Categories     Vegetable

Time 20m

Yield 2-4 serving(s)

Number Of Ingredients 15

1 red bell pepper
1 medium onion
1/4 lb fresh mushrooms (about 10-12 'shrooms)
2 cloves minced garlic
1 cup fresh spinach
1 (8 ounce) package monterey jack cheese, shredded
salt
pepper
red pepper flakes
olive oil
2 -4 large flour tortillas (I used the jalapeno-tomatoe flavored)
sour cream with cilantro
1 (8 ounce) carton sour cream
2 tablespoons chopped cilantro
1/4 teaspoon curry curry powder

Steps:

  • Chop cilantro and add to sour cream, along with curry, mix well.
  • Roughly chop the bell pepper and onion and place in a large non-stick saute pan (I use my iron-skillet) that has been drizzled with 2-3 Tablespoons of olive oil,add the garlic and seasonings and cook on medium heat for 5 minutes,or until the veggies are crisp tender, tossing to coat.
  • Slice mushrooms and gently tear the spinach and add to saute pan.
  • Add more olive oil if needed and gently saute the vegetables until the spinach is nicely wilted, about 5 minutes.
  • Remove vegetables from skillet and place in bowl.
  • In same skillet that has been wiped clean with a napkin, add 2 Tablespoons of olive oil.
  • Place one tortilla in skillet and add a generous amount of cheese (first),veggies, then cheese,to one half side of tortilla, like an omelet.
  • Fold the empty side over the other side of tortilla and cook until cheese melts and the tortilla is nicely browned.
  • Due to the fact that mine is stuffed with veggies and cheese I will flip it over once to ensure even melting and browning.
  • Transfer to a plate and slice into wedges.
  • Serve with Cilantro sour cream or your choice of additions (guacamole,salsa,ect--) This recipe will make 2 generously stuffed large tortilla quesadillas or 4 small.

1 scallion, chopped
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper
Kosher salt and freshly ground black pepper
2 tablespoons unsalted butter
8 8-inch flour tortillas
2 cups shredded cheddar cheese
1/3 cup breadcrumbs
1/3 cup milk
1/3 cup chopped fresh parsley
1 large egg
3 tablespoons Worcestershire sauce
1 small onion, finely minced
1 teaspoon chili powder
2 cloves garlic, grated or finely minced

Kosher salt and freshly ground pepper
1 tablespoon vegetable oil
1/2 cup ketchup
1 to 2 tablespoons packed light brown sugar
1 tablespoon apple cider vinegar

  • Make the cilantro cream: Puree the sour cream, cilantro, lime juice and hot sauce in a blender until smooth.
  • Prepare the quesadillas: Mix the meatloaf, beans, scallion, cumin, cayenne, and salt and black pepper to taste in a bowl.
  • Melt 1/2 tablespoon butter in a large nonstick skillet over medium-high heat. Place a tortilla in the pan, sprinkle with 1/4 cup cheese, then top with one-quarter of the meat mixture and another 1/4 cup cheese. • Whisk the ketchup, sugar and vinegar in a bowl and brush a few tablespoonfuls over the meat. Add 1/2 cup water to the skillet, cover and simmer over low heat until cooked through, about 15 minutes.
  • Transfer the loaves to a plate. Add the remaining ketchup mixture to the skillet and cook over high heat, stirring, until thick, 3 to 5 minutes. Serve 4 meatloaves with the hot glaze, reserving 2 for quesadillas.

Provided by The Bon Appétit Test Kitchen

Time 30m

Yield Makes 4 servings

Number Of Ingredients 14

4 8-inch-diameter flour tortillas
1 8-ounce package peeled chopped butternut squash, cut into 1/2- to 3/4-inch cubes
2 tablespoons vegetable oil, divided
1 cup chopped white onion
1 15-to 16-ounce can black beans, rinsed, drained
1/2 cup salsa, divided
2 garlic cloves, chopped
1 teaspoon chili powder
1 cup coarsely grated hot pepper
Monterey jack cheese
1/4 cup chopped fresh cilantro
Sour cream
Additional salsa
Fresh cilantro sprigs (for garnish)

Steps:

  • Preheat broiler. Put tortillas in single layer on baking sheet. Brush with oil. Broil until toasted, about 3 minutes. Turn; set aside.
  • Place squash in microwave-safe bowl. Sprinkle water over, cover with plastic wrap, and microwave until just tender, about 3 minutes; drain. Heat 1 tablespoon oil in large nonstick skillet over medium-high heat. Add onion and sauté until beginning to brown, about 3 minutes. Add squash; stir 1 minute. Season with salt and freshly ground black pepper. Spread out squash in even layer over 1 tortilla. Add 1 tablespoon oil to skillet. Add beans, 1/4 cup salsa, garlic, and chili powder. Using potato masher, crush until beans are coarsely mashed; season with salt and pepper. Stir in 1/4 cup salsa. Spread over second tortilla. Sprinkle cheese over third tortilla. Leave fourth tortilla plain.
  • Broil tortillas until cheese melts and vegetables are browned in spots, about 3 minutes, watching to prevent burning. Transfer black bean tortilla to plate; sprinkle 1/4 cup chopped cilantro over. Top with cheese tortilla, squash tortilla, then plain tortilla. Cut into 4 wedges. Garnish with sour cream, salsa, and cilantro sprigs.

  • Add the remaining 1 tablespoon oil to the pan. Add the veggies and jalapeño, and sauté for 4-5 minutes. Stir in the cooked sweet potato, black beans, cumin, chili powder, a generous pinch of salt and black pepper, and sauté for 2 more minutes. Taste and add more salt, pepper and/or cumin if needed. Transfer the mixture to a large bowl and set aside. Rinse (or just wipe off) the sauté pan until it is clean.
  • Return the sauté pan to the stove, and reduce heat to medium. Place a tortilla* in the center of the pan and immediately sprinkle your desired amount of cheese evenly over the surface of the tortilla. Add a few large spoonfuls (about 1 cup) of the veggie mixture on one half of the tortilla, then sprinkle on some cilantro. Fold the other side of the tortilla over to create a half moon. Continue cooking for another 30 seconds or so, or until the bottom of the tortilla is crisp and golden. (Just lift it up and take a peek to see when it’s ready to go.) Then carefully flip the tortilla over and cook it for an additional 30-60 seconds on the second side.

  • Melt the butter in your skillet, add the onion, garlic, and spinach along with a big pinch of sea salt. Cook over medium heat for about 2-3 minutes, until the spinach has wilted.
  • Set the spinach mixture aside and add another tablespoon of butter, the beans, and salsa and cook over medium high heat for about 4-5 minutes, until the beans soften. You can press the back of your wooden spoon on the beans to squish them up a bit, making them more like refried beans. If the mixture gets dry just add a splash of water.
  • Spread the spinach mixture over a tortilla, then the bean mixture, and then sprinkle with cheese.
  • Spread a thin layer of butter over one side of the other tortilla and place it butter side up on top of the shredded cheese. The butter on the tortilla will help it to crisp and brown nicely.
