This delicious, one-dish meal was designed to be most flavorful when made with ground venison, but it's also fabulous when made with other big game or even ground beef.

2 cups buttery mashed potatoes
1 pound lean ground venison (or other big game)
1 tablespoon canola oil
1 red onion, chopped
2 cloves garlic, minced
2 stalks celery, diced
½ cup diced red bell pepper
1 tablespoon Worcestershire sauce
½ teaspoon salt
¼ teaspoon pepper
2 eggs, beaten
1 cup cottage cheese
2 tomatoes, sliced
1 cup shredded Colby Jack or Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread mashed potatoes evenly in a 2-quart casserole dish; set aside. Brown the venison in a large skillet over medium-high heat until crumbly and no longer pink, set aside.
  • Heat the canola oil in the skillet, then stir in the red onion, garlic, celery, and red bell pepper. Cook until the onion has softened, about 3 minutes. Stir in cooked venison, and season with Worcestershire, salt, and pepper. Spoon mixture onto potatoes in the casserole dish.
  • Stir together eggs and cottage cheese in a small bowl; spread evenly over meat mixture. Top with tomato slices, and sprinkle with cheese.
  • Bake, uncovered, in preheated oven until set, about 20 minutes.

1/4 cup all-purpose flour
1 pound venison stew meat, cut into 1-inch cubes
3 tablespoons butter
4 to 5 cups water
2 bay leaves
2 teaspoons beef bouillon granules
3 tablespoons Worcestershire sauce
1 teaspoon salt
1/2 to 3/4 teaspoon pepper
5 medium potatoes, peeled and cubed
5 medium carrots, peeled and cut into 3/4-inch slices
1 medium onion, chopped
DILLED DUMPLINGS:
1 cup all-purpose flour
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon dill weed
1 large egg
1/2 cup whole milk

Steps:

  • In a large resealable plastic bag, combine flour and venison; shake to coat. In a Dutch oven, brown meat in butter. Add water; stir to loosen browned bits from pan. Add the bay leaves, bouillon, Worcestershire sauce, salt and pepper. Bring to a boil. Reduce heat; cover and simmer for 1 hour or until meat is tender. , Discard bay leaves. Add potatoes, carrots and onion. Cover and simmer for 25 minutes., For dumplings, in a large bowl, combine the flour, baking powder, salt and dill. Stir in the egg and milk just until moistened. Drop by tablespoonfuls onto simmering stew. Cover and simmer for 15 minutes (do not lift cover) or until a toothpick inserted in the center comes out clean.

A rich meal with homely dumplings, but using a lean meat!

Number Of Ingredients 30

350g cubed venison
2 carrots chopped roughly
5 florets cauliflower - minced
2 cloves garlic minced
1 leek - washed and finely chopped
1 glass good red wine
300ml water
stock cube - I used vegetable
worcester sauce - couple of dashes to taste
fresh rosemary - 2 sprigs
bay leaf
1tbsp flour
Oil for frying
350g cubed venison
2 carrots chopped roughly
5 florets cauliflower - minced
2 cloves garlic minced
1 leek - washed and finely chopped
1 glass good red wine
300ml water
stock cube - I used vegetable
worcester sauce - couple of dashes to taste
fresh rosemary - 2 sprigs
bay leaf
1tbsp flour
Oil for frying
150g butter chilled and cubed
200g flour
herbs -dried 1 tsp
1tbsp baking powder

Steps:

  • Warm oil in frying pan. Sprinkle flour over venison before browning, remove from pan and put to one side.
  • Add more oil to frying pan. When warm -add leeks, garlic and gently simmer for 5mins.
  • Add red wine
  • Dissolve stock into 300ml boiling and add to frying pan
  • Add venison back into pan with bay leaf and rosemary
  • Place everything into a ovenproof dish with lid. Place in pre-heated oven at 150/120 fan for three hours
  • After 2.75 hours Rub chilled butter into flour, add herbs and 150ml water to make dough. Roll into Ping-Pong ball size balls and place around dish (see picture). Remove lid. Return to oven for 20 mins.
  • Finally place pan under grill to brown the dumplings. Serve and enjoy!

2 pounds venison (cubed)
1 cup yellow or white onions (chopped)
3 medium carrots (cut into 1/4-inch slices)
1/4 cup celery (finely chopped)
3/4 teaspoon salt
1/2 teaspoon ground black pepper
2 teaspoons dried parsley
1/2 teaspoon dried thyme
1/4 teaspoon dried crushed rosemary
1 cup dry red wine
3/4 cup beef stock
5 slices bacon (chopped)
1 tablespoon all-purpose flour
1 teaspoon tomato paste
1 1/2 cups mushrooms

Steps:

  • Gather the ingredients.
  • Put the venison on one side of a large baking dish. Put the onions, carrots, and celery on the opposite side. Sprinkle the salt, pepper, and the dried herbs evenly over the meat and vegetables.
  • Combine the beef stock and red wine. Pour the mixture over the meat and vegetables. Cover, and marinate in the refrigerator for 8 hours, or up to overnight.
  • Remove the meat and vegetables from the marinade to separate bowls. Reserve the marinade for use later in this recipe.
  • In a large Dutch oven or other heavy-duty pot, add the bacon and cook over medium heat, stirring occasionally until it crisps.
  • Transfer to a paper-towel-lined plate to drain.
  • Pat the venison dry with paper towels. Toss the meat chunks with the flour. Brown the meat in the bacon grease over medium-high heat in batches if necessary, until golden. Replenish the pan with vegetable oil if needed.
  • Return all the meat to the pot. Add the tomato paste and cook, stirring continually until the meat and paste are combined, about 1 minute.
  • Add the mushrooms, marinated vegetables, crisped bacon, and the reserved marinade to the pot.
  • Cook the mixture, covered, on low heat until the meat and vegetables are tender, and the sauce has thickened, 45 minutes to 1 hour. Serve warm.

1 tbsp olive oil
25g/1oz butter
2 onions, diced
4 garlic cloves, crushed
4 rashers smoked bacon, chopped
500g/1Ib 2oz chestnut mushrooms, halved
2.5kg/5½lb haunch or shoulder of venison, diced
½ bottle red wine
400ml/14fl oz water
2 beef stock cubes, crumbled
3 tbsp redcurrant jelly
salt and freshly ground black pepper, to taste
50g/2oz cornflour
punnet redcurrants, to decorate
6 sprigs rosemary or thyme, to decorate
new potatoes
wilted spinach

Steps:

  • Preheat the oven to 150C/300F/Gas 2.
  • On the hob, heat the olive oil and butter in a large lidded casserole dish. Add the onions and cook until softened, but not browned.
  • Add the garlic, bacon and mushrooms and cook for a further minute.
  • In a frying pan, brown the venison a handful at a time and add to the casserole. When all the meat is browned, add the red wine, water, stock cubes, redcurrant jelly and salt and pepper.
  • Bring to the boil and stir well. Put the lid on the casserole and place in the middle of the oven - cook for 90 minutes.
  • Remove from the oven. Make a paste with the cornflour and two tablespoons of water. Add as much of the paste to the casserole as is needed to thicken the sauce - add a little at a time if you are not sure how much you will need.
  • Transfer the casserole to the hob, and, on a low heat, cook until the gravy has thickened - this will take about five minutes.
  • Serve with new potatoes and wilted spinach. Decorate each plate with a sprig of rosemary or thyme and a bunch of fresh redcurrants.

  • Mix all the ingredients for the sauce together and let sit at room temperature while you make everything else.
  • In a large bowl, mix all the ingredients for the filling together until well combined. It is better to let the mixture sit for 30 minutes to overnight, but you can use it right away.
  • Fill each wrapper with a scant tablespoon of filling. Close each one into a half-moon, making sure there are no air pockets. It is probable that some of the filling will squirt out the ends as you seal them -- this is normal, just drop it back into the bowl with the rest of the filling. If the wrappers are dry, get a little bowl of cool water and wet half of each wrapper circle with the water; this will help it seal tightly.
  • Pleat the edges: I usually start from the center and do 3 pleats on the left of the dumpling, then another 3 on the right of the dumpling, As you make the pleats, settle the dumpling on your work surface so it sits flat. You will need this flat surface to get a nice crispy bottom to your potsticker. Set each finished dumpling on a baking sheet lined with either parchment or a little semolina flour or corn meal.
