1 pound extra-lean ground beef
1 tablespoon Worcestershire sauce
1 teaspoon garlic-pepper blend
1/2 teaspoon onion powder
1/4 teaspoon salt
2 cups frozen sugar snap peas, carrots, onions and mushrooms (from 1-pound bag)
32 frozen steak fries (from 28-ounce bag)
4 frozen half-ears corn-on-the-cob
1/2 teaspoon garlic-pepper blend

Steps:

  • Heat oven to 450°. Cut four 18x12-inch sheets of aluminum foil.
  • Mix beef, Worcestershire sauce, 1 teaspoon garlic-pepper blend, the onion powder and salt. Shape mixture into 4 patties, about 1/4 inch thick.
  • Place 1 patty on each foil sheet about 2 inches from 12-inch side. Top each with 1/2 cup vegetables and 8 steak fries. Place 1 piece of corn next to each patty. Divide remaining 1/2 teaspoon garlic-pepper blend among vegetables. Bring up 2 sides of foil so edges meet. Seal edges, making tight 1/2-inch fold; fold again, allowing space for heat circulation and expansion. Fold other sides to seal.Place packets on large cookie sheet.
  • Bake 35 to 40 minutes or until meat thermometer inserted in center of patties reads 160°F. Place packets on plates. To serve, cut large X across top of each packet; carefully fold back foil.

Steps:

  • Heat grill to medium-high heat.
  • Mix meat and onion soup mix just until blended; press into 4 (1/2-inch-thick) patties. Place on centers of 4 large sheets heavy-duty foil sprayed with cooking spray; top with mixed vegetables and hash browns. Fold to make 4 packets.
  • Grill 20 min. or until burgers are done (160°F). Cut slits in foil to release steam before opening packets. Top ingredients in packets with VELVEETA; grill 5 min. or until melted.

4 boneless, skinless chicken thighs, cut into 1/2-inch chunks
One 15-ounce can black beans, drained and rinsed
1 cup converted rice
1 cup salsa
2 tablespoons pickled jalapeno slices, finely chopped
1 tablespoon tomato paste
1 teaspoon chili powder
1/4 teaspoon turmeric
Kosher salt
2 cups low-sodium chicken broth
2 scallions, thinly sliced

Steps:

  • Prepare a grill for medium heat.
  • Put the chicken, beans, rice, salsa, pickled jalapenos, tomato paste, chili powder, turmeric and 3/4 teaspoon salt in a large bowl and toss to combine. Divide the chicken-rice mixture evenly among the pie pans, spreading it out in an even layer. Pour 1/2 cup of chicken broth into each pie pan.
  • Cover each pan tightly with foil. Put the pans on the grill, close the grill lid and cook for 20 minutes. Remove from the grill and let rest for a few minutes.
  • Carefully remove the foil from each pan (hot steam will escape). The liquid should be absorbed, the rice tender and the chicken cooked through. Sprinkle each with some scallions.

8 ounces reduced-fat processed cheese food (such as Velveeta®), cut into small pieces
2 tablespoons reduced-fat sour cream, or more to taste

Steps:

  • Heat a large skillet over medium-high heat. Cook and stir ground beef, onion, garlic powder, onion powder, salt, and black pepper in the hot skillet until browned and crumbly, 5 to 7 minutes; drain and discard grease.
  • Return skillet to burner over high heat. Add water; cover skillet and bring to a boil. Stir macaroni into the boiling water-ground beef mixture; cover and lower heat to medium. Cook, keeping covered, for 5 minutes. Stir, cover, and cook until macaroni is tender, about 5 more minutes.

2 medium potatoes, sliced
3 tablespoons water
2 bacon strips, diced
1 small onion, thinly sliced
4 ounces process cheese (Velveeta), cubed
3 tablespoons butter, cubed

Steps:

  • Place potatoes and water in a microwave-safe bowl. Cover and microwave on high for 2-3 minutes or until almost tender. Meanwhile, in a small skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain., Drain potatoes. On a double thickness of greased heavy-duty foil (about 18 in. square), layer half of the potatoes, bacon, onion, cheese and butter. Repeat layers., Fold foil around potato mixture and seal tightly. 4 medium Russet or Idaho potatoes
4 tbsp unsalted butter
4 tbsp extra virgin olive oil
1/2 medium sweet onion (chopped)
1/4 cup shredded sharp cheddar cheese
1/4 cup shredded mozzarella cheese
1/2 tsp kosher salt
1/4 tsp ground black pepper
1/2 tsp dried dill (optional)

Steps:

  • Prepare 4 sheets 12" x 10" of aluminum foil.
  • Peel and dice potatoes.
  • Place one diced potato per sheet of foil. Add one tablespoon of diced onion. Place one tablespoon of butter on top of potatoes and drizzle one tablespoon of olive oil. Season potatoes with salt and pepper. Bring the longer sides of foil sheet together and make a couple of 1" folds to close. Make sure to leave enough room for the steam. Close tightly the shorter sides.
  • Place foil packets on a large baking sheet.
  • If baking in the oven: preheat to 375 degrees F. Place baking sheet in the oven and bake for 18 to 20 minutes. Carefully, open the pockets and allow steam to escape. Check if potatoes are soft. Sprinkle shredded cheese, dividing evenly over all pockets. Scrunch down the sides of foil and place sheet back in the oven to melt the cheese. You can broil them for 2 minutes, if desired.
  • If cooking on the grill: preheat grill to medium heat. Place foil packs on the grill, close and cook for 10 minutes. Flip over and cook for 10 more minutes. Carefully open packs and allow steam to escape. Check if potatoes are done. Top with cheese and close packs for few more minutes to melt the cheese.
  • Serve.
