EASY VELVEETA BUFFALO CHICKEN DIP
I had this dip a couple of years ago, and it's yummy. I couldn't find a recipe for it anywhere that didn't call for cream cheese and shredded chedder. This recipe saves that step, and therefor is a little easier to make. This can also be made in a crock pot and kept hot for continuous use during your party. Can also be halved easily. When I had it, it had way more than the 1 tblsp of hot sauce in it than this recipe calls for, so you can add the hot sauce to taste.

Steps:
- Mix Velveeta, hot pepper sauce and chicken in large microwaveable bowl.
- Microwave on high 5 minutes, or until Velveeta is melted, stirring after 3 minutes. (Microwaves vary, so check frequently).
- Stir in remaining ingredients.
- Serve with celery sticks, tortilla chips, or crackers.
- Note: This can also be made in the crock pot. Also, you can eliminate the 'strings' on celery sticks by lightly peeling the celery with a vegetable peeler.

EASY BUFFALO CHICKEN DIP
Adapted from 30 Day Gourmet. This is a popular dip at our weekly football game gatherings across the street. When made with cheddar cheese per the original recipe, the fat from the cheese tends to "pool", giving the dip a less than appetizing greasy appearance, so I tried it with Velveeta and it still tastes great - and looks much better as well! I serve it warm from my "little dipper" crock pot or a fondue pot - or it also tastes great cooled and chilled as a spread for crackers and celery. Adjust the amount of hot sauce according to your heat tolerance!

Steps:
- Heat chicken and hot sauce over medium heat.
- Stir in cream cheese and ranch dressing. Continue cooking and stirring, until the cream cheese is melted.
- Mix in the cheddar cheese (or Velveeta), heating and stirring until it is melted.
- Set aside to cool.
- Freezing Directions:.
- Put dip in rigid container(s) or freezer bag(s) based on how you will serve it: single servings as a snack, or all of it in one container/bag for a group/family serving. Seal, label and freeze.
- Serving Directions:.
- Thaw dip in the refrigerator.
- Heat in the microwave until hot and bubbly.
- Serve with tortilla chips or Ritz crackers. OR for a group or party, put the warmed dip in a slow cooker on low to keep it warm.

THE BEST BUFFALO CHICKEN DIP
There are a lot of Buffalo chicken dip recipes but I feel certain this is one of the very best. Made with freshly cooked chicken, this is way better than recipes that call for the canned stuff. It's super rich and creamy with the perfect amount of tang. I highly recommend the optional blue cheese crumbles on top! Great served at room temperature so it's perfect for a party. Serve with celery and carrot sticks or corn chips.

- Preheat the oven to 350 degrees F (175 degrees C).
- Place chicken on a large sheet of foil and sprinkle evenly with salt, pepper, and garlic powder. Wrap foil around chicken to form a pouch, sealing it around the edges. Place foil pouch on a rimmed baking sheet.
- Bake in the preheated oven for 1 hour. Remove from the oven and let stand for 15 minutes to cool slightly.
- Meanwhile, increase oven temperature to 375 degrees F (190 degrees C). Lightly grease a baking dish with cooking spray.
- Stir together cream cheese, ranch dressing, and hot sauce in a large bowl until well combined.
- Roughly chop or shred cooked chicken. Add to cream cheese mixture along with Cheddar cheese; stir to combine. Pour mixture into the prepared baking dish and sprinkle with blue cheese.
- Bake, uncovered, until bubbly and golden around the edges, about 30 minutes. Remove from the oven and let stand for 10 minutes. Sprinkle with green onions and serve.
