CLASSIC PATTY MELT
A quick, easy, and basic recipe for patty melts. I used Jewish rye bread but any bread will work as long as it's rye. I double the cheese but feel free to use 1 slice per patty melt.

Steps:
- Season ground beef with salt and pepper and divide into 3 equal-sized balls. Shape each ball as close as possible to the shape of the bread. Make an indentation in the center of each patty with your thumb.
- Melt butter in a skillet over medium heat and cook onion until soft and translucent, 5 to 8 minutes. Remove from the skillet and divide into 3 equal portions. Place beef patties into the same skillet and cook until desired doneness, 3 to 5 minutes per side.
- Meanwhile, spread 1 teaspoons mayonnaise on one side of each slice of bread.
- Place bread mayonnaise side-down in the skillet. Top with 1 slice of cheese, 1 beef patty, 1/3 of the onions, a second slice of cheese, and another slice of bread, mayonnaise side up. Cook bread until golden brown and cheese has started to melt, 3 to 4 minutes. Flip each sandwich over and cook an additional 3 to 4 minutes.

PATTY MELTS

Estimated Reading Time 6 mins
- Pulse the oats in your food processor 3-5 times to roughly chop then add in one can of drained and rinsed black beans. Pulse and additional 5-6 times creating a chunky paste. Add in the egg, cumin, coriander and season with salt. Process until most of the large pieces are gone. You will be left with a thick paste that will act like the “glue” to your veggie burger.
- In a medium-sized bowl, mix the remaining can of drained and rinsed black beans with the cilantro, cheese, scallions and the mixture from the food processor then season with salt to taste. Wipe a little olive oil on a large plate and then with wet hands, form the bean mixture into 5 large patties (or 8-10 small) and place on the plate. Don’t worry if the mixture seems a little gooey, it is supposed to.
- Let the patties rest in the fridge for about 10 minutes while you gather the rest of the ingredients.
- Heat a cast iron, or heavy bottomed skillet over medium high heat until VERY hot. Add 1 tablespoon of olive oil and swirl the pan to coat. Cook the burgers until a nice crispy crust has formed on the outside, about 2-3 minutes, then flip to cook the other side another 3-6 minutes. You will know that the burgers are done when the center of the patty is firm to the touch. Remove from the pan to a plate to cool.

- To make the onions: Melt butter in a large heavy-bottomed stainless steel or enameled cast iron dutch oven over medium-high heat. Add onions and cook, stirring occasionally, until softened and bottom of saucepan is coated in a pale brown fond, about 15 minutes. Add 2 tablespoons water and deglaze pan by scraping with a wood spoon. Continue to cook, stirring occasionally, until another layer of fond has built up again, 3-5 minutes. Add 2 tablespoons water and deglaze. Repeat process until onions are completely softened and a deep, dark brown, about 15 minutes more. Season onions to taste with salt. Transfer to a bowl and set aside.
- Light one chimney full of charcoal. When all the charcoal is lit and covered with gray ash, pour out and arrange the coals on one side of the charcoal grate. Set cooking grate in place, cover grill and allow to preheat for 5 minutes. Clean and oil the grilling grate. Place veggie burgers on hot side of grill and cook, flipping occasionally, until slightly charred and warmed through. Transfer burgers to a cutting board or tray.
- Working in two or three batches as necessary, butter one side of each slice of bread and place on hot side of grill, buttered side down, and cook until bread is toasty and lightly browned, about 1 minute. Transfer bread to cutting board or tray.
- Place one patty on top of a slice of bread, unbuttered side. Top each patty with a slice of swiss cheese, caramelized onions, and second slice of bread, buttered side up. Place sandwiches on cool side of grill, cover, and cook until cheese has completely melted, about 3 minutes. Transfer patty melts to a serving tray or plates and serve immediately.
