Steps:
- If using cocoa powder, place in a large bowl and set aside.
- Place cream and milk in a large saucepan over medium heat. Heat until steaming, but not boiling.
- Add sugar to the cream mixture and stir to combine.
- Add red food coloring and stir to combine. If using chocolate syrup, add it now as well, and stir to combine.
- Remove from heat, and stir in vanilla.
- If using cocoa powder, pour the hot milk mixture over cocoa powder and stir vigorously to fully combine.
- Place in containers with lids, and refrigerate.
VELVET COFFEE CREAMER TART
This recipe I got from a friend years ago. The powdered coffee creamer give this tart a delectable flavour and velvet texture. Quick and easy to make. This tart must be made the day before as it must be put into the refrigerator for at least 20 hours.

Steps:
- Crush eight biscuits finely set aside.
- Layer the other biscuits on the bottom and side of a square dish.
- Mix condense milk and coffee creamer together.
- Add lemon juice slowly, mix until the mixture thickens.
- Pour over the layer of biscuits.
- Sprinkle crushed biscuits on top, put into the refrigerator.
- Serve the following day.
COFFEE TART
I don't remember where I found this recipe. My grandmother, who is a chocoholic, loved it! The chocolate wafer cookies may or may not be difficult to find. If you can't find them, oreos with the filling removed may be used.

- Preheat oven to 350 degrees.
- Process almonds, cookies and 1/4 cup sugar in a food processor until ground.
- Stir in 1/3 cup melted butter.
- Press into a 10 inch tart pan and bake at 350 for 10 minutes.
- Cool completely on a wire rack.
- Heat remaining 3/4 cup sugar, 1/2 cup butter, coffee granules, and chocolate in a heavy saucepan over low heat.
- Stir constantly until smooth.
- Beat egg yolks until thick and pale.
- Gradually stir about 1/4 hot chocolate mixture into yolks; add to remaining hot mixture, stirring constantly - 1 to 2 minutes or until mixture reaches 160 degrees.
- Remove from heat. (Mixture will be thick).
- Spread 2/3 chocolate mixture into crust.
- Cool remaining chocolate mixture 30 minutes.
- Beat whipping cream at high speed with an electric mixer until soft peaks form.
- Stir 1/3 of whipped cream into remaining chocolate mixture, then fold in the rest of the whipped cream.
- Spread over chocolate layer on tart.
- Cover and chill 2 hours or until firm.

- For crust:
- Combine flour, brown sugar and salt in medium bowl. Add butter and cut in with fingers or pastry blender until mixture resembles coarse meal. Beat egg yolk and water in small bowl to blend. Pour over flour mixture. Stir with fork until mixture forms dough. Gather into ball; flatten into disk. Wrap dough and chill until firm, at least 30 minutes.
- Preheat oven to 400°F. Roll dough out on lightly floured surface to 12-inch- diameter round. Roll up on rolling pin and transfer to 9-inch-diameter tart pan with removable bottom. Fit dough into pan and trim edges. Freeze until firm, about 20 minutes. Bake crust until golden brown, piercing with toothpick if crust bubbles, about 15 minutes. Cool slightly. Maintain oven temperature.
- For filling:
- Place walnuts on cookie sheet and toast in oven until just golden brown and fragrant, about 8 minutes. Cool. Reduce oven temperature to 350°F.
- Dissolve instant coffee in 2 tablespoons water in large bowl. Add brown sugar and whisk until smooth. Whisk in eggs, corn syrup, butter and salt. Stir in walnuts. Pour filling into prepared crust and bake until set, about 30 minutes. Cool tart on rack. (Tart can be prepared 6 hours ahead. Cover loosely and let stand at room temperature.)
- For cream:
- Dissolve instant coffee in 1 teaspoon water in small bowl. Whip cream and sugar until medium-soft peaks form. Add coffee mixture and continue beating until stiff peaks form.
- Serve tart with whipped cream.
RASPBERRY VELVET TART
White chocolate and fresh raspberries make up this impressive tart, garnished with white chocolate leaves and more fresh berries. Originally from a December 1989 issue of Bon Appetit that featured chocolate desserts.For the white chocolate leaves, you will need 16 small thick leaves, such as lemon,camillia,or gardinia with 1/8-inch stems.

- (Can be prepared 1 day ahead. Cover and refrigerate. Let stand at room temperature 1 hour before serving.
- Arrange leaves and reserved berries decoratively atop tart.
- Sift powdered sugar lightly over and serve.
- For White Chocolate Leaves:.
- Melt white chocolate in top of double boiler over simmering water, stirring until smooth.
- Spread in thin layer over veined undersides of leaves, being careful not to drip on edges.
- Refrigerate until firm, about 30 minutes.
- Gently peel off leaves, starting at stem end.
- (Can be prepared 1 week ahead. Cover airtight and refrigerate.).
LEMON VELVET TART

- Fit piecrust into a lightly greased 9 1/2-inch tart pan; press into fluted edges. Fold any excess dough over outside of pan, and pinch to secure to pan. (This will keep piecrust from sliding down pan as it bakes.) Generously prick bottom and sides of piecrust with a fork, and freeze 20 minutes.
- Preheat oven to 425°. Place piecrust on a baking sheet, and bake 15 minutes or until light golden brown. Cool on a wire rack 20 minutes or until completely cool. Gently tap excess crust from sides of pan, using a rolling pin.
- Microwave white chocolate in a small microwave-safe bowl at HIGH 1 1/2 minutes or until melted and smooth, stirring at 30-second intervals.
- Beat softened cream cheese at medium speed with an electric mixer until light and fluffy. Add melted chocolate, and beat until blended, stopping to scrape down sides. Add Lemon Curd, and beat until blended.
- Spoon into prepared crust. Smooth filling with a spatula. Chill 4 hours.
- Arrange lemon candies evenly on top of tart. Prop Caramelized Sugar Spirals against lemon candies.
- Note: For testing purposes only, we used Lemon Drops candies.
- Lime Velvet Tart: Substitute Lime Curd for Lemon Curd, and prepare recipe as directed.
- Lemon Mousse Tart: Prepare recipe as directed through Step 4. Beat 2 cups heavy cream at high speed with an electric mixer until soft peaks form. Gently fold into lemon mixture. Spoon mixture into prepared crust, mounding mixture in center of tart. (Mixture will be about 2 inches higher than top edge of crust.) Chill 4 hours. Garnish with lemon curls and fresh raspberries, if desired.
- Lime Mousse Tart: Substitute Lime Curd for Lemon Curd, and proceed with Lemon Mousse Tart recipe as directed.
- Directions for Lemon Curd:.
- Bring sugar, zest, and juice to a boil in a heavy nonaluminum 3 1/2-qt. saucepan over medium-high heat. Remove from heat, and gradually whisk about one-fourth hot juice mixture into egg yolks; add egg yolk mixture to remaining hot juice mixture, whisking constantly until well blended.
- Place saucepan over medium heat, and cook, whisking constantly, at least 10 or up to 12 minutes. (Mixture will be a pudding-like thickness.).
- Add butter, in 6 batches, whisking constantly until butter melts and mixture is well blended after each addition. Remove from heat, and pour mixture through a wire-mesh strainer into a bowl. Place plastic wrap directly on warm curd (to prevent a film from forming); chill 3 hours.
- Lime Curd: Substitute lime zest and lime juice for lemon zest and lemon juice. Proceed with recipe as directed.
- Directions for Caramelized Sugar Spirals:.
- Stir together sugar, corn syrup, and 1/2 cup water in a 3 1/2-qt. heavy saucepan until blended. Place pan over medium-high heat, and cook, without stirring, until a candy thermometer registers 305° to 315° or until mixture begins to turn a golden caramel color (about 25 to 30 minutes). Remove from heat, and stir just until color is evenly distributed, using a clean wooden spoon. Carefully place bottom of saucepan into cold water to stop the cooking process. Remove from water, and let stand 2 to 3 minutes or until slightly thickened.
- Sprinkle crushed lemon candies over a piece of parchment paper. Carefully spoon about 1 tablespoons hot syrup over candies in a circular motion, creating 3-inch discs. (If syrup gets too thick, place saucepan back over heat for 3 to 4 minutes or until syrup slightly melts. Use a clean spoon to continue making spirals.) Let cool 10 minutes or until completely cool. (Mixture will harden as it cools.).

- Heat oven to 450°F. Place pie crust in 9-inch tart pan with removable bottom as directed on box for One-Crust Filled Pie. Press in bottom and up sides of pan. Trim edges if necessary. DO NOT PRICK CRUST. Line pan with sheet of parchment paper; fill 1/4 inch deep with pie weights or 1 cup dry beans or rice.
- Bake 10 minutes. Remove parchment paper and weights; bake 3 to 4 minutes longer or just until bottom crust begins to brown. Remove from oven. Reduce oven temperature to 350°F.
- Meanwhile, in medium bowl, mix filling ingredients with electric mixer on medium speed until well blended.
- Pour filling into partially baked crust. Bake at 350°F 40 to 50 minutes or just until center is set. Cool completely, about 1 hour.
- Meanwhile, in chilled medium bowl, beat topping ingredients with electric mixer on high speed until soft peaks form.
- Pipe topping from decorating bag with 1/2-inch star tip or spread topping over tart. Store in refrigerator.
