Mac & Cheese is comfort food at its best. And it's easier than you think to make from scratch. It's ready to pop in the oven in just about 15 minutes. Arrange Veggie Tots across the top to make this extra crispy, extra delicious and extra good-for-you!

3 tablespoons butter
¼ cup chopped onion
½ teaspoon salt
3 tablespoons all-purpose flour
1 clove garlic, chopped
2 cups milk
2 cups shredded Cheddar cheese, divided
8 ounces elbow macaroni, cooked and drained
1 (16 ounce) package Green Giant™ Veggie Tots - any variety

Steps:

  • Preheat oven to 425 degrees F. Melt butter in 2-quart saucepot over medium heat. Add onion and salt and cook 3 minutes or until softened. Add flour and garlic and cook 2 minutes, stirring constantly.
  • Gradually stir in milk and bring to a boil over medium-high heat. Reduce heat to low and simmer 3 minutes, stirring frequently, until mixture is thickened. Add 1-1/2 cups cheese and stir until melted.
  • Arrange pasta to 2-quart baking dish. Pour sauce over pasta and stir gently until evenly coated. Evenly top with remaining cheese and Green Giant® Veggie Tots™.
  • Bake 25 minutes or until mixture is bubbling and Green Giant® Veggie Tots™ are golden brown.

1/2 cup packed grated zucchini
1/4 cup shredded sweet potato
1/4 cup grated cauliflower
1 egg
1 teaspoon garlic powder
1/3 cup shredded cheese
1/3 cup breadcrumbs
1/4 teaspoon salt and pepper

Steps:

  • Preheat oven to 400ºF.
  • Grate zucchini add salt and let sit for 20 minutes to draw out the moisture. Use a dish towel to wring out water if necessary.
  • Add everything to a bowl and mix well to combine.
  • Take 1 Tbsp of the mixture and roll into a tot shape. Transferring to a baking sheet lined with foil or parchment. Repeat!
  • Bake for 20 minutes, until crispy and golden brown.
  • Enjoy!

1 zucchini
1 sweet potato, peeled
½ head broccoli
1 carrot, peeled
1 teaspoon salt, divided
⅓ cup grated parmesan cheese
⅓ cup panko breadcrumbs
1 teaspoon black pepper
1 teaspoon onion powder
1 teaspoon garlic powder
1 tablespoon olive oil
1 egg

Steps:

  • Preheat oven to 400°F (200°C).
  • On a cutting board, grate the zucchini, sweet potato, carrot, and broccoli with a coarse cheese grater.
  • Transfer the grated vegetables to a medium bowl and season with ½ teaspoon of salt. Mix until well incorporated.
  • Let the vegetables sit for 20 minutes until the salt has drawn out some of the moisture.
  • Transfer the grated veggies into a kitchen towel and twist to strain as much liquid as you can.
  • Place the grated veggies back into a bowl and mix with the Parmesan, panko, pepper, remaining salt, onion powder, garlic powder, olive oil, and egg. Mix until well combined.
  • Form the mixture into 20-25 even-sized tots and transfer to a parchment paper-lined baking sheet.
  • Bake for 20-30 minutes or until tots are golden brown, flipping each halfway through.
  • Serve with your choice of dipping sauce.
  • Enjoy!
