LOWER-SODIUM VEGGIE PIZZA

Lower-sodium Veggie Pizza image

I love pizza but have to keep an eye on my sodium intake, so I forego the pizza sauce & use olive oil or no salt added tomato sauce instead. I also add canned diced tomatoes (no salt added), so I still get the tomato flavor without all the sodium.

Provided by Lynn Socko

Time 1h

Number Of Ingredients 19

THIS RECIPE WAS UPDATED AND SLIGHTLY MODIFIED ON 9/3/11
whole grain (or plain) pizza dough
1 can(s) 14.5 oz diced tomatoes w/garlic, basil, & onion, (no salt added) drained well and dice slightly more
12 oz provolone cheese, or mozzerella
bell pepper, sliced
onion, sliced
mushrooms, sliced
olive oil (or garlic infused)
red pepper flakes
lightly sprinkle pizza with mrs. dash tomato & basil
WHOLE GRAIN PIZZA DOUGH (FOR BREAD MACHINE)
1 1/2 c water
1 tsp coarse sea salt
1 Tbsp honey
1 1/2 stick garlic infuse olive oil
1/2 c flax seed
2 c ap flour
2 c wheat flour
1 3/4 c yeast

Steps:

  • 1. PIZZA DOUGH: Add liquid to Bread Machine pan first, then dry ingredients, then yeast. Set bread machine for DOUGH cycle. Once risen, remove, divide and roll out into desired sizes, and cook on gas grill, then bring in and add toppings and pop under low broiler till cheese is hot and bubbly. If grilling dough, spray grill racks with non stick spray (away from flame)or both sides of pizza dough to insure dough does not stick. For foccacia dough https://www.justapinch.com/recipes/bread/other-bread/foccacia-bread-sticks-bread-machine-recipe.html you can use this with or without the spice toppings. VEGGIES may be grilled as well to provide the pizza with a more flavorful grilled flavor.
  • 2. OR: Roll out dough, I use cornmeal to roll dough out on, sprinkle olive oil into bottom of 13" cast iron skillet or pizza pan, or spray with non stick spray, place dough on pan.
  • 3. Brush olive oil onto crust, add cheese, scatter drained, diced tomatoes over cheese. Add bell pepper, onion, & mushroom. Drizzle on small amount of olive oil, sprinkle pepper flakes, and mrs. dash tomato & basil.
  • 4. Bake 425* for 30 minutes. You may need to adjust the time according to your oven and/or pan. NOTE: If you grill the dough, you only need to pop it under a low broiler for about 10 min.

Provided by Elephantastic Vegan

Categories     Main Course

Time 50m

Number Of Ingredients 16

2 1/2 cups all-purpose flour
1 tablespoon baking powder
1/2 teaspoon salt
1 teaspoon olive oil
2/3 cup lukewarm water
1/2 cup tomato purée
1/4 teaspoon salt
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1 teaspoon olive oil (+ more for brushing the crust)
1/2 zucchini (, sliced)
1 red bell pepper (, cut in chunks)
5 cups mushrooms (, sliced)
1 red onion (, sliced)
3/4 cup vegan cheese shreds (alternatively you can also use a homemade cheese sauce)
1 pinch salt

Steps:

  • For the pizza dough: Combine the all-purpose flour, baking powder and salt in a large bowl. Add the olive oil and water (little by little) and knead until a smooth dough forms. You might not need all the water or add a bit more. The dough should be non-sticky. If it get's too sticky, add a bit more flour. You can either knead it by hand or let it knead in a kitchen machine.
  • For the pizza sauce: Combine the tomato purée, salt, dried oregano and dried basil.
  • In a large pan, heat the olive oil and add the zucchini, red bell pepper, mushrooms and red onion. Season with a pinch of salt and let it cook on medium to high heat until the veggies are soft.
  • Pre-heat the oven to 480°F/250°C.
  • Divide the pizza dough into two equal parts and roll them each out on a lightly floured parchment paper. Spread the tomato sauce on top. Cover with vegan cheese shreds and veggies. Brush the crust with olive oil (or herbed olive oil if you have one available!). Bake the pizzas in the oven for about 15 minutes until crispy. Enjoy!

NO BAKE VEGGIE PIZZA

No Bake Veggie Pizza image

Pizza toped with tons of veggies. I am not a veggie lover but I love this pizza. Great way to get kids to eat veggies. My mom and I made this one time but she also made a pepperoni pizza for my dad because he HATES veggies and she was sure he wouldn't eat this. He ended up ignoring the pepperoni pizza and eating this one instead.

Categories     Spinach

Time 50m

Yield 8 peices, 8 serving(s)

Number Of Ingredients 16

2/3 cup warm water
1/2 ounce yeast (2 packets)
2 tablespoons olive oil
3 cups all-purpose flour
1 teaspoon salt
1/4 teaspoon pepper
1/4 teaspoon basil
1/4 teaspoon oregano (or whatever spice you enjoy)
8 ounces cream cheese
1/4 cup sour cream
1/4 cup mayonnaise
1/2 ounce ranch dressing mix (1/2 package)
6 ounces fresh spinach (1 bag)
1 bunch broccoli
2 carrots
2 red peppers

Steps:

  • Pre-heat oven to 400*F
  • Crust:.
  • In med. bowl mix water and yeast.
  • Stir until yeast dissolves and let stand for five minute
  • Add oil, salt, seasoning, and flour in that order and mix.
  • Let stand five more minute and turn onto floured board.
  • Knead six or seven times and put on oiled pan.
  • Bake for about 20 minute or until golden brown.
  • Optional (use pre-made crust or refrigerated crust, won't be as good but simpler).
  • Sauce:.
  • In small bowl put softened cream cheese and other ingredients and mix until almost smooth and set aside.
  • Toppings:.
  • Chop all veggies really (and I mean REALLY) small fine pieces. I would make them all about 1/4 inches.
  • When the crust cools
  • Spread sauce over crust.
  • Top with any desired veggies. To follow above recipe, I do the broccoli then carrots then red peppers and top with the spinach but experiment with your families favorites.
