can crushed tomatoes
6 cups low-sodium chicken broth
1 15-ounce can low-sodium kidney beans, drained and rinsed
1 cup elbow pasta
1/3 cup finely grated parmesan cheese
2 tablespoons chopped fresh basil

Steps:

  • Heat the olive oil in a large pot over medium-high heat. Add the onion and cook until translucent, about 4 minutes. Add the garlic and cook 30 seconds. Add the celery and carrot and cook until they begin to soften, about 5 minutes. Stir in the green beans, dried oregano and basil, 3/4 teaspoon salt, and pepper to taste; cook 3 more minutes.
  • Add the diced and crushed tomatoes and the chicken broth to the pot and bring to a boil. Reduce the heat to medium low and simmer 10 minutes. Stir in the kidney beans and pasta and cook until the pasta and vegetables are tender, about 10 minutes. Season with salt. Ladle into bowls and top with the parmesan and chopped basil.

1 tablespoon vegetable oil
1 pound venison, cut into cubes
1 cup diced onion
1 (16 ounce) package frozen mixed vegetables
2 (14.5 ounce) cans peeled and diced tomatoes with juice
3 cups potatoes, peeled and cubed
4 cups water
1 tablespoon white sugar
2 teaspoons beef bouillon granules
1 teaspoon salt
½ teaspoon ground black pepper
½ teaspoon garlic powder
¼ teaspoon hot pepper sauce

Steps:

  • Heat oil in a stock pot or Dutch oven over medium high heat. Brown the venison in the hot oil. Add onion, cover pot and simmer over medium heat for 10 minutes, or until onions are translucent.
  • Stir the mixed vegetables, tomatoes and potatoes. Combine the water, sugar and bouillon, stir into the soup. Season with salt, pepper, garlic powder and hot pepper sauce. Cover and simmer for at least one hour, or until the meat is tender.

24 oz. jar marinara sauce ((I used Prego))
5 cups water
12 oz. pkg. frozen green beans ((I recommend using no more than one cup))
15 oz. can cannellini beans (white beans) (rinsed and drained)
4 to 6 oz. bag small pasta (like miniature elbow macaroni)
pepper (to taste)
parmesan cheese (grated, as desired for garnish)

Steps:

  • Heat frozen mixed vegetables in a large sauce pan; stir continuously. (See note below).
  • Add marinara sauce and water and bring to a boil.
  • Stir in green beans, white beans and pasta.
  • Cook until pasta is done, about 5-10 minutes.
  • Sprinkle generously with pepper.
  • Add parmesan cheese. (See note below).
  • Ladle soup into bowls and add additional parmesan cheese in individual servings, as desired.

1 onion, diced
3 tablespoons garlic, minced
1 tablespoon butter
2 cups venison, diced
1/2 cup carrot, diced
1/2 cup celery, diced
1 cup cabbage, chopped
1 (28 ounce) can tomatoes seasoned with basil garlic & oregano
2 1/2 cups water
3 beef bouillon cubes
1 cup frozen corn
1 teaspoon dried Italian seasoning
1 (16 ounce) can kidney beans
1 teaspoon Mrs. Dash seasoning mix
1 cup elbow macaroni (uncooked)
parmesan cheese (optional)

Steps:

  • Melt butter in large pot over medium high heat.
  • Saute onions and garlic til just tender.
  • Add vension and saute til cooked through.
  • Add the rest of the ingredients except for the uncooked pasta.
  • Cover, reduce heat and simmer for 15-20 minutes.
  • Add pasta.
  • Simmer for additional 10-15 minutes until pasta is done.
  • Serve topped with Parmesan cheese!

2 lb ground venison (plus ground pork)
1 Tablespoon Worcestershire Sauce
2 teaspoons garlic powder
2 teaspoons onion powder
1 pinch red pepper flakes
1 large egg
1/3 cup bread crumbs
2 teaspoons Creole Seasoning
6 Brioche Buns for serving
3 Tablespoons butter
Toppings: Sliced cheese, Lettuce, tomato and red onions (optional)

Steps:

  • Preheat the grill to medium-high heat,
  • In a medium bowl add the ground venison, Worcestershire sauce, garlic powder, onion powder, red pepper flakes, egg and bread crumbs. Mix together using your hands (using gloves if you prefer - otherwise, make sure to wash hands well before and after handling the meat.
  • Form patties using 2/3 cup of the meat mixture. First roll each into a nice and tight ball, then flatten each out using your hands.Lay the venison burger patties out on a baking sheet, season all over with the Creole Seasoning, then take them to the grill.
  • Lightly spray the grill with cooking spray or oil the grill grates with a little olive oil. When the grill is heated, carefully add the burgers. Allow them to cook for 4-5 minutes, then flip the burgers to cook the other side for another 4-5 minutes. Double check with a meat thermometer that the internal temperature in the center has reached at least 145°F for medium rare burgers. Add a slice of cheese for the final 1 minute of cooking time.
  • Melt the butter in a small bowl and brush over the inside of the brioche buns. Place these buns face down on the grill. Cook for about 2 minutes, until crispy and a nice char has formed.
  • Remove the buns and dress the burgers with toppings of your choice.
