VENISON CHILLI COTTAGE PIE



Venison chilli cottage pie image

Try this twist on cottage pie using venison instead of beef. If you don't fancy the spiced mash topping, you can swap that out, too, for a puff pastry lid

2 tbsp sunflower oil
800g diced stewing venison , haunch is a good cut to use if you dice your own
2 onions , finely chopped
5 garlic cloves , finely chopped
2 tsp cumin seeds
2 tsp cracked black pepper
2 tsp ground coriander
250ml red wine
600ml chicken or beef stock
2 tbsp cornflour mixed with a little cold water
1 lime , juiced and zested
50g 70% dark chocolate , grated
1kg mashing potatoes (such as King Edwards), peeled and quartered
150ml soured cream
1 red chilli , chopped
50g cheddar , grated

Steps:

  • Heat oven to 140C/120C fan/gas 2. Heat half the oil in a large flameproof casserole dish and fry the venison in batches until it has a dark caramelised crust, then transfer to a plate. Turn the heat right down, give the dish a quick wipe with some kitchen paper and add a little more oil, then fry the onions over a low heat for about 20 mins until caramelised. Stir in the garlic and spices, cook for a couple of mins, then add the venison back to the pan, stirring so all the spices coat the venison. Pour in the wine and stock and bring to the boil. Cover and cook in the oven for 2½ hrs until the meat is very tender.
  • Lift the venison out of pan and set aside on a plate. Reduce the sauce by two-thirds, whisk in the cornflour mix, then cook over a low heat for 5 mins until thickened and glossy. Tip the venison back in along with the lime zest and juice and the grated chocolate, stir everything together, check the seasoning and pour into a gratin dish or individual pie dishes and chill in the fridge. Can be made three days ahead and chilled for up to six months ahead and frozen.
  • To make the mash, boil the potatoes in salted water. Add the soured cream to a pan and gently heat. When the potatoes are tender, drain well, then either pass through a ricer into a bowl or mash them. Mix in the chilli, then slowly stir in the soured cream until you have a light, fluffy mash. Add a little seasoning and spread or pipe over the chilled chilli mix, then scatter over the cheese. Pop in the fridge until needed. Can be assembled up to a day before, or frozen for up to one month.
  • To cook the pie, heat oven to 180C/160C fan/gas 6. Bake for 45 mins until golden and bubbling, leave to sit for 10 mins and serve straight from the dish.

Finally a dish I'm happy to post! Definitely a family favorite and not hard to make. I use a deep dish pie pan to accommodate all of the ingredients.

1 pound venison steak, cut into 1-inch cubes
1 teaspoon garlic powder
1 teaspoon onion powder
1 pinch salt and ground black pepper to taste
2 tablespoons all-purpose flour
1 egg
2 teaspoons milk
2 tablespoons olive oil
½ large onion, diced
3 cloves garlic, chopped
¾ cup red wine
2 teaspoons Worcestershire sauce
1 (14 ounce) can beef broth
3 tablespoons cornstarch
⅓ cup water
3 large potatoes, cubed
3 large carrots, cubed
3 stalks celery, sliced
1 cup frozen corn
1 cup frozen peas
2 each 12-inch pie crusts
1 ½ cups fresh mushrooms, sliced

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a 9-inch, deep-dish pie plate.
  • Season venison with garlic powder, onion powder, salt, and pepper. Mix in flour to coat pieces. Combine egg and milk in a small bowl for egg wash and set aside.
  • Heat olive oil in a medium saucepan over medium heat. Add onion and garlic; saute until soft and translucent, 5 to 7 minutes. Turn heat to high and add venison; quickly brown the meat while stirring, making sure not to overbrown, 1 to 2 minutes. Remove mixture into a bowl and set aside.
  • Make gravy by deglazing the pan with red wine and Worcestershire sauce, scraping the browned bits from the bottom with a wooden spoon. Reduce until the pan is almost dry, 10 to 15 minutes. Reduce heat to low and add beef broth. Dissolve cornstarch with water in a bowl and pour into the broth, whisking constantly. Bring to a simmer and reduce heat; cook until thickened, about 5 minutes.
  • Meanwhile, fill a large bowl with ice and cold water. Bring a large pot of lightly salted water to a boil. Add potatoes, carrots, and celery and cook, uncovered, for 2 minutes. Drain in a colander and immediately immerse in ice water for several minutes to stop the cooking process. Drain.
  • Combine drained vegetables with venison mixture, corn, and peas in a large bowl. Mix thoroughly.
  • Line the prepared pie dish with 1 pie crust, trimming edges if needed. Place venison mixture into the pie crust, pour gravy over the top, spread mushrooms over, and cover with the other pie crust. Brush on egg wash and cut vents in the top.
  • Bake in the preheated oven until the crust is golden brown and you can see filling is bubbling, 45 minutes to 1 hour. If edges of crust are getting too dark, cover edges with aluminum foil until center crust has caught up. Let cool for 5 minutes before serving.

  • For the pastry, put the butter, flour and a pinch of salt in a large mixing bowl. With your fingertips, rub the butter into the flour until the mixture resembles breadcrumbs, then add just enough iced water to bring it together into a fairly firm dough. Form the dough into a rectangular shape, then roll out on a well floured surface to form a rectangle about 1cm thick. Fold the two short ends into the middle so they overlap like an envelope. Give the pastry a quarter-turn, then repeat the rolling/folding process five more times. Wrap the pastry, then rest it in the fridge for 30 minutes to an hour (see Make Ahead).
  • Put a large heavy-based casserole (one with a lid) over a high heat. Add half the dripping or oil and, when hot, add the bacon lardons. Fry for 4-5 minutes, stirring regularly, until golden, then use a slotted spoon to lift out onto a plate. Keep the pan on the heat, then add the cubed venison in a single layer (you might need to do this in batches) and brown until caramelised on all sides. Avoid shaking the pan and let the meat sizzle for several minutes before turning. Once it’s browned, lift it out and set it aside with the bacon.
  • Reduce the heat and add the remaining dripping/oil and the butter, followed by the onions, garlic, bay leaves, thyme, star anise and orange zest. Season, then cook, stirring regularly, for 10-12 minutes or until the onions begin to soften. Turn down the heat, cover and cook, stirring occasionally, for a further 30 minutes.
  • Heat the oven to 170°C/150°C fan/gas 3½. When the onions are extraordinarily soft and beginning to caramelise, return the venison, bacon and any resting juices to the casserole. Scatter over the flour and stir well. Cook for 2-3 minutes, then pour in the wine, stir well and bring to a simmer. Add enough stock to just cover the meat. Set the lid on slightly ajar, transfer to the oven and cook for 2½ hours. After that time, remove the casserole from the oven, lift out a piece of meat and check it’s tender and the sauce is rich (if it’s not, return to the oven for a further 30 minutes and check again). When the meat is tender, stir the pie filling gently, then taste, adjust the seasoning and leave it cool (see Make Ahead).
