I sometimes get a craving for good old tacos but I don't trust commercial ground beef to be safe and healthy. This is a much healthier option that still tastes great. Add some refried beans to the plate if you like.

Number Of Ingredients 10

1 lb veggie crumbles, hamburger style
2 teaspoons oil
1 (1 1/4 ounce) package taco seasoning mix (or use your home made)
1 cup water
1 large tomatoes, diced (can use more if you like)
1/2 cup sliced green onion
1/2 head green leaf lettuce, shredded (can also use red leaf or romaine lettuce)
1 1/4 cups low-fat cheddar cheese, shredded
salsa, to taste
10 taco shells (or 8 inch whole wheat tortillas if you wish to wrap them)

Steps:

  • Warm veggie crumbles crumbles in sauté pan with the oil.
  • Add water and taco seasoning to crumbles and bring to a boil.
  • Simmer and stir until desired consistency is reached.
  • Dice tomatoes, green onions,shred cheese, and shred lettuce, all to desired amounts as you know how your family eats.
  • Spoon some crumbles into shell or tortilla, and top tomato, lettuce, cheese and salsa.
  • Wrap it up if using the tortillas.

4 cups meatless veggie crumbles (like Morningstar Farms or Boca brands)
1 ounce taco seasoning
3/4 cup water
2 large tomatoes, diced
2 cups shredded low-fat cheddar cheese
shredded romaine lettuce
8 taco shells or 8 whole wheat tortillas

Steps:

  • Warm meatless burger crumbles in sauté pan.
  • Add water and taco seasoning and bring to a boil. Simmer and stir until desired consistency is reached.
  • Heat taco shells (or tortillas) according to directions on package.
  • Dice tomatoes, shred cheese and lettuce, all to desired amounts.
  • Pour two ounces of protein crumbles into shell, and add desired toppings.

1 sazon goya
1 teaspoon cayenne pepper
2 tablespoons olive oil
12 ounces Morningstar Farms Meal Starters Grillers recipe crumbles
8 taco shells
1 cup lettuce, shredded
1 tomatoes, diced
8 ounces sour cream
7 ounces guacamole
1 cup four-cheese Mexican blend cheese, shredded

Steps:

  • Saute sofrito sauce, sazon, cayenne pepper in olive oil in medium heat.
  • Add Morning Star Farm Griller Crumbles; cook over medium heat for 10 minutes.
  • Heat tacos shells in microwave 20 seconds.
  • Shred lettuce and dice tomatoes.
  • Create tacos with meatless meat, sour cream, guacamole, shredded cheese, and salad.

  • Preheat your oven to 350F (180C). Line with parchment paper or lightly grease a large baking sheet.
  • Mix the oil, soy sauce, and all the spices in a large bowl. It will make a brown paste-like texture.
  • Crumble the block of tofu with your fingers into the bowl with the seasoning. Mix the tofu crumbles with the seasoning making sure all of the tofu is evenly coated. Spread the tofu crumbles evenly over the pan. Bake for 30 to 35 minutes, stopping to stir the tofu every now and then. Keep a close eye on it towards the end so that it doesn't burn. You want the tofu to be nice and browned. The smaller crumbles will be darker than the larger crumbles, and that's ok because it will provide a variety of texture.
  • Remove the tofu crumbles from the oven and add to a pan with the 3/4 cup salsa. You may need more salsa depending on how watery the salsa is and how wet you would like your tofu crumbles to be, add more salsa to taste. Heat through and serve hot on taco shells with desired toppings or in a burrito.
